Healthy toppings😃These ingredients make a delicious pate. Nuts and seeds are super healthy and most of us aren’t eating enough of them. Many choices, all contain a host of healthful nutrients. Just a handful packs a powerful punch of vitamins, minerals and fats, all of which work together to affect your heart and your brain.❤Enjoy.
1/2 cup sunflower seeds (soaked for at least 4 hours and rinsed)
1/4 cups almonds (soaked for at least 4 hours and rinsed)
1 tbsp lemon juice
1 tsp lemon zest
1/2 tsp sea salt
1 rib celery, minced 
1 green onion, minced 
pinch of cayenne pepper
Optional additions: 1/4 cup grated carrot or 2 tbsp of fresh herbs (parsley, basil).
Puree sunflower seeds and almonds in a food processor until coarsely ground. Add lemon juice, zest, salt, cayenne, and veggies, and pulse until well mixed.

Dinner tonight was both spaghetti squash and zucchini noodles fried with mushrooms and spinach. Definitely trying to stay healthier around the holidays and I believe this is one of my most successful years!! Diet is #onpointe and my workouts have been tough and consistent. Getting back into running as well. Ran a solid 6.5 km this am. Quinoa and Papaya Salad
Hi Everyone!
I love this food combo of #papaya and #quinoa. "Why?" I am glad you ask.
First, it's an easy recipe.
Second, I can prepare it in under 30 minutes. 
So here's the recipe!
INGREDIENTS:
1 cup of quinoa
1 cup of chopped papaya
1  chopped #redbellpepper
1 Tblsp. #coconutoil 
2 to 3 Tblsp. of extra virgin #oliveoil
1 to 2 Tblsp. chopped fresh #parsley (optional)
Juice of 1 #lemon
1tsp. #Himalayansalt 
1/2 tsp. #nutmeg
Dash of #Cayennepepper
DIRECTIONS:
Cook quinoa according to directions on box. Set cooked quinoa aside.
Sauté the red bell pepper in coconut oil for about 5 to 7 minutes.
Add the ingredients to the quinoa. Mix all ingredients  together.
DRESSING:
6 to 8 fresh #Degletdates
2 1/2 Tbsp. extra virgin olive oil
1 tsp. #balsamicvinegar
Juice of 1 #lemon
Himalayan salt and pepper to taste 
DIRETIONS FOR DRESSING::
Place all ingredients in a blender and blend for about 2 minutes. Spoon out and set aside.

Add the dressing to the quinoa and papaya salad mixture and mix together.
There you have it! Eat it anytime.
Add a nice #gardensalad to accompany this awesome meal with a side of avocado. 
Add a blessing and enjoy!
