after a trip away from home: i don’t deprive myself, only eat vegetables, or just drink smoothies. i used to🙄 & it was awful because my body did this back & forth of feeling great on only “healthy” food to awful if i strayed at all.
now, i give it what it wants like a bagel this morning instead of forcing down something i really didn’t want. it took me awhile to get here but i’m thankful because now getting back from a trip, i don’t feel like i have a food hangover.
i honestly feel great, but i do love being in my kitchen & cooking so it feels good to be back! happy monday❤️

Procrastinating away with batch after batch of this Chocolate Chunk Paleo Banana Bread 🍫🍌 (recipe below)
This dreamy grain free loaf is sweetened with just bananas and has the most amazing moist + cakey texture! Nothing about it tastes healthy 🙊
3/4 cup + 2 tbsp almond flour
1/4 cup + 1 tbsp coconut flour
1 tsp baking soda
1/2 tsp sea salt
3 overripe bananas, mashed
3 organic pasture raised eggs
1 tbsp coconut oil, melted + cooled
2 tbsp almond butter
1 tsp vanilla extract (I used a grain free one from @sweetlaurelbakery)
2 oz. dark chocolate, cut into chunks (@eatingevolved Signature Dark Chocolate is the BEST—order with code “CAROLINETMT” for a free surprise bar with your order!)
Preheat oven to 350F. Grease a loaf tin with coconut oil and line with a piece of parchment. Whisk together all the dry ingredients in a large bowl, then whisk the wet ingredients in a separate bowl. Add the wet mixture to the dry and fold together with a spatula. Stir in the chocolate, then bake at 350 for 40-50 minutes!

Ok that might be an overstatement buuuut this is the closest i will get to a Levain cookie anytime soon. And if you’ve been there, you know what I’m talking about. Those cookies are LIFE in all of their buttery, gluten, sugar filled glory✨🤤 and these are a close second.

CHERRY & PEACH CHOCOLATE SQUARES
Preparation Time: 30 minutes plus chilling
Makes 16 pieces
2 cups finely crushed chocolate sandwich cookies
6 tablespoons butter, softened
1 cup all-purpose cream
3 tablespoons honey
350 grams chocolate bar (bittersweet or dark chocolate), chopped
6 tablespoons unsalted butter
1 can Jolly Peach Halves, sliced
1 6oz Jolly Maraschino Cherries
¼ cup toasted nuts (walnut, pistachio, or pecan), coarsely chopped
1. Mix cookies and butter in a bowl. Press onto bottom of foil-lined 8-inch square pan. Refrigerate.
2. Heat cream and honey together in a saucepan until almost boiling. Stir in chocolate until melted then add butter. Mix well.
3. Pour chocolate mixture into chocolate crust. Let it stand at room temperature for 10- 15 minutes or until chocolate mixture thickens. Decorate top with Jolly Peach Halves, Jolly Maraschino Cherries and toasted nuts. Refrigerate for 3 hours until fully set.
4. Remove tart from pan and cut into squares.

Think spinach pie filling baked in mini muffin tins. Savory, packed with nutrients and DELISH! 😋 Only 8 ingredients including spinach, onions, parsley, feta, parmigiana, and eggs, a friend developed the recipe for us several years back because my son missed traditional spinach pies after being diagnosed #celiac . They quickly became a fan favorite and are perfect as a holiday appetizer, for a holiday brunch or an anytime snack!.

🎉 Edible Christmas Wreath🎄 with a healthy ranch dip (recipe below)
A perfect dish for holiday potlucks or a family dinner 😋 Easy to make- you can use a mixture of fresh and frozen veggies like I did! Bring this wreath for a boost of fibre, colour, and dairy to any table of festive goodies 🎀
- 1 large head of broccoli
- 1 bunch of asparagus
- 1/2 cup of cauliflower florets
- 1/2 cup of brussel sprouts
- 1/2 cup of green beans
- 1 cup of cherry tomatoes
To make crudités, blanche all veggies (except tomatoes) in boiling water for 1-2 minutes, then soak immediately in a bowl of ice water. Or serve everything raw!
On a large platter, arrange the vegetables around a small bowl. Start with bunches of green beans and asparagus, then small groups of brussel sprouts. Next, layer the broccoli florets around the centre and cauliflower around the edges of the platter. Then place the cherry tomatoes in any empty spaces in groups of 2-3.
Healthy ranch dip:
1/2 cup of plain Greek yogurt
1 cup of cottage cheese
2 tablespoons of fresh chopped dill (or 1 tbsp dried)
1/2 tablespoon of garlic powder
2 tablespoons of white vinegar
Mix everything in a large bowl and transfer to the bowl on the platter ✨ Enjoy with friends and family!
