The instant pot has been my latest favourite appliance for quick and tasty meals. Im notorious for forgetting to thaw out meat so I love how quick the instant pot can cook meat from frozen. This recipe for chicken and rice meal planning looks awesome!
Day 18: Asian Cuisine - Paleo Egg Roll In a Lettuce Wrap.
This is a spin on the classic Paleo Egg Roll in a Bowl; I just thought it would be fun to wrap it in lettuce to give a little of the crunch you get from a real egg roll. It’s a tasty, easy, go-to meal that everyone in our family loves. It’s made with ground pork, cabbage, carrots, broccoli stems, onions, water chestnuts, mushrooms and green onions all cooked up in a cast iron pan with plenty of garlic and ginger. The sauce is made with coconut aminos and honey instead of soy sauce and sugar to make it Paleo. We wrap them up in lettuce wraps to cut down on the carbs. Salad and a little brown rice is great on the side if you don’t care about the meal being Paleo. Either way, it’s so good!
Bone Broth Slow Cooker Chicken Noodle Soup
Last night we had a rotisserie chicken with salad. Ok, we have that once a week, because...quick and easy!!
Usually, I save the left overs hoping we will eat them, but we rarely do... And it KILLS me to throw all that uneaten leftover chicken away!! 😭 Yet, every week we toss it in our compost.
Until last night! I picked most of the uneaten meat off and put it in a Tupperware. THEN...I slow cooked the carcass to make bone broth soup! I showed the stages in my stories, and the finished product was SO GOOD!!! Thanks for the votes! I did add extra chicken stock 👍🏻
Even the teenage boy who is mostly healthy adverse loved it! •

Honestly...not sure I have the time to regularly post meals, but just wondering. Usually I do it so that I can quickly recreate a fav meal! You could use gluten free noodles, and it could easily be adapted for those of you doing Whole30 by adding zoodles or sweet potato noodles!

I'm happy to say these Banana Nut Brownie Bites are delicious! 😍 they are made with black beans and vegan chocolates chips but it tastes like real chocolate! 🍫
These had to sit in the fridge for 30 minutes so I did actually cook a meal while these sat. I'll post pics of the meals too. Hopefully they're just as good! 💕

Crock-pot Moroccan Chicken
🥘4 chicken breasts, cut into one inch pieces .
🥘2 - 28oz cans diced tomatoes .
🥘1 can tomato paste .
🥘1 onion chopped .
🥘2 cloves chopped garlic .
🥘1 TBSP of garam Masala (Indian spice) .
🥘 1 TBSP turmeric .
🥘 2 TSP cumin .
🥘 2 TSP coriander .
🥘 1 C Greek yogurt .
🥘 Handful of chopped cilantro
Salt and pepper to taste
Throw it all in the crockpot EXCEPT the Greek yogurt and cilantro, cook it on high for about three hours or low for about five. After it’s done cooking stir in the Greek yogurt and cilantro and done! Serve it with some cauliflower, rice or over some veggies and you have a bombbbb meal.
Portabella slices, asparagus spears - roast @ 400 for about 15-20 min with salt, pepper and parm cheese. Chicken strips with blackened seasoning 😍pan seared with a little olive oil.
