This is another dish from @hfgaustralia , I alter it slightly using cashews instead of peanuts, stevia in place of sugar and brown rice for the base. It’s super yummy and the dressing makes a great addition to any salad 🥗

Why do you do it? I feel better in myself, more relaxed and less stressed when I move my body. A swim, a long walk or HIIT work out.... it doesn’t matter what it is to you but moving your body has so many benefits. A sense of well-being, a better nights sleep, a clearer mind, higher energy levels, and a positive outlook are all benefits of regular exercise. Parsnips & carrots were some of the veggies I roasted tonight. I forgot how delicious parsnips are!  I try to vary the veggies I make weekly because every vegetable has different vitamins and minerals. Try to eat the color of the rainbow 🌈 and switch it up to get the most nutritional value out of what you eat.

Ingredients:
Parsnips, peeled and cut
Carrots, peeled and cut
Avocado 🥑 oil
Garlic, minced fine
Dill

Directions:
1.) Toss parsnips and carrots in oil, just lightly coat. 
2.) Bake at 350°F for 30 minutes (flip halfway through). 3.) Remove from oven and toss parsnips and carrots in a bowl with dill and garlic, put back in oven for 5 more minutes.

So something weird about me is that I have a DAILY craving for warm toast @naturesownbread smothered with some type of spread, usually  sunbutter @sunbutter , whipped cream cheese @lovemyphilly and a schmear of fruit jam with a cup of almond milk or tea ☕️ Is this weird? 🤔 Anyway, it just makes my day complete and helps me curb a sweet tooth with not too much sugar🤗😍 I usually have it as a nighttime snack! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Tried out another @hellofresh meal tonight and it was 👌🏻👌🏻👌🏻 Parmesan Crusted Pork Chops with Couscous and Carrots. I’m loving the fact that the ingredients are fresh and the recipes are simple. As a family, we eat pretty plain meals and tend to stick to what we like. @hellofresh has provided our family with more variety and options. Even though we only have meals for this week, I’ll definitely try them out again!

It’s a soup and grilled cheese kinda night! In tonight’s bowl: tomato, fennel and basil soup. Scroll for recipe- it was delicious. A beautifully creamy consistency without the cream!

*2 medium fennel bulbs, chopped *1 large yellow onion, chopped *3 garlic cloves, minced
*28oz crushed tomatoes
*2-2.5 cups low sodium broth (use less for a thicker soup, more for a thinner one)
*1 handful chopped basil *salt & pepper to taste. *sauté fennel, onion, and garlic with 1 tablespoon oil for 7-10 minutes, add tomatoes, broth, basil, salt and pepper. Bring to boil and cover, reduce and simmer for 25 minutes. Blend with immersion blender and viola!

Get your kids to help out in the kitchen. There are so many things they can do starting right at 1.5-2 years old and then by the time they are 6 you will hopefully have a real deal sous chef. Plus I promise it is always entertaining!

He’s done this many times before but this time he added his own spin. Still not sure why he peeled the carrots until they were as thin as a toothpick lol

I ended up using the peelings for salad and had to peel a few more carrots to actually steam! But I usually include grated carrots in my meal prep so this worked out!

And another bonus? Kids that help prepare a meal are more likely to eat (or at least try) that meal! Win-win.

The best thing about snow days and being trapped in the house is baking. The cookie jar is now chock-full of these healthier oatmeal raisin cookies (inspired by @twopurplefigs, but I cut the butter 1/3 and subbed peanut butter because I didn’t have enough thawed butter). They are stealth healthy because they taste totally like a delicious cookie, but are packed with fiber from the oats and omega-3 fats from the generous amount of flax seeds they contain.

Anyway, my boy helped make them and then gobbled his up. The hubs, who hates raisins, ate three - so far. Yay!

Last week I made a chocolate tart for a family dinner (yes Dietitians eat chocolate we are normal people after all - well most of us 🤣). Admittedly the eyebrows raised when I was breaking up 2 blocks of dark chocolate for the filling but hey I went with it - special occasion after all. I am by no standards a pastry chef but it was yummy albeit a little rich. We all sat around the table after dinner and enjoyed a small slice topped with Greek yoghurt.. no mention of the words “bad”, “unhealthy” or “fattening”. Just a bunch of people enjoying dessert together. Afterwards I didn’t feel regret or guilt. The next day I didn’t rush out for a run or restrict food to compensate (it was only 1 eating occasion out of my 5-6 a day or 30 + a week after all). I just went about my normal day - which is typically full of nutritious foods to fuel my body. To me that is a positive relationship with food.. that is balance. Choosing to eat foods that nourish your body most of the time while letting yourself enjoy foods that nourish you’re soul every now and then 😉 No “good” vs “bad”, no diet rules, no shame! Last week I made a chocolate tart for a family dinner (yes Dietitians eat chocolate we are normal people after all - well most of us 🤣). Admittedly the eyebrows raised when I was breaking up 2 blocks of dark chocolate for the filling but hey I went with it - special occasion after all. I am by no standards a pastry chef but it was yummy albeit a little rich. We all sat around the table after dinner and enjoyed a small slice topped with Greek yoghurt.. no mention of the words “bad”, “unhealthy” or “fattening”. Just a bunch of people enjoying dessert together. Afterwards I didn’t feel regret or guilt. The next day I didn’t rush out for a run or restrict food to compensate (it was only 1 eating occasion out of my 5-6 a day or 30 + a week after all). I just went about my normal day - which is typically full of nutritious foods to fuel my body. To me that is a positive relationship with food.. that is balance. Choosing to eat foods that nourish your body most of the time while letting yourself enjoy foods that nourish you’re soul every now and then 😉 No “good” vs “bad”, no diet rules, no shame! I’m finally getting around to sharing some pictures from last Saturday’s book signing at @lemondnutrition. Had to share a snapshot from the Facebook LIVE Video that was recorded during the event, because it illustrates exactly how I felt that day. One of the reasons I created this account was not only my obvious love for exploring other foods, but also because I want people to get rid of the shame of eating out, or eating anything outside the home. I’ve heard way too many times, “I eat out so much, I’m so bad.” Or “well I cheat a little on the weekends because I eat out.” And for the busy individuals out there, I hear a lot of “I kind of just grab something to go and I know I shouldn’t”...why shouldn’t you though?? • 
Having a busy life, a life that’s constantly moving, does not automatically mean you’re not eating healthfully when you’re forced to eat non-home cooked meals. It’s not necessarily a sacrifice on food. If you need to eat out and buy certain products to make eating easier, to make nourishing yourself easier, there’s no shame in that. It 👏🏼 can 👏🏼 work 👏🏼 • 
Eating outside the home and buying your meals out is still a great learning experience. Use it as a way to learn more about different flavors that you’d like to incorporate in your home when you’re not so busy. Use it to get ideas of different food combos that can create a complete and healthful meal at home. Or simply enjoy foods you would not normally cook for yourself. Where is the shame in any of that? #EatWell #LiveWell #EatOn .

Cold and flu season is upon us. Now more than ever it is important to have balanced, nutrient filled meals. Deficiencies in the following nutrients may impair immune function; zinc, selenium, copper, folic acid and vitamins A, B6, C and E. Having a variety of different vegetables and proteins will cover your vitamin and mineral needs. 
This shrimp and eggplant curry is a good source of zinc, copper and selenium. I tried to recreate a favorite dish of mine, Cari Tom, from @lecolonialnyc.  It’s a coconut curry with onions, eggplant and shrimp.  The original dish was incredible. My iteration was good but not the same. 😩

Never been much of an outdoor winter sport kinda girl (I never understood it as a kid - why would I want to lug around heavy gear in the freezing cold on ice when I could just throw on a leotard and flip into the foam pit??🤸🏼‍♀️) but Tahoe is so effing gorgeous, I’ve come around in my “old” age ☃️.

One of my absolute favorites to have for leftovers the next day!! Roasted cauliflower and sweet potato, tempeh (could sub chicken, chickpeas, or tofu) and loads of fresh parsley. The sauce is fresh lemon juice, zest, (fresh) minced garlic, tahini (not too much or it will overpower!), salt, pepper, and a little hot water to thin. It's a dish that reminds me of spring when all these things are being harvested, 🌷😩so definitely necessary in the middle of this bitter cold winter. 
Also, The fresh lemon juice and zest makes a world of difference- although takes a bit more time. Make a big jar of this and keep it on hand to top on a salad, quinoa, or drizzle on other roasted vegetables! (It's great on broccoli, green beans, and asparagus) 🍋🍠🌱

I had lots & lots of pistachios on hand. So I wanted to enjoy at least a good handful in my lunch today. Here's what I came up with!
👩🏻‍🍳
Gochujang Pistachio Soba Noodles w/Sweet Peppers: 
Prepare 5oz. dry soba noodles, toss w/ice cubes to cool & drain well; toss noodles w/Asian-Style Pistachio Sauce* (see recipe below) & 2 med sweet bell peppers, extra-thinly sliced; garnish w/pistachios & fresh cilantro leaves. Serves 2.

*Asian-Style Pistachio Sauce: 1/4c each vegetable broth, shelled roasted salted pistachios & unsweetened applesauce, 1T each gochujang sauce & tamari & 1t each fresh grated gingerroot, rice vinegar & toasted sesame oil. Puree in blender on high speed for at least 2 minutes. Makes 3/4 cup.

The taste was spot on! But next time I think I'm going to add an extra 1/4 cup veg broth to the sauce ingredients; simmer the sauce to "poach" the pistachios while reducing mixture to 3/4 cup; then puree for an even creamier sauce!

We should eat a rainbow of colours of fruit and veg 🌈 more colours = more nutrients. We can do this by using vegetable based sauces, bulking meals out with veg,  serving with salads and having at least one portion of fruit or veg at snack times and with each meal 🍇🍓🍉🍌🍊🍅

I was so excited to see it this past weekend 😁 I topped it with #walnuts  and @naturespathorganic blend of chia and hemp seeds.
