•SOMETIMES EVEN I THINK MY BREAKFASTS ARE A LITTLE CRAZY• So I wasn’t entirely sure what I felt like this morning, but opened my fridge and felt my turmeric roasted cauliflower calling 🗣. Next obvious (!) choice was to put it in porridge. Say what??!!! YES I DID. I blitzed it and put it into porridge with some fresh coconut. And I topped it with fresh mango, pomegranate seeds, some of my pineapple chia jam and some of my mum’s homemade peanut butter. It was strangely tasty!!! Not what I was expecting, a bit of an experiment but I think it worked. My husband did look a little sceptical as I mentioned I’d left some for him 😆. I did then leave for work so not entirely sure if he was brave enough to try it...😬 What do you think - one step too far?!!! 🥑🥕🌽🍆🍅🍠

Smoked coconut. 👌👌👌 One of my favorite challenges with cooking with real food is trying to re-create dishes that were originally made with ingredients I don't use (ex: corn, gluten, soy, etc.) At first everything seems a bit more bland or boring, but eventually your brain figures out a way to create different flavors and textures without all the fillers. And your taste buds will adapt too, trust me.

Adapted from Little Bits Of

1 pound grass fed ground beef
2 teaspoons garlic powder
2 teaspoons dried parsley
2 teaspoons dried basil
1 teaspoon paprika
1 teaspoons salt
½ teaspoon pepper
1 (15 oz.) can tomato sauce
4 cups organic chicken broth
2 sweet potatoes, diced
2 cups cauliflower rice
1 tablespoon red wine vinegar
2 cups chopped kale 
Place a large pot over medium high heat. Add in the ground beef and break it up as it begins to cook. Add in the garlic powder, parsley, basil paprika, salt & pepper and stir to combine. Once the meat is browned, add in the tomato sauce and stir again. Then add in the sweet potato, broth, & cauliflower rice. Bring to a boil and then down to a simmer for 20 minutes. Add in red wine vinegar and kale and cook for 5 more minutes or until kale is slightly wilted. Adjust salt and pepper to taste. When hubby and I stared keto, we lowered our kiddos’ carb intake and we also reduced the amount of snacks and treats they have.

A month ago we took it to another level and started giving them a daily cup of vegetable juice.

Last week we took it to yet another level. We started to incorporate more green vegetables in their food. They eat three meals a day and at least one has plenty of vegetables.

As their parents, we don’t want to be the responsible ones for them having bad eating habits in the future. We want them to be able to enjoy the deliciousness of veggies as much as we do.

Like when it’s only one day until the holiday break and you have a bajillion hours of work to do and your family is en route and it’s all pretty much a shitshow 🤦🏽‍♀️ I stay balanced during times of stress by dedicating myself to my priorities (like eating what’s best for me). | SUPERFOOD CHOC ZUCCHINI BREAD | Using my new Beetroot & Cacao Elixir from @scoopwholefoods. Delicious for breakfast, as a snack or at tea time.

To make start by preheating oven to 180C and grating 2 organic zucchinis spreading on a paper towel to absorb excess moisture. Then mix together your dry ingredients: 1 cup teff flour, 1/2 cup almond meal, 1/2 cup LSA, 1/3 cup Beet Cacao Elixir (you can also use organic unsweetened cocoa powder), 1 tsp gf baking powder, 1/2 tsp bi carb soda and 1/2 tsp fine Himalayan salt. In a seperate bowl mash 1 ripe banana, add 2 organic free range eggs, 2/3 cup melted coconut oil, 1 tsp vanilla essence and 1/4 cup maple syrup, mix well. Add wet ingredients to dry and combine, then mix in your zucchini. Pour into lined loaf tin, sprinkle with cacao nibs and place in oven for 45 mins or until skewer comes out clean. Allow to cool and then slice... I didn't wait... I was too excited and it was delicious!! It firmed up once cooled.

I got the faux meat in @tescoirl. I only recently heard about wheat gluten when I was watching a @thehappypear YouTube video🍐🍐🍐
I happened across these frozen beef style strips at the weekend.
They weren't bad...I think they need a good sauce to go with them as they don't have much flavour on their own.
Not vegan as there's egg whites in them....still phasing out the eggs here...🥚🥚🥚
Served with brown rice,this was an easy midweek meal👍

Whipping up some Spaghetti Squash to go with my homemade meatballs and sauce this week and wanted to share!

Cooking spaghetti squash can be kind of a pain and time consuming, but making it in the instant pot was SUPER easy!
.
1. Cut the squash in half
2. Scoop out the seeds and "gook"
3. Place in instant pot with 1 cup of water, and cook on manual for 7 minutes!
4. When done, quick release the valve
5. When removing the squash, pour off any excess water and check for doneness with a fork! If needed, continue cooking for 1-3 more minutes
6. Shred with a fork and enjoy!
