Morning! 😁 Something I cooked yesterday 🐟 + 🌿Looks good but tasted even better. Our body needs fuel, and.. our soul sometimes needs a glass of wine 🍷 😉
But do you know what’s the best thing? This entire dish cost £5.5 (ok, I didn’t count olive oil, salt & pepper). Healthy food doesn’t mean expensive or difficult to make, so don’t be scared to explore, and have fun with it😊😍 Do you want to try today?
1). 1 big sweet potato (with skin) cut in chunks, mix in bowl with 1tbs of olive oil, salt& pepper and fresh rosemary. Move all in to baking tray covered with baking paper. Bake in 220C in pre-heated oven for around 20min (no need to touch it, unless you really can’t stop yourself 😉) 2). Filet of haddock (or any other fish you like) place in bowl, sprinkle with 1tbs of olive oil, add sliced 1 lemon, couple bunches or fresh rosemary, half red onion cut in rings, salt & pepper. Mixed all, leave fish skin up, cover the bowl with foil and place all in the fridge to marinate.
3). Cut off the hard, white bits from our asparagus (200g bunch). Cut in 3. Sprinkle with 1tsp of olive oil, add salt& pepper, mixed all.
That’s our prep done! (Go on, have a sip of wine 😉). After 20min of baking our potato, lower oven temp to 180C and add to the same tray asparagus, and our marinated fish (make sure you pour over your fish all marinate; place on the top of fish onion, lemons and rosemary). Bake all together for another 15min until fish is cooked.
When ready, sprinkle your asparagus with roasted sesame seeds. Done! 😊

Tuna Patties for Meatless Monday
I should probably put this on the blog,but much easier to share here (also,no time to sit down and work on the blog these days). How to:
1.Mix: 2 185g canned tuna (drain the water), about 6 pcs white bread,torn to small pieces, some parsley,salt,pepper, 1 to 2 tsp lemon juice,1 finely chopped med. white onion or spring onions or chives, grated cheese, 2 eggs. Mix Well!
2.Shape into patties and refrigerate about 30 mins (to help hold the shape). You can skip this step if you're hungry already.
3.Fry into hot oil(add a bit of butter) till brown on both sides. **Next time I will add some grated carrots or mashed peas to make it "healthier". Try it and let me know how it goes for you. Enjoy!

Yes it's a thing!!! I don't really know how to describe this weird and wonderful concoction other than HEAVENLY 🤤🍪😇 so... next time you make your smoothie, why not give it a bake?!⠀
🍌 2 ripe bananas.⠀
🌰 2 tbsp ground almonds.⠀
🌴 2 tbsp desiccated coconut.⠀
🔥 1 tsp cinnamon.⠀
🥜 3 tbsp @picspeanutbutter.⠀
💪🏻 1 scoop @sunwarrioraus vanilla protein.⠀
💫 2 scoops @vitalproteins collagen.⠀
🥛tiny splash almond milk.⠀
Process/blend together. Dollop onto lined baking tray. Top with banana slices. Bake at 180C for 15mins. Remove and leave to COOL (vital) for 20mins - this helps them solidify. Sprinkle with cinnamon, cacao, coconut chips and cacao nibs. Eat 👅 or fridge/freezer overnight for brekkie 🤗⠀
