It's no secret that we're in 💘 with vegetables, so we're paying homage to a new seasonal vegetable weekly by tossing together a few big-flavoured salads to celebrate the summer season and show you just how versatile a vegetable can be. It feels natural for us to start with one of the most colourful and bombastic of vegetables — the beetroot! Sweet and earthy with a smooth and velvety feel, beets originated in the Mediterranean region, and wild beets still grow there around the coast. Beets are a nutritional powerhouse, and are a remarkable source of folic acid and vitamin K, and a good source of vitamin A. Bake a beet, grate it raw into a salad or cook it in a classic borscht — beets lend themselves to an endless array of meals and make a colourful addition to any dish 🌈 #eatcolour

A client of ours from overseas; who started training with us a little over a month ago, gave us these🤗 She said that before she starting training with us ..she had very severe knee discomfort (where..even to get in bed she needed a step stool) but now she hops in her bed with no assistance at all👏 And so this was for the little things, she said😋 Those little things that we do; are very much appreciated😔

We were travelling through Montreal recently and found this fab company called @loop_juice that takes so-called ugly fruit and vegetables and turns them into raw, cold-pressed juices. It reminds us of @rubiesintheruble in London, who make relishes and jams from produce that would otherwise be discarded. Really great to see food companies being socially responsible and environmentally conscious 🌿
Part 2 from treating broccoli stalks like bones! We had leftover stalks to play with from a salad we made the other day, and having been encouraged by the zero waste food efforts of @tomsfeast, we made Broccoli and Feta Pesto from @thekitchn. It was fresh, tangy and crazy easy, and we later tossed it with spelt pasta for dinner. It's a brilliant recipe inspired by the late Laurie Colwin, where she originally talked about a pasta sauce made from steamed broccoli in one of her essays. It really only took us 15 minutes, and needless to say we will never be throwing our stalks away again.
Celebrating spring onions this week with a Broccolini Salad adapted from @heidijswanson, that includes sautéed spring onions ✨ Our version is made with broccoli, and we chucked in a few tomatoes for some cheery colour and tossed it with @we_are_food's take on Green Goddess dressing (made with avocado + coconut milk!). It's a gorgeous plate of colour, texture and flavour

Our seasonal veg of the week is: spring onions! We found these jewels at our local @growingcommunities Stoke Newington Farmers Market, and love the zingy lightness they add to salads, soups and stir-fries. We're throwing together a few salads with these babies this week, starting with a Broccolini Salad from the lovely @heidijswanson ✨
Hey cherry lovers, I have teamed up with @SeasonalBerries to bring you a #CherryBrunch recipe – aka waffles with a cherry sauce and a whole heap of extra cherries. The cherry sauce is made with fresh British cherries – only the best for you guys and is super simple to make. .
This makes a perfect brunch treat for the entire family, but it is so good that you would probably end up eating it for supper too. Please try it and let me know what you think. Oh and do tell me what other cherry treat you guys are currently whipping up as I would love a few more ideas.
For the cherry sauce:
1kg of cherries pitted and divided
3 tbsp maple syrup
1 tbsp water
For the waffles
450 ml (1.9 cups) milk
125 g (4.4oz) unsalted butter, melted
3 eggs ,beaten
1 tsp vanilla essence
300 g (10.5oz) self-raising flour
Make the cherry sauce:
Place 3/4ths of the cherries, the maple syrup and water into a saucepan over medium heat.
Bring to the boil, then reduce to a simmer (uncovered) and cook for up to 20 mins until the cherries have broken down the switch off the heat.
Make the waffles:
Preheat waffle maker.
Whisk together milk, butter and eggs, almond extract and lemon zest and set aside.
Add flour into a large bowl and make a hole in the centre.
Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are some lumps.
Cook waffles according to your machine’s instructions until all the batter is finished
Repeat until all the mixture is finished
Serve the waffles topped with a sprinkle of icing sugar, the cherry sauce and the extra cherries dotted around. .
Our strawberry sorbet is one of my FAVOURITES! 🍓❤️ It is the perfect blend of sweet and sour, with real fruit chunks. I promise... you won't be disappointed with this flavour! I may have eaten two take home tubs... on my own last week 🙉🙈🙊 #coconutalleyicecream
