Want to know what's funny? When I was younger I would not eat any sort of vegetable, except for corn (does that even count?🙈). My go-to meal from restaurants was buttered noodles and I would NOT even eat it if it had parsley on it. Now, all I crave are vegetables!! Crazy, I know🙃

Master the sauce. Simple, fresh sauces make quick work of weeknight dinners. Fresh green curry paste is a perfect example - nothing processed, all real flavours all the time. Make it on the the weekend in about 5 min (your best friend is the food processor) and use it to make a coconut curry with salmon, as a sauce for crispy tofu or spread on some veggies before roasting. Add to soup, mix in with grains, or in salad, anything goes. Give it a try and let your imagination go wild! How would you use it? 
Recipe👇👇 ~

1 tsp coriander seed (or powder)
1 tsp cumin seed (or powder)
1 tsp turmeric powder (or fresh grated)
2 small serrano chilies, seeds removed
1 green bell pepper, chopped 
2 stalks lemongrass, halved and chopped
1 tbsp fresh ginger, minced
2 cloves garlic, minced
3 green onions, chopped
4 dried curry leaves, crumbled
1/4 cup cilantro, chopped
1 lime, zested and juiced
1/4 tsp fish sauce 
1 tbsp maple syrup (if needed to mellow the heat)
2 tbsp grapeseed oil
Salt and pepper to taste

If you're missing a few ingredients or not a fan of something, it's okay to omit a few and make it your own. Taste as you go :) Directions: Combine all ingredients in a food processor and blend for 2min or until a thick paste forms. 
Makes approx 1 1/4 cup. 
Keeps in the fridge for about a week.

Spicing up the chilly winter days with this Indian styled Popcorn Shrimps..
When you have some shrimps lying in the freezer (sadly not enough for a curry) and fresh curry leaves dying to be used, this was the easiest dish I could think of! 
I marinated the shrimps with red chilli paste, finely chopped curry leaves, minced ginger, minced garlic, garam masala, turmeric, pinch of red chilli powder for the colour, salt and lemon juice. Once marinated, dip these babies in some cornflour and semolina and shallow fry them till they are golden and crunchy (you could also deep fry them but I don’t like deep frying personally). I also sautéed some curry leaves and finely sliced green chillies and sprinkled them on top. .
What you have is a simply addictive plate of crunchy shrimps... aaahh bliss! .

3 Tbsp of @betterbodyfoods chia seeds and 6 Tbsp of water stored and let sit till it gelled. added 3 ripe bananas, 1/4 cup of @birchbenders paleo pancake mix, 1 cup of @bobsredmill gf flour, a tsp of vanilla and a dash of my homemade chai spice (recipe on blog). baked at 350 for about 50 minutes

I am pretty sure chocolate cures everything .... flu, freezing temp, November snow , depression and yessss it can also make a whining husband shut up! 
@thatsnapcracklepopnoise has been whining that I don’t make an ACTUAL cake anymore and then the superstar @tashasartisanfoods and my new friend @itheloveofcakes started posting beautiful cakes last week! And the inevitable happened.. .
Yup I fell off the fence and landed on this decadent Dark Chocolate Cake with a chocolate ganache and some random sprinkling of almond slivers! 
As you can see I don’t have the requisite skills to decorate a cake but it was really delicious! Note to self - amp up your cake skills woman!!! .
And hallelujah I felt better but I have a sneaky feeling I will hate myself tomorrow 🙈🙈🙈 and I will eat some more cake... vicious cycle I tell you!!! .

Happy Friday everyone!!!! I came home craving a soup bowl which wasn’t surprising seeing as the weather was in the teens!! Anyone that knows me knows that I LOVE Asian soup bowls, especially pho or ramen. This is the best ramen bowl I have ever made and all the work put in to it was worth it!! Broth: chicken broth, ginger, onion, miso, rice vinegar, and sesame oil. 
Ramen: okay it’s not ramen, it is actually fresh udon noodles 🤷🏻‍♀️
Additions: lots of greens, shiitake mushrooms, sautéed ground beef, and a soft boiled egg
Toppings: cilantro, scallions, and a red Fresno pepper.

I've been expressing ~gratitude~ every day since I devoured this cinnamon roll from Café Gratitude🍃✨ When you order from Café Gratitude, you're supposed to say "I am serene" (varies for each meal item), and then the employees give you your food and say "you are serene". I think reflecting on what you're grateful for each day will have a positive effect on you in the long term.☺️ I also am so fond receiving and giving genuine compliments. It makes me happy to make others happy! My fellow RAs gave me feedback the other day, and so much of the feedback was "you're always similing and laughing", "I love your positive energy", or "your healthy eating inspires me to eat healthier"! 🍇🥑 A compliment can go a long way and you never know who needs some extra love to be sent their way💌

I did not have much time for cooking and photography lately as I have started a new job and I am working on an event I am organising with my friend Sandra @ka_oui_ta (I'll tell you more about it next time), hence today's picture. These are produce grown by my family in Sardinia: red an green lentils, chickpeas, mungo beans, almonds, pomegranate, aubergine, the last cherry tomatoes of the year and freshly pressed olive oil. Monday night dinner was a “dump everything in your pasta” dish and I was quite delighted with the result. So we have whole wheat and flax seed pasta tossed with crunchy asparagus and garlicky spinach and topped off with a perfectly grilled salmon fillet.. .
This was my first time trying the whole wheat and flax seed pasta and I am absolutely hooked.. I had some lovely asparagus and spinach sitting pretty in the fridge and I thought “what the hell .. toss them in” with the pasta, garlic, chillies and olive oil... The lovely bit of salmon was marinated with some roasted red pepper pesto and quickly grilled in the oven while I made the pasta.. .
And boom! You have dinner on the plate before you finish one episode of the “The Office” and you are ready to dig in after sprinkling some parsley and a squeeze of lemon on the salmon! Then click a picture in the worst lighting possible and hope for the best 🙈🙈🙈🙈
