Hello world, it’s been a while!!! I’ve been a little low on here because school and life are keeping me well beyond busy. But it’s Friday!!! And I had some ripe naners laying around so here we are.... 3 ingredients and 15 minutes later and I’m enjoying my stress free FRIDAY!
to make!!! mash up a couple ripe bananas, any flour of your choice (I used @traderjoes pumpkin pancake mix this time), and an egg or an egg white! Tossed some chia seeds in my mix for a little added omega-3s + topped with some microwaved froz bluebs and some cashew butter 😊 ENJOY THIS LOVELY FRIDAY!!! Master the sauce. Simple, fresh sauces make quick work of weeknight dinners. Fresh green curry paste is a perfect example - nothing processed, all real flavours all the time. Make it on the the weekend in about 5 min (your best friend is the food processor) and use it to make a coconut curry with salmon, as a sauce for crispy tofu or spread on some veggies before roasting. Add to soup, mix in with grains, or in salad, anything goes. Give it a try and let your imagination go wild! How would you use it?
1 tsp coriander seed (or powder)
1 tsp cumin seed (or powder)
1 tsp turmeric powder (or fresh grated)
2 small serrano chilies, seeds removed
1 green bell pepper, chopped
2 stalks lemongrass, halved and chopped
1 tbsp fresh ginger, minced
2 cloves garlic, minced
3 green onions, chopped
4 dried curry leaves, crumbled
1/4 cup cilantro, chopped
1 lime, zested and juiced
1/4 tsp fish sauce
1 tbsp maple syrup (if needed to mellow the heat)
2 tbsp grapeseed oil
Salt and pepper to taste
If you're missing a few ingredients or not a fan of something, it's okay to omit a few and make it your own. Taste as you go :) Directions: Combine all ingredients in a food processor and blend for 2min or until a thick paste forms.
Makes approx 1 1/4 cup.
Keeps in the fridge for about a week.
sunday + fall = banana bread right? 🍌🍞 also went on a long run so needed all the potassium (and excuses to make this)! such a simple and quick recipe by @shutthekaleup with a few adaptations cause i was missing a few ingredients! 💓
3 Tbsp of @betterbodyfoods chia seeds and 6 Tbsp of water stored and let sit till it gelled. added 3 ripe bananas, 1/4 cup of @birchbenders paleo pancake mix, 1 cup of @bobsredmill gf flour, a tsp of vanilla and a dash of my homemade chai spice (recipe on blog). baked at 350 for about 50 minutes

Happy Friday everyone!!!! I came home craving a soup bowl which wasn’t surprising seeing as the weather was in the teens!! Anyone that knows me knows that I LOVE Asian soup bowls, especially pho or ramen. This is the best ramen bowl I have ever made and all the work put in to it was worth it!! Broth: chicken broth, ginger, onion, miso, rice vinegar, and sesame oil.
Ramen: okay it’s not ramen, it is actually fresh udon noodles 🤷🏻♀️
Additions: lots of greens, shiitake mushrooms, sautéed ground beef, and a soft boiled egg
Toppings: cilantro, scallions, and a red Fresno pepper.

These are one of the most ancient foods and date back to 3000BC. They were used regularly on long journeys because of their dense nutrition and hydrating juice. Today they’re one of the most popular superfoods because they’re packed full of vitamin C, potassium, and natural phenols (or antioxidants). If you eat the seeds (and why wouldn’t you?) you also get unsaturated oils, fiber and lots of other yummy micronutrients. Proof that real, whole foods never goes out of style. I love these in salads, smoothies or on oatmeal. But lately it’s been on top of chia pudding with toasted coconut which just makes me happier on these dark mornings. How do you eat them?

These are produce grown by my family in Sardinia: red an green lentils, chickpeas, mungo beans, almonds, pomegranate, aubergine, the last cherry tomatoes of the year and freshly pressed olive oil. Cannot wait to eat them all! I always keep a bowl like this around to keep that summer feeling😊...even in the dead of winter.😒

Growing up, my mom always told me to eat my salmon to feed my brain before big exams. Happily practicing that knowledge this morning as I prep for a long day of exams and responsibilities .
