I don’t love the processed dairy free versions you can buy so I make my own. I’m lazy and make it on mass and freeze some (freezes fine). 👍💯🎯 I think it’s delicious as does everyone I’ve made it for so far HOWEVER, you can’t really compare it to ‘real’ cheese. It’s just a yummy plant based substitute not really a super similar taste / texture.
This is my go to recipe for sun dried tomato cashew cheese (Pictured on kale crisp nacho’s 😋)
💚 2 heaped tablespoons Nutritional yeast 💚 1 cup raw cashews (soaked for a couple of hours or covered in boiling water for a couple of minutes)
💚 1/4 cup sun-dried tomatoes (I put them in boiling water with the cashews for a couple of minutes)
💚 1 tablespoon of garlic powder.
💚 1 tablespoon of onion powder.
💚 1 teaspoon of chili flakes.
💚 1 teaspoon of sea salt.
To make the cashew cheese: Drain the cashews and sun-dried tomatoes. Use food processor to blend both with 2 heaped tablespoons nutritional yeast and also the garlic powder, onion powder, chill flakes and sea salt. 😋🌱🧀🌱😋

So today I want to talk about iron! Many people are not getting the adequate amount of iron needed daily even though the sources are readily available in a variety of food! When iron levels are low it can be lead to fatigue, weakness, and more, so it's important to get in your iron! There are many different sources and also promoters to absorb more iron and some that foods that inhibit iron absorption that should be avoided when eating meals full of iron. Turkey chili has got to be one of the easiest meals to prep in advance! You pretty much throw everything in a pot and you’re good to go for a few meals 😎 I always use @ambitiouskitchen best healthy turkey chili recipe and it literally is the best turkey chili 😂 this time I had a zucchini on its way out, so I chopped it up and threw it in! Can’t even taste it 🤷♀️ side note: chili tastes best with copious amounts of tortilla chips on the side 😉

So I’ve yet to eat “German food” but last night we went to an authentic Indian restaurant & tonight was an Asian restaurant! Here’s some pics from tonight! I’m def enjoying my wine, but also opting for a TONNNNN of veggies! And so far NO dessert! Wait whattt?? That’s a HUGE win in my book 😝!
Luckily I brought my vegan chocolate shake (AND hand blender! 😂) with me so at least I know I’m getting my superfoods each day!! Bonus for loading up on even more veggies right?!! 🙌🏼

I seriously contemplated skipping H⚡️GH this morning. The lingering effects of a cold from last week have zapped my energy and I knew I’d be struggling. BUT, I went. And I had to scale a lot but I finished it! 🙌🏼 The thought of my delicious chocolate protein shake kept me going.. 😂 Until I got home and realized I was out of the spinach/kale I always put in my smoothies. 😭 Guys, I have to stick with routine. It won’t taste the same without it. Enter plan B. I pulled out one of the ginormous bags of peaches I froze this summer and mixed up an almond milk, banana, peach smoothie, with crushed ice and 3 scoops of @teraswhey Bourbon Vanilla protein powder. Ummm, it’s REALLY good. Like, dessert good. 😍 And I’m super impressed with myself that I realized I can drink my shakes while I’m in the shower! 😂 Multitasking is where it’s at folks! So my sister moved from the closed ward to the general ward. It's a big change for her because it's freer and a new setting - new fellow patients, new caretakers, new therapy.
She is now also allowed to leave the clinic with fellow patients and to not eat every meal there. Of course it's more difficult because she has to decide what to eat and not only eat because she's forced to. But it (hopefully) will make her stronger and the illness weaker. Staying in your comfort zone is not getting you anywhere..
