Skye and I made dinner tonight 💙. I ditched the keto diet because it was making me sick and it wasn’t sustainable, so carbs are back 😂. I’m so lucky to have so many amazing friends in my dorm, and such a strong community at school. I love these people and I love cooking for them. (Let’s be honest though. *Taco Thursday? * My favorite to make Lentil and Quinoa Tacos !! Who says Tacos can't be #vegan ? The recipe is super quick and can be made Who Says Taco Tuesday Can't Be Vegan? This recipe is super quick and super easy, just a 15 minute morning prep, add all your ingredients into your VitaClay slow cooker and set the timer. When you get home you have a Taco Tuesday Fiesta waiting for you. Directions : 1) Combine the lentils, quinoa, water, garlic, chili powder and paprika in your VitaClay slow/rice cooker. Mix well.
2)Cover and cook on the "stew" setting for 1 hour.
When slow cooking is complete adjust taste by adding salt and pepper as desired.
3)Serve in taco shells or even as a taco salad.

What is your Favorite Soup ? Ours is #misosoup !!! There is something so warm and comforting about it and it's nutritious ! Fun Fact : Miso is a fermented soy product that the Japanese have been using to benefit health. It's a fermented soy product , it is best served stirred into soup at the end and it dissolves as you stir. I’ve had three doctors in the past three days say working out will help the sleep issues I’ve been having.
Between the eye twitch, the sleep, and the digestive stuff, I’m willing to try anything. I don’t have a gym membership but there’s a small workout room in the basement of my dorm. Won’t be back there until Jan. Ideas? Also dorm/cafe food hacks/ideas?
Be selective with your treats- try this yummy recipe for your holiday party! We call them “snowball” cookies 😍😛
1 cup of unsalted butter (🤘🏼)
1/2 cup of confectioners sugar (🙊🙃)
1 tsp pure vanilla
2 1/4 cup of flour (coconut or almond works)
1 cup of chopped walnuts
1/4 tsp salt
1/3 cup of sifted confectioners sugar (🙊) Recipe:
Preheat oven to 350, line cookie sheet with parchment paper
Mix all ingredients together in a bowl and roll into balls
Bake for 15 minutes, let cool, roll them recipe in sifted confectioners sugar!
Enjoy them warm or room temp😍
Worth the extra sweets for the day, I promise!
