Size 14 vs 4 😮 May vs Jan
Wait, what?! I still can't wrap my head around it. I can't see what's really there because... 🤷🏻♀️...
My internal dialogue in the dressing room:
Noticing I only grabbed pants in size 4... 'crap' wishing I had grabbed a couple other sizes to try...(I'm currently wearing a baggy 6, how many other sizes are there?!)... notice I have a pair in size 5 too 'Oh, good'... start pulling up the first pair of size 4... they go up past my huge (clearly not huge 🤷🏻♀️) thighs... and when they do up and fit well... 'what the actual fuck...?!' try on 3 other pair to confirm I'm not crazy... they all fit 😮 take ton of photos to convince my they're really on and fitting... What the hell do I see that 'can't possibly be a size 4'?! Just in shock?
It has only been 8 months.

You just make it exactly like you would mashed cauliflower......cook til super soft, mash with a fork or potato masher, season with a little Himalayan sea salt, pepper, and Ghee.👌
Dinner tonight was mini meatloaves and broccoli with Kerrygold. I actually ate 3 of them, after finishing my bowl I noticed I was low on protein so I ate another before running out the door for work.
The last Keto Box I received has some pork clouds from @baconsheir (SWIPE to second pic). The flavor was delicious, but they had SO MUCH seasoning on them it was a little overwhelming.... I wish I had taken a pic to show you how caked in it some of them were. Anyway I saved them thinking they would be good for coating chicken breast or something. Then when meatloaf was decided on for dinner, I thought they would make a good binder. I was right they were super tasty!
RECIPE: Keto Mini Meatloaf Muffins
1 lb 80/20 ground beef
1 large egg
1/2 cup Parmesan cheese (shredded or grated- I used shredded)
1/2 cup shredded cheddar cheese (I used the Kraft shredded sharp with Philadelphia cream cheese mix)
1 serving pork clouds (or your favorite pork rinds), crushed (it was a 20g bag- came out to about 1/2 cup)
1 Tbsp Ranch dressing
Mix all ingredients together in a bowl and divide into 8 servings- place in greased muffin tin. Top each with 1/2 Tbsp reduced sugar ketchup if that’s your thing (it’s my thing). Bake at 350 degrees for 20 minutes or until cooked through.
MACROS PER MUFFIN (Calculated with Lose It using the ingredients/brands I used): 221 calories, 16.9g fat, 1.3 total/net carbs, 15.1g protein.

GRILLED FLANK STEAK WITH CHIMICHURRI
I’ve always been a steak lover, especially when it’s topped with homemade chimichurri. It adds freshness and zing to grilled meats, chicken or fish, and the sauce can be made a day in advance.
1 1/2 pounds flank steak
1 tsp garlic powder
3/4 tsp ground cumin
1/2 tsp dried oregano
fresh ground pepper
1 1/4 tsp kosher salt
For the Chimichurri Sauce:
2 packed tbsp parsley, finely chopped (no stems)
2 packed tbsp chopped cilantro
2 tbsp red onion, finely chopped
1 clove garlic, minced
2 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
1 tbsp water
1/4 tsp kosher salt
1/8 tsp fresh black pepper
1/8 tsp crushed red pepper flakes, or more to taste
1. Using sharp knife, lightly score the steak about 1/8 inch deep on both sides in a crisscross pattern at 1/2-inch intervals.
2. In a small bowl combine the cumin, garlic powder, oregano, freshly ground pepper and kosher salt. Season both sides of the steak with season spices.
3. For the chimichurri, combine the red onion, vinegar, salt and olive oil and let it sit for about 5 minutes. Add the remaining ingredients. Mix all ingredients together.
4. Prepare the grill on high heat. Grill the steaks to desired doneness, about 3 to 4 minutes per side for medium-rare, turning steaks 1/4 turn after 1 1/2 minutes to form crisscross grill marks, if desired.
5. Transfer steaks to cutting board; let rest 5 minutes. Thinly slice steaks across grain.
Transfer to platter and top with chimichurri sauce.
