Recipe:
5 Sliced, par boiled kipfler Potatos
4 small ish Halved Homegrown tomatoes 
1 Quartered red onion
3 cloves garlic
Olive oil
Salt and pepper (Toss and add to a lined tray)

Bake on 200 for 45mins toss half way.
Top with chopped parsley and hemp seeds 
Serve hot.

Day 18: Asian Cuisine - Paleo Egg Roll In a Lettuce Wrap.

This is a spin on the classic Paleo Egg Roll in a Bowl; I just thought it would be fun to wrap it in lettuce to give a little of the crunch you get from a real egg roll. It’s a tasty, easy, go-to meal that everyone in our family loves. It’s made with ground pork, cabbage, carrots, broccoli stems, onions, water chestnuts, mushrooms and green onions all cooked up in a cast iron pan with plenty of garlic and ginger. The sauce is made with coconut aminos and honey instead of soy sauce and sugar to make it Paleo. We wrap them up in lettuce wraps to cut down on the carbs. Salad and a little brown rice is great on the side if you don’t care about the meal being Paleo. Either way, it’s so good!

Bone Broth Slow Cooker Chicken Noodle Soup

Last night we had a rotisserie chicken with salad.  Ok, we have that once a week, because...quick and easy!!

Usually, I save the left overs hoping we will eat them, but we rarely do... And it KILLS me to throw all that uneaten leftover chicken away!! 😭 Yet, every week we toss it in our compost.
•
Until last night!  I picked most of the uneaten meat off and put it in a Tupperware.  THEN...I slow cooked the carcass to make bone broth soup!  I showed the stages in my stories, and the finished product was SO GOOD!!! Thanks for the votes!  I did add extra chicken stock 👍🏻

Even the teenage boy who is mostly healthy adverse loved it! •
Recipe coming soon to the blog...remember when we posted recipes regularly?  Does anyone miss them, or was it too confusing having so much different stuff thrown your way?  Honestly...not sure I have the time to regularly post meals, but just wondering.  Usually I do it so that I can quickly recreate a fav meal!  This will definitely be on repeat in the cold weather months! •
You could use gluten free noodles, and it could easily be adapted for those of you doing Whole30 by adding zoodles or sweet potato noodles!

21 Day Fix approved HONEY WALNUT SHRIMP with brown rice, sautéed mango chunks, and stir fry vegetables. Looks fancy, but it only took 15 minutes! I couldn't finish everything, but I definitely finished every bite of that shrimp... 😂😂😂
I'm not even a huge shrimp fan but I loved this so much! Start by cooking 6 oz frozen shrimp in a frying pan with a lid on it (my husband does this part- I think he puts a little oil in there too), then drain the shrimp when done and set aside. Take a frying pan and sautée 1/2 tsp (or more) minced garlic in 2 tsp coconut oil. Stir 1 tsp honey in with the oil/garlic, then immediately stir in the shrimp and the 4 walnut halves. SO. YUMMY. The mango, veggies, and rice were all plain and purchased from the frozen foods aisle (from Trader Joes of course) and I just had to warm up in the microwave/frying pan (I didn't add any extra seasonings/oils except for a dash of soy sauce on the rice and some green onions mixed in with the mango). Easy peasy!

Want a quick dinner? Pork chops! I cover them in olive oil and a surprising amount of salt and pepper. Today I added a piece of bacon around it and secured it with a toothpick. Cast iron pans are the way to cook. High heat brown one side on the stove, flip them, and set them in a preset 400° oven. Cooks quick, maybe tenish minutes for thick chops. I sauteed some rainbow chard with ghee butter, garlic, red pepper flakes and added some corn. Maybe 20 minutes total and it's done. Yummmmm.

I'm happy to say these Banana Nut Brownie Bites are delicious! 😍 they are made with black beans and vegan chocolates chips but it tastes like real chocolate! 🍫

These had to sit in the fridge for 30 minutes so I did actually cook a meal while these sat. I'll post pics of the meals too. Hopefully they're just as good! 💕

🥘4 chicken breasts, cut into one inch pieces .
🥘2 - 28oz cans diced tomatoes .
🥘1 can tomato paste .
🥘1 onion chopped .
🥘2 cloves chopped garlic .
🥘1 TBSP of garam Masala (Indian spice) .
🥘 1 TBSP turmeric .
🥘 2 TSP cumin .
🥘 2 TSP coriander .
🥘 1 C Greek yogurt .
🥘 Handful of chopped cilantro 
Salt and pepper to taste
Throw it all in the crockpot EXCEPT the Greek yogurt and cilantro, cook it on high for about three hours or low for about five. After it’s done cooking stir in the Greek yogurt and cilantro and done! Serve it with some cauliflower, rice or over some veggies and you have a bombbbb meal.

- place a layer of @sietefoods Nacho Flavor Chips in even layer on baking sheet
- spoon some @betterbeanco Refried Black Beans on the Chips
- add 2oz shredded meal-prepped Free-range Chicken
- top with an ounce of grated @organicvalley Raw Cheddar Cheese from pastured cows
- place on broil rack and broil on low for 4-5 min, until chips get toasty and cheese melts
- top with organic purple shredded cabbage
- fresh Pico de Gallo
- couple spoonfuls of guac
- 1 Tbsp @wallabyyogurt Sour Cream
- fresh diced green onions
- fresh cilantro
- and fresh squeezed lime juice
And yes that’s for one serving, I devoured these before Nick got home, and used the same pan to make his after!
