After 10 days of not having access to a fully equipped kitchen it feels good to have yummy home cooked meals again 🍽

✨ Don't ever set your goals low, right here is a great example. My Dad achieved his Eagle Scout when he was a teen, and here is an article from the local newspaper. The interesting thing about this is the very last sentence . He wanted to attend @westpoint_usma and unfortunately didn't have the grades to get in. So first, enter my @chillbywill giveaway for some awesome apparel.... Second heck yesssss! Dukkah chicken with Greek yogurt sauce for the win 🙌🏻 How it goes:
* 1/4 t sea salt
* 2 T hemp hearts
* 1 T coriander
* 1 T cumin (seeds or powder)
* 1 t dried oregano
* 1 t mint flakes
* 1/2 t black pepper
* 1/4 c toasted hazelnuts roughly chopped * 2 egg whites, beaten * 4- 6oz skinless boneless chicken breasts
1. Place coriander, cumin, hemp hearts, oregano, mint, hazelnuts, pepper in food processor and pulse until finely ground
2. Brush egg whites onto chicken breasts and place spice mixture in a shallow bowl.
3. Press the egg coated chicken into spice mixture and coat all sides
4. In a medium high skillet add chicken and cook each side for about 3 minutes. Place skillet in oven at 400 F and cook for about 8 to 10 minutes.
For the sauce:
* 1/4 t salt
* 1/4 c whole milk plain Greek yogurt (I used @chobani)
* 1 garlic clove
* 1 t orange zest
1. Mix all in food processor and top chicken
Green smoothies with all the fixings for dinner. It's practically a salad right?? 😜
Smoothie is romaine, banana, dates, avocado, and lemon juice, plus water to mix. Toppings of chia seeds, coconut, sprouted sunflower seeds, hemp hearts, chocolate covered coconut, and goji berries.
Put the smoothie in a coconut and eat it all up! Celebrating #NationalPineappleDay with a tropical smoothie bowl inside a coconut because I was feeling fancy 🍍
2 frozen bananas
1 scoop @HumNutrition New Raw Beauty Coconut & Pineapple Tropical Infusion
1/2 cup milk of choice (I used cashew milk)
Blend till smooth.
I have never been much of a morning person, but thanks to jetlag (which is taking unusually long this time to recover), I have a taste how that's like (oh, so you can actually feel awake after stumbling out of bed?! 😮). Hence the blender's powered up this early morning for one of my all time favorites - papaya banana smoothie, spiced with a touch of turmeric and ginger for an extra kick, layered with vanilla chia pudding. #morningslikethese 🤗
Smoothie layers: 0.5 banana, a quarter of a small papaya in cubes, a dash of turmeric powder and ginger powder, almond milk, blended.
Chia: 0.5 cup chia seeds in 2 cups almond milk, 2 tbsp pure maple syrup, 3 tsp vanilla extract, stir well and refrigerate overnight. Good for one week and serves up to 5 portions.
Toppings: Chobani plain yoghurt, fresh Papaya, fresh blueberries, coconut flakes
I got some fresh wild caught tuna and decided to make tuna poke today. It looks delicious and you can bet it was ahhhmazing! I will make it again when I crave sushi rolls and spicy mayo 🤔workout today was day 2 of #lgsummerfitcation gym workout. Hmmm my legs are hurting from yesterday and tomorrow I might need assistance washing my hair 😁

Haven't had rice for several months so it was a treat today. The rice is a mixture of whole grain brown, whole grain sweet brown, whole grain red and whole grain black barley. I grilled chicken and then baked it. The veggies are sweet pepper, tomato, kale and asparagus.
