It’s on my 2018 vision board to become more flexible this year-physically and mentally. New year, best me!
I’m trying to add some soft veggies that are not puréed back into my diet, so I put some vegetable soup on top of white rice. I’m seeing a doctor tomorrow so hopefully I’ll be back to eating “normal” foods in no time. 🤞🏼

I am giving my body a break and giving it mostly puréed food, which sounded awful to make yesterday so I stocked up on baby food 🙈 My doctors the last 5 years have been at Michigan Medicine and the Mayo Clinic, so it’s time I find one in Chicago. I’m hoping to find a good one at the hospital where I work! I can’t thank you all enough for the at home remedies- they have helped me become comfortable enough to ride this out!
This pretty much sums up my entire weekend 🙈 Haven’t worked out, haven’t put on real clothes and haven’t gone out for more than an hour at a time since I got home from work Friday. I’m taking a shower then heading out for a bit to get out of the apartment! First stop, Bed Bath and Beyond😊

I can’t even remember the last time I bought gluten free frozen waffles, but they are the only thing that sounds decent today! I went to Target to find other food to make and only left with almond butter 🙈
I’m on the struggle bus you all. I don’t like complaining on here but I’m wondering if anyone has any tips or tricks for overcoming a flare up. Gluten, lactose, soy, dates, eggs, chicken and turkey free, with low fructose, FOMDAPs, and coconut. Also trying to sleep 7 hours a night, have a successful career, workout every day, eat healthy, have a strong relationship with Nick, call my grandparents, have a social life and go to church. No biggie 🤦🏽♀️ Anyone else feel this way??
Something triggered a huge flare up this week. My skin has been on fire plus many rashes, lots of bloating and crazy GI symptoms. I’ve been so lucky with expanding my diet the last few months but I’m thinking my body is telling me it’s time for a reset. Going back to basics with the FODMAP diet to get myself on track again! My stomach isn’t very happy with me this morning so I’m going light for breakfast. Spinach smoothie with half a banana, blueberries, chia seeds, @vitalproteins collagen, unsweetened almond milk and ice, topped with a little @purely_elizabeth granola. A little nourishment while my GI system (hopefully) bounces back this morning. TGIT!
Six months ago, I would have gotten home from work, sat on the couch watching Netflix for an hour or two, made a carb-heavy dinner and probably had some dessert while talking myself out of going to the gym that night. Thank heavens things have changed! I have my workout done and am enjoying this beautiful bowl of @eatbanza pasta with broccoli, tomato, pesto and a sprinkle of parm 😍

I have lots of meetings today, so I brought this @gomacro bar and it is SO GOOD. First time buying this brand and as long as I feel well in the next hour or so, I will definitely buy again! Clean ingredients, high protein and good fats. I can’t to try the other flavors.
I think I’m a bit overdue for an intro post! I’m Lauren, originally from Michigan but now live in Chicago working in administration for a medical group. I’m allergic/intolerant to gluten, lactose, soy, dates, fructose (among other FODMAPs), chicken, eggs, turkey, and can’t tolerate most grains. My journey with these food allergies is what led me to become a virtual health coach!
Aside from health coaching, here are some fun facts about me:
1. I am 6’1”. 2. I think dogs and giraffes are the greatest things to have ever walked the earth.
3. I hate cotton balls, styrofoam and velvet. I have goosebumps writing this.
4. I collect coffee mugs.

Today is the start of my 3 day raw food detox. A raw food detox is a great opportunity for the digestive system to restore itself through cleansing and purifying.
Over time toxins and waste build up in the gut just though eating nutritionally depleted foods. By eating raw, and preferably organic foods along with green juices, which the body can digest easily it gives the immune system a real boost and also increases nutrient absorption.
Even though I did not go wild with the eating at Christmas I definitely ate more than usual so January is a great time to alkalize my body and get everything back in balance.
Food prep > meal prep
I personally don’t like eating 2 variations of the same thing for 5 days so I prep food to create various meals throughout the week. Here I have roasted chickpeas, pineapple and peppers topped with avocado oil, ginger, red pepper flakes and coconut aminos for stirfry as well as roasted zucchini, squash and sweet potatoes with avocado oil and pepper to supplement vegetable soup all cooked at 425 for 45 minutes. Not pictured are roasted tomatoes and broccoli to add to pasta later this week. Easy and delicious!
I saved this post from @katescarlata a little while ago and really thought about it during yesterday’s church service. The sermon was about seeing your progress, with a main point being that you should use your talents/interests/traits that you were designed with, otherwise you may feel disconnected from the life you could be living.
I have been on my wellness journey for 10 years now, and always fought being different. I wanted to be the same person in my family, fit in with my friends during social outings and not ruin dates with my boyfriend because of my food restrictions. Despite many appointments, tests, doctors and “resources”, I felt very alone and had to teach myself most of what I know related to managing my health.
I have been on my coaching journey for 3 months, and it was the best decision ever made. My heart is on fire every day, connecting with brilliant bloggers and learning more than I could ever imagine from all of you. I’ve never had friends with food allergies, and although I can’t thank my “real life” friends enough for adapting life so I can be included (especially Nick), it is AMAZING talking with others who struggle like me. I now realize I absolutely am different, but it doesn’t have to be a bad thing.
My passion is more clear than ever, and I hope this light in my life always continues to shine. I want to keep learning so I can continue helping others who are just as lost as I used to feel. Thanks to everyone who is a part of this journey 💕 #mondaymotivation
Monday morning essentials! My usual lactose free yogurt was out at the grocery all weekend so I’m trying @lovemysilk almond milk yogurt this morning. I think I’ll be needing several refills on the coffee too 🙃
Leftover lasagna for the win 😋
It was mostly lactose free, but sometimes you just have to cave for a favorite meal. This is gluten and egg-free, and relatively low fodmap and low lactose.
1. Brown 1 lb. sausage (important step 🙈) and once drained, add 24 oz. of your favorite sauce. Let it simmer on low for about 6-8 minutes.
2. In a bowl, combine ricotta cheese (I can’t have the dairy free kind because it’s all soy, so I just used about 8 oz. of regular. If you are not lactose intolerant, use 15 oz.) with 1 cup of lactose free mozzarella and 1/2 cup of lactose free Parmesan cheese.
3. Heat oven to 375 and grease a glass baking dish (I used 9x9). 4. Spoon 1/3 of the meat sauce mixture on the bottom of the dish. Add a layer of your favorite gluten free lasagna noodles (I used @jovialfoods for the first time and loved them! No boiling needed.) Add 1/2 of the cheese mixture, then 1/3 of the meat sauce mixture, then another layer of noodles. Add the other half of the cheese mixture, half of the remaining meat sauce, another layer of noodles, then the remaining meat sauce.
5. Sprinkle the top with another cup of mozzarella and a little Parmesan.
6. Add foil and bake for 40 minutes, then remove the foil and bake for another 5-10 minutes until it looks baked. Watch closely as you don’t want the noodles on top to be too overdone.
Not so lucky with my breakfast game this morning.
The coffee shop down the street always has gluten free granola bars but they were all out, so I figured I would just make pancakes when I got home. Once home, I realized I didn’t have enough milk and didn’t want pancakes enough to go to the store to buy some. So I figured yogurt, granola and berries would be great until I realized my berries are moldy 🙈 FAIL. Simple yogurt and granola it is this morning!
A few years ago, I wanted to learn how to cook. Nick and I followed a recipe to make lasagna, and I got the right ingredients to adapt for my allergies. We prepared it according to the instructions and it kept not seeming cooked enough, despite how long we baked it. Almost 2 hours later and after a phone call to family members to ask how to fix it, we realized we never browned the meat 🙈 It was not listed as a step on the recipe, and I was not familiar with cooking red meat at the time. I was so upset that I ate gluten free Oreos and went to bed 😬 Three years later, I redeemed myself!

I am very content with my go-to breakfast, but made it a goal in 2018 to expand my diet. A sweat a day keeps the depression (and doctor) away.
The physical benefits of exercise are great, but the mental shift I have experienced since I started working out daily is the best feeling in the world. I have had many blah days the last few years while trying to figure out what foods I can and cannot eat, how to manage GI and autoimmune symptoms and how to avoid future development of others. Day by day I am becoming the best version of myself, and I’m loving the journey.

In our whole 30 group one of the mommas was having issues with her 8 month old being constipated with the changes in her diet. I AM IN HEAVEN. My boyfriend’s mom found these dairy, nut, gluten and soy free sunflower butter cups 😍 I am so lactose intolerant that I can’t even tolerate lactose free items (since they normally have lactose, but add lactase to help with digestion) so this is the perfect treat for someone with a sweet tooth and love for a “peanut” butter/chocolate combo!
I start each morning reading a little personal development during my commute to work.
In July, I started a new job where my role varies greatly from what I expected. I was told I would “dabble in quality reporting” during my interview and I am the point person for all Medicare and Medicaid quality reporting for a 600+ provider medical group and 200+ providers at our community hospital. I have given myself hives and GI issues from stress, lost many nights of sleep and have cried more in the last 5 months than I have in my entire life. I am afraid to be anything less than perfect.
I am in peak reporting season right now, so I thought this book would be a perfect start to the year. I will do my best every day at work, but if I fail, it’s only a sign that I’m growing. I am not a failure when I don’t know how to do something, but am a work in progress ✨ New year, best me!

Each Sunday I make time to fill my weekly pill organizers and it has made my life so much easier! With early mornings it is easy to grab the pills, without thought, out of the morning container. Then dump the lunch and dinner pills into individual travel containers to make sure I always have my meds with me so I can actually eat throughout the busy day!
Leading a normal life while also fighting Cystic Fibrosis can be overwhelming but organization can make all the difference!
Cheers to having a hectic and busy personal life while battling a disease that should’ve killed me or secluded me to a hospital room by now!
No shame in wearing my coat and lined duck boots to work when it’s this cold outside. I’m trying to focus on how lucky I am to have warm clothes, the ability to pay for heat, and that I have a warm bed to sleep in each night. It can go back up to 20s any time now though!!

No filter needed for these beauties 😍 I attempted gluten free and vegan donuts yesterday and it was a solid first try.
I went “off” my meal plan for 24 hours and had gluten and dairy free Mac and cheese, gluten free potstickers, and tater tots on Sunday, and gluten and dairy free “pizza rolls”, and half of one of these donuts yesterday. My only vegetable intake yesterday was pizza sauce 😐 Not planning ahead ends terribly for me!
As you can imagine, I am hurting today and feeling very puffy! It’s good to enjoy some of your favorite things, but I definitely recommend not having it all within a 24 hour time period. I am getting back on track this morning with a lactose free yogurt and some matcha with collagen. New year, best you!
I often find myself thinking of foods I used to love as a kid, but can no longer have due to food allergies. Pizza rolls are towards the top of that list, so I created them gluten, dairy, soy, egg free 😋 Not healthy, but incredibly satisfying!
