A perfect, softly scrambled egg is a lost art. Low heat, constant movement and putting nothing at all into the egg mix will give you the most pure softly scrambled egg you can get. Sometimes when I'm doing a fully loaded scramble, I add salt and pepper and hot sauce to my egg mix before cooking. But those ingredients can cause the proteins in the egg to change on a chemical level and you won't get as fluffy and perfect a finished product as possible. Lately I've been cooking the egg until just moments before completion and then adding in ingredients like spinach, cheese, etc. Then hot sauce, salt and pepper can go on after the fluffy clouds hit the plate.
#funfact : to get more healthy fats in my meal while not eating too much protein, I currently make my scrambled egg mix with two large eggs plus another yolk or two. This method also gives your eggs a wonderful, deeper flavor.
