Here is a quick and easy breakfast that is both filling and low calorie!
🍏 +oatmeal +cinnamon.
🙃 sometimes we get so busy that we skip breakfast and on crazy days lunch! .
I like to eat oatmeal because it is easy to make & keeps me full and satisfied
You can also make a large portion & refrigerate. Just heat in the microwave as needed!
1/4 cup oats
1 cup water
1 tsp cinnamon
1/3 small apple
Heat oats & water on the stove for 6 mins. When it looks cooked take it off the stove and add chopped apples! You can add as much cinnamon as you want for flavor.

I have been was very busy in last days doing errands and being involved in other activities. When this happens I try to prepare a quick meal of whatever I have in the fridge. Most of the time I prepare steam veggies with any meat. But a few days ago I decided to prepare white rice, scrambled eggs and a peas... very simple but super yummy!

Today's mission was to use up food in the fridge! I made way too many spaghetti noodles last night, so I turned it into a meal for today! I sautéed some red pepper & onion, added the noodles, pesto, spinach, and cherry tomatoes. I sprinkled a little Parmesan and crushed red pepper flakes on top. So good! To make this an even healthier option, swap at the noodles for zoodles!
So tired, wanted a quick meal, like how it’s so fast to eat processed foods. But still committed to vegan, or at least vegetarian. So , I tried The Beyond Burger. And I truly love it. Garnished with: kale, Just Chipotle Mayo, Dijon mustard, ketchup, Roma tomatoes, Follow Your Heart mozzarella cheese & sweet potato fries. Dumpling broth with ALL the veggies! 🥕🌽🌶🌱🌿 One of my easiest go-to meals is to grab some frozen prawn dumplings (or gyoza) and cook them in the same pot, at the same time as a bunch of veggies. Just cut it all up and dump it in. I like to use a whole bunch of different colours and usually keep some raw or semi raw for a crunch.
Also add soy sauce and sriracha for a kick 👍🏻
Finally back from Europe and back to my routine! The food in the Mediterranean is on another level and I've never been so inspired to cook! Stay tuned for some recreations of what I ate in Spain, Italy, and France! 😋
Recently we tried @jennifer.hunt.nutrition’s One Pan Fall Vegetables and Chicken Sausage. She suggested it when I asked for quick, budget- and family-friendly meals. We all enjoyed it although my hubby would pick pork or beef sausage next time. I also used frozen squash as that’s what I could find, but I’d prefer fresh next time. Creamy Chicken Over Noodles
3 tablespoons butter
3 tablespoons flour
1 1/2 cups chicken stock
1/2 cup milk
1 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon pepper
2 ounces cream cheese, at room temperature
2 cups cooked chicken, shredded
2 green onions, sliced thin and divided
1 pound egg noodles Instructions
Boil egg noodles according to package instructions while you are prepping the creamy chicken.
Melt butter in a large skillet over medium heat.
Add the flour whisk together into a paste. Cook, stirring constantly, about 3 minutes, until the mixture darkens slightly.
Pour in chicken stock and milk, whisking constantly.
Add herbs, salt and pepper. Simmer until thickened, about 4 minutes.
Add cream cheese and whisk until smooth.
Add chicken and green onions, leaving some of the green onions for garnishing.
Serve warm over egg noodles. Garnish with green onion slices, if desired.
