Yesterday I posted a great savory side dish for Thanksgiving. Today it is sweets day!!🙌 this is so easy, healthy and yummy! You need to give it a try, not just on Thanksgiving! I like the idea of having individual servings of desserts rather than a bunch of big desserts for holiday get togethers. Crushed graham crackers underneath would be pretty good too, I think! Low carb pumpkin cheesecake mouse (Peace, Love and Low Carb)
8 oz cream cheese softened (could sub almond milk cream cheese)
1 15 oz pumpkin
1/2 cup confectioners erythritol (I cheated and used regular powdered sugar 😳 hey, it’s Thanksgiving 😉) 2 teaspoons pure vanilla extract
2 tablespoons pumpkin pie spice (more to taste)
1/2 cup heavy cream (could sub full fat coconut cream)
Top with cinnamon
* In a large mixing bowl, combine the cream cheese and pumpkin puree. Using a hand mixer, cream the two together until there are no visible clumps and the mixture is smooth and creamy.
* Add the erythritol (or powdered sugar) vanilla extract, pumpkin pie spice and heavy cream. Mix until all ingredients are well incorporated.
* Refrigerate for an hour before serving
-• C R O S S I N G T H E F I N I S H •- These last couple weeks after completing my Marathon, I’ve been doing a bit of soul searching. I worked hard on my training leading up to race day and now that’s it accomplished- what’s next? Another marathon for sure- But I have a few months before I start training for one late April and since the Holidays are here (bringing cold weather and tasty food) I could see it being very easy to let myself get a bit too relaxed with challenging myself physically. So I’ve decided to beat myself to the punch- these last couple weeks I’ve decided to try something new and challenging for me. I’ve been attending CrossFit classes and joined a CrossFit gym! It’s been new, challenging, intimidating and exciting! I took classes on form and the movements and have been running low mileage in the morning (2-6 miles) and then going hard in their afternoon class. My goals are to increase overall fitness, lower body fat, get stronger, and become more confident in myself- all while remaining a low carb, Ketogenic Athlete! I’m so excited to share these next couple months with you and challenging myself in new ways👊🏽 •
Yesterday we did 75 burpees then went into three sets of: 400m run, 20 box jumps, 3 rope climbs. Very different than long 10-15 mile runs but very fun!

This morning, I’ve found my way back to the gym! Halleluia!! I was feeling tired yesterday, so I measured my blood pressure and it was 88/48! Yes, and I was still alive 😂😂😂 I said to my self I should do something about it! Today, after having my morning coffee with some cream, I went down to the gym without having a breakfast and it was my first time since starting #keto that I exercice without eating.
