I believe that I have talked about this before, about how much this project has changed me. Every time I look at images like these, I see individuals. Bacalao and Tzatziki, my dogs, are individuals with their own personality and will. I have grown up with animals, but it wasn’t until having these two in my life that I somehow connected with them, with animals. Once that connection was made it was impossible for me not to feel the need to extend the love an respect, I feel for my galgos, to other animals. In our case, the natural step was to stop eating meat, but the real change in us was deeper and somehow liberating. I see an individual here, not just a dog to whom somebody broke the hip before abandoning him. Creo que ya he hablado sobre esto, sobre cuánto me ha cambiado este proyecto. Cada vez que miro imágenes como estas y me traslado a cuando las grabé, veo a individuos. Bacalao y Tzatziki, mis perros, son individuos para mí con su propia personalidad y voluntad. He crecido con animales en casa, pero no fue hasta tener a estas dos en mi vida que, de alguna manera, realmente conecté con ellos, con los animales. Una vez que se hizo esa conexión, me fue imposible no sentir la necesidad de extender ese amor y respeto que siento por mis galgos, a otros animales. En nuestro caso, el siguiente paso natural fue dejar de comer carne, pero hubo otro cambio en nosotros más profundo y de alguna manera liberador. Me es imposible no ver a individuos en estos videos, no solo un perro al que le rompieron la cadera antes de abandonarlo. Tobias was rescued back in late spring when he was being sold on a market stall, we didn't have to pay money for his freedom as another kind heart had already purchased him and was looking around Denmark for a place for him to find sanctuary.

Sunday lunch with my omnivore family 😬 My brother and his wife came to visit us and my mother made a roast of a dead baby animal (cow 😢) Meanwhile I had a salad with some pine nuts, croutons and my all-time favourite soy meat by #likemeat
I also prepared some vegan tzatziki with the vegan yoghurt by #madewithluv
As a dessert I had some vegan ice cream by Made with Luv as well (not in the picture because it’s difficult to portion. It was lush!! Happy Sunday afternoon 💕🌙💫 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ RECIPE:
4 spoons of vegan yoghurt
2 cloves of garlic
1-2 spoons of fresh lemon juice
Herbs (chives, dill etc) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ ⠀⠀⠀⠀ 🇩🇪Heute gab es ein Sonntagsessen mit meiner Familie. Mein Bruder war zu Besuch. Da alle ausgesprochen sture Omnivoren sind, gab es einen Braten mit totem Kalb 😢 für die anderen und ich habe mir den Fleischersatz von LikeMeat gegönnt mit veganen Tzatziki (Rezept oben) mit viel Knoblauch 😈 und einigen Beilagen. Danach gab es Eis, was aber schwierig zu portionieren war. War lecker!Ich wünsche euch einen schönen Nachmittag!
VEGAN MATZO BALL SOUP 🙌🏻 just in time for the holidays! 🌱
FOR THE VEGETABLE SOUP:
2 tablespoons olive oil or other healthy vegetable oil
1 large onion, finely chopped
3 celery stalks, diced
1 32-ounce carton vegetable broth
6 medium potatoes, peeled and finely diced
6-8 medium carrots, sliced
Handful of celery leaves
1 tablespoon all-purpose seasoning blend, or use a Kosher for Passover brand
1/4 cup chopped fresh dill, or to taste
Salt and freshly ground black peppe,r to taste
FOR THE MATZO BALLS:
1 cup quinoa flakes
2 cups boiling water
1 cup matzo meal or 1 1/4 cups quinoa flakes fro gluten-free
1/4 cup light vegetable oil (such as safflower)
1/4 teaspoon salt
A few grindings of black pepper
Pinch of onion and garlic powder, optional
FOR THE VEGETABLE SOUP:
Heat olive oil in a large soup pot. Add the onion and celery and sauté over medium heat until golden
Add the broth, potato, carrots, celery leaves, seasoning blend, and 2 cups water. Bring to a rapid simmer, then cover and simmer gently for 15 to 20 minutes, or until the vegetables are tender.
Stir in the dill, then season with salt and pepper. If time allows, let the soup stand for several hours off the heat to develop flavor. It can also be made a day in advance.
Just before serving, bring to a simmer. Adjust consistency with more water if needed be, and taste to adjust seasonings. Add warmed matzo balls to individual servings of soup.
FOR THE VEGAN MATZO BALLS:
In a large mixing bowl, cover quinoa flakes with the water. Let stand for 2-3 minutes.
Stir in the matzo meal along with the oil, and mix until well blended. Cover the bowl and refrigerate for at least 15 minutes.
Just before baking, preheat the oven to 275°F.
Roll the matzo meal mixture into approximately 1 -inch balls; don’t pack them too firmly. Arrange on a parchment-lined baking sheet.
Bake for 20-25 minutes, carefully turning matzo balls after 10 minutes, until firm to the touch; don’t let them brown.
If making ahead of time, let the matzo balls cool completely. then cover until needed. Warm them briefly in a medium oven and distribute them among the soup bowls(3-4 per bowl) *Recipe from www.onegreenplanet.org*

16/12/17 TW: recovery is so fucking hard. I just want to be skinnier and fitter and slimmer and everything I won't be if I keep eating like this. I feel guilty eating everything but there is a part of me that just feels betrayed because I never even made it to an unhealthy weight so I don't feel like people should be worried but I know that's ana talking for me but I'm just not sure anymore 😭 I'm trying really hard to eat everything but it all hurts my head so badly, and I'm doing this by myself - I'm not seeing anyone while my mother forces me to eat 💛
