Sunday means a proper Sunday lunch, the kind where you eat a little too much and drink some good wine, in the company of friends or family. Today we launched at the superb @lockswindsorterrace, located on the banks of the Grand Canal. Pictured is the creamy celeriac and apple soup, served with a blue cheese rarebit toastie.
Sunday Treats ☘☘Carrot Cake from @kcpeachesdublin brought home for the family after my yoga morning in Dublin 🤗 I'm tempted to take on a Carrot Cake for the blog! 🙋♀️ Or maybe Carrot Cake Oats? 🤔 In general I feel like I've got more recipe Inspiraiton for the blog than I have time to create 🤣 Which is EPIC and makes me so happy 🤗 Anyone wanna give me my own kitchen and cafe? 😂😂
Sunday plans. 1. Fill baking tray with a layer of cookie dough- current favourite is the @bbcgoodfood vintage chocolate chip cookie recipe, with some extra chunks of @aldi_ireland salted caramel dark chocolate. 2. Thick layer of @carnation_uk caramel. Eat two tablespoons because it's delicious. 3. Layer of @hummingbbakery brownie recipe (love this- pretty much use it weekly), with some added dark chocolate chips. 4. Bake and cool enough so that the caramel doesn't burn your tongue. Take a nap. Have your cake and eat it too! Sometimes, when it’s a rotten day outside, and all you want to do is binge eat all around you, try a different approach. Here’s a healthier option for chocolate cake. Cocoa is high in antioxidants which helps the fight against cancer, aging and lead to an all around healthier body. I also replaced butter for coconut oil and flour for coconut flour, making it gluten free and easier on the digestive system. It also doesn’t give you the high insulin spike like so many other refined flours do. I also used honey from our bees instead of sugar. You can always pick some fruit out and chuck it in. Raspberries are my favourite. There are so many options out there online so find one that works best for your palette. I just played along with mine and thankfully it turned out ok. Even my very picky kids devoured it. I also made a very small cake to keep the quantity low so I don’t keep picking at it for days. Too much of a good thing...
