While I really like my smoothies and fruit-sweetened desserts, this is what most of my snacks actually look like...just a plate of fruit. Okay fine, I don't typically try to make artistic patterns. Heck, it rarely even finds a plate. But my point is that fruit is such a crazy good snack! And you don't have to do any work...nature handles all the complexities to deliver you an easy-on-the-go, bursting with flavor snack that comes in like a million varieties. Today, I had a Cara Cara (fav citrus!). Ever tried one? It's colored like a grapefruit but much more sweet like a navel (orange).
Growing up, I ate a lot of fruit, but my varieties we're pretty standard... golden delicious apple, navel orange, "red" plum, Bartlett pear, etc. As I dove into the world of plant-based foods (and also started working in a sweet gig at a fruit company) I discovered I was doing fruit such a disservice because a) I wasn't opening my eyes to all the awesome varieties out there and b) I wasn't really eating "with the season" meaning quality was mostly subpar. Once I got straightened out, I developed a whole new realtionship with fruit - one filled with admiration, respect, and excitement. .
So I have a snack challenge for you this week! Try a brand new fruit variety that you've never had before, and make sure you choose something that is in season (like citrus or some pear varieties). There's navels, tons of mandarins, blood oranges, tangelos, satsumas, grapefruit, just to name a few. Let me know what you try!!

Just in case you were wondering, roasted cauliflower can be added to juuuuust about any dang dish! 😜 this Zucchini noodle and Avocado Pesto recipe was made even better by my favorite vegetable as well as some sun-dried tomatoes! 👌🏼 🍅 Tip: Zoodle your zucchini while your cauliflower is roasting and then layer in a bowl with paper towel to soak up the extra water from your zucchini. Then make the pesto before doing a quick sauté of the zoodles and adding it all together! This was really quick and REALLY delicious! 😘

Have you tried my favourite high protein oat pancakes yet?! Here’s the recipe again just incase you missed it last time 💁🏼♀️
* 1 cup greek yoghurt * 1/2 cup traditional oats
* 1/2 cup quick oats (or traditional oats whizzed in a food processor) * 1 tsp baking powder * 1/2 tsp vanilla extract *tsp ground cinnamon * 2 eggs
* Extra yoghurt and berries for serving 🍓
Beat eggs and combine wet ingredients, then add dry ingredients and mix well.
Heat a lightly greased frying pan and drop dollops of mixture into pan.
When edges start to darken, flip and cook until golden. Enjoy!
