Andijvie ovenschotel met tomaat

Op zoek naar eens iets anders dan die standaard stampot rauwe andijvie? Dan is dit misschien wel iets voor je! Lekker fris door de creme fraiche, of romig door de kookroom. Kies dus waar jij van houd.

2 personen, 10 minuten + 30 minuten: 
500 gram andijvie
200 gram gehakt 
100 gram spekjes
1 ui, gesnipperd
1 knoflookteen, gesnipperd
1 eetlepel Italiaanse kruiden
2 eieren
200 milliliter creme fraiche of 200 milliliter koomroom
1 grote tomaat, of 2 kleine, in plakjes
400 gram aardappelschijfjes
100 gram geraspte kaas

Bak het gehakt, de spekjes, de gesnipperde ui en knoflook in een pan. Voeg de Italiaanse kruiden toe. Doe de andijvie bij de pan erin en laat slinken. Draai het vuur uit. Meng de creme fraiche (of kookroom) met de 2 eieren en roer door het andijvie mengsel. Verdeel de helft van de aardappelschijfjes in een ovenschotel. Schep het mengsel in de ovenschotel (probeer wat vocht achter te laten) en strooi hier 3/4 van de kaas over heen. Beleg met de helft van plakjes tomaat. Beleg nu de ovenschotel met de rest van de aardappelschijfjes. Strooi het laatste beetje kaas erover heen en verdeel de rest van de tomatenplakjes. Bak een half uur in een oven van 200 graden.

A small Kent pumpkin chopped into 1cm cubes ($2.75), 150g mushrooms roughly diced ($3.10), 2 bacon rashers diced ($0.90), 6 free range eggs whisked ($2.95) with a dash of cream ($0.20) and 50g parmesan cheese ($1.00), generous handful of spinach leaves roughly chopped ($1.13), 1 garlic clove ($0.10), salt and pepper & extra virgin olive oil from the pantry.
Method - Place pumpkin pieces on oven tray and toss with extra virgin olive oil, add salt and pepper and 1 crushed garlic clove. Roast in oven until soft at 180oC (approx 40mins). Add mushrooms at 30min mark. While veges are roasting, fry bacon pieces in a deep frying pan and stir in chopped spinach until wilted. Add the roast pumpkin and mushroom to the frying pan, mix with spinach and spread to fill pan. Pour in egg mixture and then put in oven for 25-30mins until set and light and golden. Enjoy 😋

My super simple and easy Tomato pasta!
Absolute favourite of my husband and I!! I started making this right after I went to Italy in 2009, and was amazed at how delicious simple pasta is.

Only 4 ingredients!
 TOMATO 
CONSOMMÉ
MOZZARELLA
BASILS +Pasta off course!! This is how you make it:
Dice two tomatos, out then in a pan, stir it and add consommé(2 cubes). ..... that's it! Hahaha
Add pasta in the sauce, dice mozzarella and add basil.
Adding olive oil is always a good idea 😉💓 騙されたと思って是非作っていただきたい!

トマト、モツァレラ、バジル、コンソメ!

2個とまとをカットし、炒め、そこに2個のコンソメを!(だいたいどれかわかりますよねw)
これで終わりーーー笑

Chaturanga is probably one of the most incorrectly done asanas in yoga, and not saying incorrect in terms of being mean, but in terms of its not beneficial and can be harmful to your body which is not what yoga is. On chaturanga you really want to pin your elbows to your side. Once you get down about halfway to where you elbows are pressed into your ribs...stay there no need to go any lower. Going lower puts a lot of stress on the shoulder and also sinking through the shoulders is another big no no. Your hips should be level and not dropped also. It's very important that you keep your shoulders strong and engaged almost like your pushing them up to the ceiling. Your whole body is working in sync in this asana 🙏😌

Today's lunch was a bit of tasty leftovers from yesterday's neighborly dinner drop off.... and it was just as good as last night! (I love that it was a mix of healthy options, too!). I can't wait to make the sweet potato salad for our family sometime!
But....
Tonight's dinner was a definite birthday splurge for me!!!! ANNNND, I am okay with that! 
Why?! Other than the fact that it's my freaking birthday, it is all about BALANCE!  Having a little thin crust pizza and a beer was perfect.  I got to eat, the baby was napping, my toddler ate agreeably, and I didn't have to cook.  #momwin 
Now, if I get to take a shower in peace and go to bed I will be one happy momma!

When you're living on campus and aren't allowed to have many kitchen appliances on hand, the microwave automatically becomes your best friend! 😅 And, for time's sake, pre-packaged frozen meals make things that much more convenient. ⚡️ But, I of course like to elevate my frozen meals, like I did with tonight's dinner. 😌 I took a frozen pack of quinoa, kale, and brown rice (with olive oil + seasoning) and combined it with steamed broccoli, peas, and chicken (also from frozen). I then added an @eatwholly avocado cup (just plain mashed avocado), along with salt, pepper, and lemon juice to taste. 👌🏼 It took me 10 minutes to put together and was actually really, really tasty... like, WOW! 😱 To top it off, all my ingredients were real and (mostly) organic, and they all tasted very fresh, too (even though everything but the broccoli and avocado came frozen). 😊 How's that for a boring old microwaved dinner?! 💁🏽 Oh, yes, and I've also found that sweet potatoes as well as frozen teff pasta (with sauce) serve as good, microwaveable vehicles for all the veggies and other toppings I love! ❤️

I made some fat free refried beans (and by made I mean heated them in the microwave with a little bit of cheese), cooked 2 eggs over easy, and made my garlic lime shrimp!

To make the shrimp just sauté 1 clove of minced garlic until fragrant, then add he shrimp, 2 Tbs of fresh lime juice and some adobo seasoning. Cook over medium heat until shrimp turn pink all the way through.

I also made my simple homemade pico that I swear by!  1 fresh tomato, 1/4 red onion, chopped fresh cilantro, lime juice and salt to taste! I put the pico de gallo on top of the beans and eggs and served everything together along with fresh avocado and mango! 😍 Simple, healthy, and deeelish! 😊

Anyway here is my dinner from a few nights ago tofu stir fry😋 I cooked some tofu in olive oil and lemon and stir fried it with sautéed rainbow chard, edamame, roasted garlic, and roasted cauliflower! Love dinners like these☺️

Tofu Farfalla
(Under 20 minutes-serves 1)

How to:
1.Boil salted water
2. Place 1.5 cups of pasta(bow-tie/farfalla) in pot
3. Cut 2 small or 1 large cucumber in half inch cubes
4. Cut 10 cherry tomatoes in fourths 
5. Cut 1 spring onion in quarter inch peices
6. Cut one fourth of a package of hard tofu in one inch cubes
7. Put olive oil in sauce pan on high, when hot add tofu
8. When tofu is golden on all sides add onion and cucumber and cook for 5 minutes, stirring occasionally 
9. Add tomato, garlic salt, oregano, "pasta seasoning" to taste. 
10. When tomatoes are tender take sauce off of heat. 
11. Pasta should be soft around the same time as the sauce so drain the pasta, place in serving dish.
12. Top pasta with sauce. 
13. Cut avocado into thin slices for garnish.
14. Mix and enjoy!
