Lots of mamas have messaged me to say they just can't find the motivation... GIRL!! Yeah, I mean like HELL-FIRE-SHIT yeah!! Me either!! 💣

I have a few tips & not so "secrets" that keep me plugged in, but daily I struggle to even roll outta bed... cause life ain't easy!! But once you get settled into a good plan & with folks that ARE supporting you, it becomes so much easier, promise!! If you need some motivation, let's hook up & support each other!! 💋

Timed nutrition. Sounds scary, right? It’s new. It’s a challenge. It’s about having less treats and focusing more on foods that make me feel good. It’s about eating the right types of foods together. It’s about eating every three hours. But y’all...it is NOT hard. It takes some more planning & prep, sure. Especially if you’re crazy busy (3 young daughters, wife, full time night shift nurse), like me. It takes some getting used to, sure. Just like all good things, right?

So after a little planning, here was my meal prep for work this week (which I never made it to thanks to Strep😷). Being a nurse, I may not always have time to sit and eat, so in addition to my meals, I always bring food I can eat super quick or on the go! Need some ideas? Hit me up!

My first time baking with stevia!

Today is my dad's 50th birthday!
I get my sweet tooth from him for sure 😊
But he has to watch his sugar intake these days...so I am hoping to surprise him with a sweet treat that he can enjoy without worrying too much about it. Cake is cool..but brownies are just soo much better! 
My families heath history is a HUGE reason why I have become so passionate about healthy eating and exercising. I saw myself going down a really bad road, and I am still sometimes scared by how far off the handle I can let myself get. But it is all a learning process. Treats don't HAVE to be a bad thing..as long as you can find a balance and learn to keep them in moderation...and I want to prove this to myself, my family, and my little girl <3

Getting a jump start on my meal plan for Week 2 while I’m home today with little man. 
Next week’s focus is to create more meal like option instead of what just goes with the container to give me what I hope to be a more full feeling to wait longer until my next scheduled meal! 
Still getting used to timed nutrition but again, trusting this process because I know my hard work is definitely showing! ❤️💚💛💜💙🧡

Cloud bread anyone? If someone out there knew you could make bread out of egg whites and didn’t tell me, let’s just say we’re in a fight. 😂😂😂

The perfect solution for those of us who can’t eat gluten but still love BREAD. Though not as much as Oprah. 🥖🍞🥖🍞

CLOUD BREAD 
Ingredients
Nonstick cooking spray
3 large eggs
1 dash cream of tartar
1 dash sea salt (or Himalayan salt) (to taste, optional)
⅓ cup reduced-fat (2%) plain Greek yogurt

Instructions
Heat oven to 300° F. Lightly coat large baking sheet with spray. Set aside.

Separate egg yolks from egg whites. Place whites in a medium bowl. Place yolks in a separate medium bowl. Set aside.
.
Add cream of tartar to egg whites. Beat with a mixer on high until stiff peaks form, about 4 minutes. Set aside.
.
Add salt and yogurt to egg yolks. Beat with a mixer on medium until blended.
.
Gently fold ⅓ of egg white mixture into egg yolk mixture. Fold in the remaining egg white mixture until just incorporated, being careful not to overmix.
.
Using a spoon, transfer a scoop of egg mixture onto prepared baking sheet, gently spreading into a thick pancake shape about 3 inches in diameter. Repeat with remaining batter.
.
Bake for 25 to 30 minutes, or until golden brown and exterior is crispy to the touch. Immediately loosen cloud breads with a spatula; allow to cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.

Serve immediately, or store in an airtight container.

Tips for raising a child who has a healthy relationship with food...

As someone who was conditioned to have a toxic relationship with food, this is what I wish my parents would have been conscious of, and reinforced. 
___
We've been conditioned to neglect our intuition when it comes to eating, so much so that when we're a full blown adult we have no clue what foods it is our body actually craves, and how much to actually eat. We have an innate wisdom in us in regards to food that has been muted because of conditioning. 
___
If you want to ensure that your child has a healthy relationship with food, one where they don't become a statistic and have issues with their weight or health, this is what I recommend:
___
👉🏽Feed them natural foods. When you feed your child sugary, heavily processed foods you turn on a trigger in their brain that causes them to crave it more. AND you start changing their healthy gut flora/biome to crave that sugar. Once your gut flora starts craving sugar it's hard to shake and can eventually lead to health problems. 
___
👉🏽No clean plate club. Your child knows how much they need to eat. When you force them to clean their plate or eat more than what they intuitively know they need, you're teaching them to turn their back on their intuition and conditioning them to want to clean their plate every time. 
___
👉🏽 Forcing them to eat foods they don't want to eat. Yet again, this is training them to dismiss their intuition towards food (and maybe their intuition in general). Chances are if your child has a strong dislike for some kind of food, there's probably a good reason behind it... maybe it upsets their stomach, makes them feel crappy, and they reject the food because they feel the foods effects on them, whereas by the time we're adults we have been taught to ignore that or we just mask that feeling with a pill or antacid.

👉🏽Model a healthy relationship with food. Your children are sponges. They soak up what they see you do, and will embody it. If they hear you comment on a food making you fat, or how you can't eat it, that's going to trigger something in them.

Tonight was Slow Cooker Whole30 Carnitas and build-your-own-salad night! 🌮🥗
It was my first time slow cooking in the instapot and it didn’t go quite as planned but it all worked out! I set the pot to slow cook for 6 hours on low and I think I probably should have left it at regular because the pork would not shred...so I chopped it up instead. 
Then I whipped up some cassava flour tortillas with @ottos_cassava_flour I threw some lettuce in a bowl and chopped a few veggies. So yummy!

I popped on the scale this morning cause, that's what you do 3 says into a new program right? Cause I need immediate results man!💀 🤢how the actual shit did I gain 1.8lbs???? Old me would declare this a fail & QUIT!! Stupid thing didn't work!! Right? Every.Time!

So I kicked the bitch-ass scale back under the bed, pulled on my fav panties (right ladies?  I feel better just wearing good panties, makeup could be smeared all over my face, spinach in my teeth, sweat stains on my shirt... I'm still like I own this!! Cause FAV panties have that kind of magic 🦄😘)
Packed my 23lb lunchbox with 43 containers of food & pressed on... faith, trust & pixie dust!
This was my breakfast (yes, really!) Can you imagine I was actually HUNGRY 2.5 hours later??? 😜  I was like holy shitballs, WTH???? I must have aliens living inside me!!
And today the trainer said-- stay off the damn scale... And I laughed. 🤣😍 umm yeah!!

Messy, lazy, vegan... that’s how I cook😋❤️ and it’s always fucking good. Mostly because I put so much love into my meals!!! Yo, this nourishes this human vessel I’m in, you best believe imma feed it up good!🌿👏🏼 So now, I wanna share with you ladies the easiest, simplest laziest meal ever: pasta stir fry🍝. I shared with my #LazyGirls today and felt like yeah, you deserve to enjoy this meal too!!! Just boil pasta as usual (I use brown rice pasta). In another pan, stir fry garlic & mushrooms with coconut oil until nice and reduced. Then, add protein (I used vegan sausage), cook for a bit and then add kale. Add coconut oil as needed. When pasta and mixture is ready, mix together and add vegan cheese, salt and pepper and viola. 20 mins later, you have pasta!!! Feel free to add any other veggies or spices you love. I always top with sriracha and a dollop of toasted sesame seed oil for mmmmm!!!! 👌🏼 #TheLazyGirlChallenge

Yo, this nourishes this human vessel I’m in, you best believe imma feed it up good!🌿👏🏼 So now, I wanna share with you ladies the easiest, simplest laziest meal ever: pasta stir fry🍝. Thank goodness for my meal plan laying all of this out for me.. and in case you were wondering I’m far from going hungry or starving myself!

Healthy everything bagels? Kinda sorta. These are Cauliflower BAGELS! And if you’re a New Yorker like me, bagels are basically life. And these yummies are an amazing alternative if you’re watching your carb intake OR like me, and can’t eat gluten or wheat. .
'Everything Bagel' Cauliflower Rolls

Ingredients
Cauliflower Buns
.
1 head cauliflower, riced (about 3 cups)
2 tablespoons almond flour
1 tablespoon coconut flour
2 organic eggs
1/2 teaspoon garlic powder
1/4 teaspoon fine sea salt
1/2 teaspoon poppy seeds
1 tablespoon sesame seeds
1 teaspoon dried minced garlic
1 tablespoon dried minced onion
1/2 teaspoon coarse sea salt

Directions
Preheat oven to 400°F and line a baking sheet.
In a food processor, or using a hand grater, pulse/grate cauliflower until rice consistency.

In a bowl combine eggs, cauliflower rice, almond flour, coconut flour, garlic powder, and salt,
In a separate bowl combine "everything" topping ingredients.
.
Roll cauliflower mixture into even sized balls and lay onto the baking sheet. Sprinkle "everything" topping and slightly press them into the top,
Bake for about 30 minutes, or until golden brown.

Optional: For extra crisp rolls, remove from baking sheet and broil on high for 3 minutes with the buns directly on the oven rack.

Remove from baking sheet and let cool directly on a cooling rack.

Serve as rolls with your meal, or serve as bread with your favorite sandwich ingredients.

What to eat, when to eat it— laid out.⏰ This is my fourth meal today. You’ll never catch me complaining.😂😍😍 Ya know what I'm thankful for on a real vulnerable note though? A simple plan. 
Why? Because for years in my teens and early 20's, I struggled with really disordered eating, body image and feelings about food. I was always paranoid-- was I eating too much? Not enough? How many calories? AY. That is a maddening cycle y'all of chatter to have go on in your brain all day. 
When I finally started following a simple plan a few years ago, it changed the way I view food and enjoy food. It helped me feel so much more confident that the choices I made were fueling my body the way I needed to be to have health, vitality, energy-- and bonus, see results. It helped me expand and enjoy being creative with what I eat. On the flip side if you can relate-- learning to retrain my brain to manage the emotions that I used to use food for, as a coping mechanism, has been key-- and so liberating. 
I mean let's be real, we live in a culture that eats for every celebration and emotion-- good and bad. I always tell the girls I mentor, EATING is something you have to do your ENTIRE life-- might as well embrace finding what works for you! 
Point is? Just because you have certain habits now, or have had them in the past, doesn't mean you are powerless in changing them. You just have to find what works for YOU and your well being. 
In 3 days I can totally see how prior to starting this, I was honestly eating enough, but too infrequently some days just because I was B U S Y. Not anymore.✌🏻 I’m curious— do you eat every few hours? #timednutrition •

It’s not something a do for a few weeks to lose a few pounds and then quit. It’s not something I hate doing. I’m not counting points or telling myself I can never eat pizza...and I’m not going to go hungry😂
I eat whole, healthy foods every 2 hours (including carbs okay?!🥖🍝🍚) I follow a rigorous exercise schedule and eat accordingly 🤷🏼‍♀️ they say abs are made in the kitchen, I’ll let ya know 😜

🌞My favorite meal of the day. I love breakfast food so much we served it as dinner at our wedding.

🌞Normally I like to go in the sweet direction; (protein) pancakes, oatmeal with bananas and PB, healthy French toast, etc. But in the program in following I'm required to get a vegetable in that meal if it's the first meal before my workout.

🌞So the last two days I've had turkey sausage with spinach and sweet potato drizzled with 1 tsp EVOO. Which was good but not as filling as it could be.

🌞This morning I had two eggs, quinoa, and filled my veggie witg quota with a tomato, chopped onion, and just a little spinach. For that teaspoon requirement o had 'dessert' of 1 tsp peanut butter.

🌞This breakfast was delicous and supper filling! Highly recommend  trying it.

I doubled my dinner recipe last night so that I could have leftovers for breakfast today! Chicken Sweet potato hash with a fried egg and avocado😍
I’m on the road today so I’m trying the Slow Cook setting on my instant pot for the first time. It is so awesome! You can hit delay start, choose the amount of hours that you want to delay, then set your cook time, then set keep warm. I love it! So much better than my old school crockpot with no settings! I guess I get to retire it finally!🎉

We are boxed and fed food-like substances, provided sugar and sodium in quantities that are astounding, and then fed quick “fix” diet regiments that are short term at best and leave us feeling like somehow we are the failures.

Once we realize we hold the power, the food company conglomerates are in big trouble...and it starts with finding little ways to improve what you are putting in your body.

Like flavored coffee? No sweat. Do it yourself by adding in some stevia, real vanilla, and any dairy or non-dairy creamer of your choice.

And boom.
