Ninguém vai dizer que tem abobrinha aí, ela derrete todinha, você nem sente. 👉Em um recipiente eu coloquei água, açafrão e um pouquinho de nada de farinha de arroz, depois deixei a abobrinha nessa mistura aí por meia hora mais ou menos pra ela amolecer um pouquinho e pegar gosto do açafrão. 👉Enquanto ela ta la de molho prepare um outra mistura, que é um purê de batata com bastante azeite, azeitonas e curry. 👉Depois retire a abobrinha que estava de molho e modele cobrindo-a com a mistura de purê de batata. 👉Após isso jogue os bolinhos numa mistura seca de farinha de arroz com curry. Pronto, depois disso tu leva pra assar no grill.

Here, the leading lady is the broccolette that I've steamed in water, miso paste, and salt. While beautiful, delicious, and nutritious, on her own, the broccolette wouldn't have delivered the feeling of satiety that I crave from dinner. So I paired it with a rich mushroom pesto (sliced baby portobellos sautéed until quite brown, sautéed garlic and rosemary, pine nuts, salt, skads of basil, healthy dose of really good olive oil) and curry-fried beet medallions. Precalienta tu horno a 180º C. Corta la parte superior del jitomate y vacíalo. Espolvorea un poco de sal en su interior. Mientras cocina la quinoa con la taza de agua a fuego alto. Cuando comience a hervir, tapa la olla y pon a fuego mínimo durante media hora.⠀

Calienta el aceite de coco en un sartén, agrega ajo y dora ligeramente. Agrega los frijoles, aplástalos ligeramente con una cuchara de madera y cocina durante un minuto. Agrega la espinaca, el relleno de jitomate, la albahaca y sazona con sal y pimienta. Cocina un par de minutos más. Incorpora esta mezcla con la quinoa y rellena los jitomates. Colócalos en una charola o refractario y agrega un poco de agua en el fondo (tres o cuatro cucharadas). ¡Hornea durante 15 o 20 minutos y disfruta!

📚 طرز تهيه:

برای شور:
اول آب ونمک رو‌جوشوندم و کنار گذاشتم تا کاملا سرد بشه.آب نمک رو باید بچشید و میزان شوریش رواندازه کنید.
ترکیب#شور من شامل:گل کلم،هویج،سیب زمینیِ مخصوص ترشی،سیر،موسیر،کرفس،فلفل رنگیِ تند و خیار ریز هست.نسبت مواد به ذائقه خودتون بستگی داره ،عموما میزان گل کلم باید از بقیه مواد بیشتر و مقدار سیر وموسیر کمتر باشه،فلفل تند هم چندتا دونه برای کل مواد کفایت میکنه.
مواد رو شسته و به جز خیار باقی مواد رو خورد میکنم و چند ساعتی روی یه پارچه پهن میکنم تا کاملا آبش کشیده بشه.
سبزی مخصوص شورو#ترشی رو هم شسته و خورد کرده و روی پارچه پهن میکنم تارطوبش کشیده بشه
بجز سبزی همه مواد رومخلوط کرده و داخل ظرف میریزم و لابه لاش کمی پودر گلپر ریخته و سبزی میریزم و وقتی کاملا پر شد داخلش یه لیوان سرکه میریزم و با آب نمکی که کاملا سرد شده پُر میکنم( این میزان سرکه برای اون ظرفهای بزرگه)
برای ترشی:
مواد اولیه ترشی هم دقیقا همینه فقط پیاز و فلفل دلمه هم اضافه میکنم و درپایان داخل شیشه ها رو باسرکه پُر میکنم(داخل سرکه کمی زردچوبه ومقدارکافی نمک هم میریزم).
برای #ترشی_آب_گوجه:
گوجه هارو میشورم و خورد کرده و بدون آب میپزم و داخل آبکش ریخته و کاملا صافش میکنم تا فقط تفاله هاش باقی بمونه.عصاره گوجه رو با مقدار کافی سرکه و کمی نمک میزارم روی گاز و به مدت حدودا ربع ساعت میجوشونم و کنار میزارم تاکاملا سرد بشه(سرکه رو در حدی به عصاره گوجه اضافه میکنیم که مایعِ حاصله کاملا روان بشه)
مواد این ترشی هم مثل شور وترشی معمولی هست فقط پیاز،خیارو فلفل دلمه رو حذف میکنم.لابه لای مواد هم حتما مقداری سیاه دونه میریزم و دست آخر با آب گوجه خنک شده پر میکنم.
حتماًِ حتماً دقت کنید که تمام مواد اولیه شور و ترشی کاملا خشک باشه،بعد از یکی دوروز میزان نمک رو اندازه میکنیم ونکته مهم تر اینکه برای حفظ کیفیت،حتما در جای خنک و ترجیحا تاریک و دور از نور نگهداری میکنیم.
