Hi Insta, it's been a while 🙁 Life is happening and I seriously need to get back to recording my creativity because, as the name suggests, it really does keep me sane! So, a little lunch inspiration today to get back into the swing of things ☺ This was a super scrummy salad I put together just now, using some mixed salad leaves, a delicious organic boiled egg, half an avo,  half a pomegranate, a beetroot, and a pitta bread, chopped into squares, drizzled with olive oil and sprinkled with mixed herbs, then seasoned and baked for ten mins. I think it's going to be a new craze... 😋😂

I've been meaning to post about this maitake mushroom w/ allium vinaigrette dish we ate at @sundayinbrooklyn on an *actual* sunday in brooklyn two sundays ago. (I know, I know, the whole thing's a bit on the nose.) I have an annoying habit of editorializing lengthily on foodstuffs here but I'll try (and likely fail) to force my commentary to echo the dish's poetic simplicity: this was exceptional, surprising, and a true pleasure to eat. Mr. Plantbasedfoodz and I were disarmed by the amount of greedy, sloppy, hedonistic joy a few mushrooms in a bowl could inspire; the elegance of the dish was, quite frankly, at odds with our low-brow, lip-smacking reception of it. If I lived nearby, I would surely be a regular pest at the bar here, gleefully forking over my cash for a few more chomps at these shrooms. Also of note, the mezcal cocktail I had with this maitake delight wasn't half bad either. Chop one big red onion, 2 gloves of carlic and 1/2 curlyflower and fry. Add 1 yellow paprika and 1.5 dl of bell beans and 2dl of kidney beans. Spice with salt, pepper, turmeric, paprika and sundriedtomatoes. Something that makes me really happy is having my dinner pre-prepared so that when the time comes, all i need to do is re-heat and eat! Tonight it was this vegie stir-fry made from carrot, capsicum, zucchini, broccoli, and tofu, cooked in garlic-infused olive oil, with ginger and soy sauce. Devoured it with a side of steamed rice. Something that makes me really happy is having my dinner pre-prepared so that when the time comes, all i need to do is re-heat and eat! I am in my final week of this Whole30 and am contemplating extending it for at least another 2 weeks. I am feeling great, full of energy and mental clarity. My hypothyroid is under control and I just feel in control of my life for the first time in ages. I haven’t quite worked out how I want to continue with my food choices once this Whole30 is over so I’m going to take a bit more time to go through my eating strategies for after the re-introduction stage is complete. I am headed to an orientation for a brand new position I've been offered as a PT Clinical Reviewer... The bitter part? It's full time. And I've had the blessing of being part time since my babies were born! Big change!

What a delicious #curry I created. 
Ingredients

2 Tbs. canola oil

1 large yellow onion, finely diced

4 medium cloves garlic, minced

One 2-inch piece fresh ginger, peeled and finely grated (1 Tbs.) 1 Tbs. ground coriander

1-1/2 tsp. ground cumin

3/4 tsp. ground turmeric

1/2 tsp. cayenne

1 Tbs. tomato paste

2 cups lower-salt chicken broth or vegetable broth

1 cup light coconut milk

One 3-inch cinnamon stick

Fine sea salt and freshly ground black pepper

1 small cauliflower, broken into 1-1/2-inch florets (about 4 cups)

1 lb. sweet potatoes, peeled and cut into 1-inch cubes (about 3 cups)

2 medium tomatoes, cored, seeded, and coarsely chopped (about 1-1/2 cups)

2 large carrots, peeled and cut into 1/2-inch-thick rounds (about 1 cup)

One 15-1/2-oz. can chickpeas, drained and rinsed

4 oz. baby spinach (about 4 lightly packed cups)

What a delicious #curry  I created. All I did was blitz the chickpeas and raw sweet potato in a food processor with  lime juice, mint, coriander and chili. 
I cooked them with a small amount of olive oil and served as you can see below. Wrapped in lettuce with carrot, tomato and more herbs.

In this moment all I was thinking about was how to encourage one of my nervous little gymnasts. When I'm with them the focus shifts from myself to them. I'm thinking, "What will ease her fears? How can I make her smile? What will motivate her?" It feels good to put them first - to put more effort towards someone else rather than myself.

They remind me that I'm worth more than what I look like. To them I'm Miss Annaliese - the coach they what to show a new skill to because they know I'll cheer, the coach they whisper their fears to because they know I'll listen, the coach they talk to about school because they know I care. I'm that same person regardless of what I look like. God knew I needed these girls way more than they need me.
