I love eating with the seasons and winter time is peak for pomegranate! Not only is this little red jewel pretty to look at but it’s packed with nutrition. Number one reason I love it is because it’s great for gut health👍🏻 it helps to remove inflammation in the gut and improve digestion so is especially useful to people with Crohn’s disease, ulcerative colitis and IBS.
They also help to maintain effective and healthy blood pressure and circulation, as well as supplying iron to the blood helping those with anemia. Although pomegranate contains fructose they do not elevate blood sugar like other fruits do. In fact they help to maintain blood sugar levels instead. They are a great immunity booster thanks to their high levels of antioxidants and help to remove free radicals and protect cells from damage.

1 cup of pomegranate seeds
1/2 cup raspberries
1 cup of coconut milk
1 tbs chia seed
Blend until smooth and creamy and layer with coconut yogurt and fresh berries 💕💕

Seitan "meatball" pasta 🍝
1.5 cups gluten flour
1/2 cup nutritional yeast
1 can tomatoes (400g)
1 tbsp soy sauce
1 tbsp sriracha
1 tbsp olive oil
Nutmeg, paprika, parsley, basil, salt + pepper
1. Add wet ingredients to dry
2. Form balls, wrap in foil, then steam for 40mins
4. Simmer in napoli sauce (made with another tin of tomatoes, onion, garlic and herbs)
5. Serves 4.
"Meatball" macros - P:43g, C:18g, F:4g per serve (plus your pasta of choice)
CAULIFLOWER AND CASHEW CURRY for dinner, with the addition of some chickpeas. This was sooooo good and both my kids loved it! My 22 month old has never eaten cauliflower, even though it is served regularly, nor chickpeas but tonight..... there she was picking those things out to eat separately. Just goes to show, never stop offering! My son loved this too as he has always been a big fan of curries but he actually managed to eat around the chickpeas 🙄. I have been struggling to get dinner photos as my kids are usually starving, so making them wait to take a photo isn’t really ideal. I decided I would tonight though and here we have one hangry hand sneaking in to grab a bite! This recipe is another one from @lizzieloveshealthy and I simply cannot fault her food! I’m a little bit obsessed! My kids have eaten everything I’ve cooked from her book and website. I have actually put the link to this recipe in my profile if you’re interested. I recommend you do!

The slow cook.... Our little village was pretty as a picture yesterday, covered in a blanket of snow. We got to build 'Eric' the snow bear and had a lovely walk through the fields. This slow cooked bean stew was just the perfect number to serve up in the evening.
Into the slow cooker went a carton of organic red kidney beans, organic black beans, fresh tomatoes, sundried tomatoes, tomatoe puree, hot vegetable stock, a dash of Tabasco and coriander.
Today the school is closed, the perfect opportunity to get some household chores done this morning and an afternoon Christmas movie.

It is hard to beat plump, sweet and juicy cherries picked from you very own trees, now it really feels like summer is here.
I never get tired of this dinner combo: rissoles, salad and home made dressing!
My rissoles never really taste the same because I always use a different spice blend inside them thanks to the spice module inside our healthy cooking school.
And my salads never taste the same as I’m always using a different combo of raw/cooked veggies in them (as advised in our Salad Module)
And I’m always dressing my salads with one of the dozens of dressings we teach you to make inside our Dressing Module.
Most of our dressings, including the mayos, take only minutes to make and they taste better than anything you could ever buy…honestly!
When you master making home made dressings, you’ll never need to buy those chemical laden dressings from the shops ever again. Store bought dressings are made with toxic veggie oils and are full of sugars, thickeners and who knows what else?
