I just want to be eating ice cream with brownies and peanut butter right now, watching some Modern Family on the couch in my pjs 😇. What’s your go-to show when you need to just zone out and relax? Sometimes I feel guilty for sitting down and watching a show because I feel like I should be working, studying, reading, researching, doing homework, etc. But sometimes turning your brain off for a bit and unwinding just puts you in a better mood and you then become more productive than you would’ve been before! THE BEETROOT BURGER by @flavorsbyzendy 💗
RECIPE
BEETROOT & WILD RICE PATTY (8 patties)
▪️2 medium beetroot, roasted and chopped
▪️225g of tinned kidney beans, rinsed and mashed
▪️½ cup wild rice, cooked.
▪️½ cup mix quinoa, cooked.
▪️2 flax eggs ( 2 tbsp ground flax seed + 6 tbsp water)
▪️½ red onion, diced.
▪️2 cloves of garlic, finely chopped.
▪️1 tsp smoked paprika powder
▪️1 tbsp coconut oil
▪️1 tbsp red wine vinegar
▪️2 tbsp parsley, chopped
▪️Salt and pepper to taste

METHOD
Pre heat the oven 180 C / 350 F.
To make a “flax egg”, mix the ground flax seed with the water in a small bowl. Let the mixture soak for 5-10 minutes. This mixture will help to bind the ingredients together.
Place the roasted beetroot into food processor and blend into a coarse texture.
In a large bowl, place the beetroot and all the remaining ingredients and mix well to combine together.
Shape into patties and place onto a baking tray with baking paper.
Spray the patty with a slight amount of oil, and bake for 15 minutes on each side.

At a yoga workshop this past weekend we had a potluck and one of the ladies' brought carrot soup. I ❤❤❤❤ carrot soup so I had to make some this week!

This soup is so yummy and so quick and easy to make! Give it a try :) Ingredients: 
1 tbsp coconut oil

1 medium sized yellow onion, chopped

5 cloves of garlic, minced

3 tbsp chopped fresh ginger

1 lb carrots, peeled and chopped 
32 oz vegetable stock

1 14oz can of coconut cream or coconut milk

½ tsp salt and pepper more to taste

2 tbsp of tumeric 
Steps:

Begin be heating up a large skillet to medium high heat. Melt the coconut oil.

Add onion, garlic, and ginger. Cook until fragrant and onion is almost clear, about 5 minutes.

Add carrots and vegetable stock, bring to a boil.

Reduce heat to simmer. Cook until carrots are nice and soft, about 25 minutes. Slowly stir in coconut milk (or coconut cream if using). With an immersion blender, blend soup until smooth. You can also use a regular blender and blend in batches. Add salt to taste. Serve hot!
