Crimi mushrooms stuffed with homemade vegan pesto. I made these for a party the other night and they disappeared almost instantly. I had some leftover pesto and decided to make another batch. This is fine living.

This chilly weather in Dallas got me craving vegan #ramen from @ramenhood in LA! 🤤🍜 It’s a 100% vegan ramen food stall at the Grand Central Market, by Top Chef winner Ilan Hall. I had the Spicy Ramen with vegan egg! It wasn’t spicy to me and the egg was awesome. Swipe to see the menu and egg ingredients. I love the thick and creamy umami broth 😋 Be prepared to wait for a seat at the bar during peak hours, or get it to go and sit at a table in the market like we did.

6 Tbsp vegan butter (or chilled coconut oil with varied results)
1 1/4 cup gluten-free flour
1/4 tsp salt
4-6 Tbsp water
6 tablespoons butter diced
3/4 cup brown sugar
1/4 cup pure maple syrup
1 1/2 Tbsp @lovemysilk almond milk
1 1/2 cups chopped pecans
1/4 tsp sea salt
FOR THE CRUST
1. Preheat oven to 350F
2. Add flour and salt to a large mixing bowl and whisk to combine. Slice or dollop the cold butter in and work gently with a fork until incorporated.
2. Add ice cold water a little at a time and use a wooden spoon to stir. Only add as much water as you need to help it come together.
3. Transfer the mixture (it will be crumbly) into a parchment lined 8x8 pan and press dough evenly into the bottom. Bake for 15 minutes.
FOR THE FILLING
1. Prepare the filling while the crust is in the oven. In a medium saucepan, combine butter, brown sugar, maple syrup and milk. Bring to a simmer, stirring occasionally and simmer for one full minute.
2. Stir in the pecans and pour the filling evenly over the crust (gently spread it around with a rubber spatula so that the nuts and liquid are evenly distributed).
3. Return to the oven for an additional 18 minutes. Mixture should be bubbling, it will thicken as it cools. Remove from oven and sprinkle with 1/4 teaspoon salt and cool completely before cutting into squares.
4. Enjoy!!! ✨💫

Veggie Sushi Burritos are a great way to use up vegetables before they turn and are an easy way to get nutritious meal. You could easily convert this into a more traditional sushi roll and slice it, but I prefer the handheld option. Who says vegans can’t eat sushi? All you need is a nori sheet, rice (I used a mix of short grain white and brown), and your fillings of choice (I used bell pepper,roasted bok choy, cucumber, and vegan cream cheese). I would recommend to slice your vegetables into a thinner slice. I recommend a mandolin to do this to save time, they are a great investment to slice veggies as well. A sushi mat isn’t necessary because not all of us are professional sushi chefs. You can use just the plastic wrap instead. I made two of these so I had a second one to take to work later. They hold in the fridge well if you wrap them tight. I would not keep them over a day or two.
About last night...we had an amazing dinner at #GraciasMadre @gmweho in #WestHollywood 😜 We’re fans of the og SF location so wanted to check out their new digs, which is fancier since it’s on Melrose Ave. Food is still good though! We started with Street Corn on the cob, entrees were #flautas and #pozole , dessert was a heavenly Pumpkin #Flan 🍮 😋 I had the sangria, which was pretty but I didn’t like the spiced cider taste (love that they use paper straws instead of plastic!), hubby had a So Fresa So Clean cocktail with aquafaba in it. 😱Also actor Alan Tudyk was two tables from us! Who knew he’s vegan 🙌 We also met and chatted with Moby at @Cykochik’s booth the day after we dined at his restaurant, Little Pine. It’s a great work trip overall, now we’re heading back to Dallas! ✈️
This Vegan Breakfast Sandwich on a vegan #croissant from @changocoffee is legit!! 🙌😋 The croissant is lightly toasted and flaky, very “eggy” soft tofu and melty cheese. 🤤 It rare to find good vegan croissants! We’re definitely going back tomorrow before heading back to Dallas!

Macaroni and Cheeze with onions, spices, and some soy sausages. It was a hearty and delicious meal for a snowy evening. Would you like me to post my macaroni and cheese recipe? I make it a few different ways but my family (who still eat dairy) almost prefer it over real dairy cheese.
Popped into the highly-anticipated @legacyfoodhall in Plano,TX for lunch before jetting off to LA for the @peta Holiday Kind Market with @cykochik! It was packed on all three levels 😱 We stayed on the ground floor and got the @knifeburger veggie burger (best patty!), built my own #pokebowl with a delish coconut-lime dressing at @eatfreshfin , and a vegan maple donut from @glazeddonutworks! 😜 We’ll be back to explore other vegan options.
