Weekend's here 🎉 Woke up craving chocolate and whipped this little thing up. If you guys have a @t2tea store near you, you have to get red choc mint. Such a nice rooibos tea 🍵 I mixed cocoa powder, maple and soy milk into it to make it extra chocolatey. Never a bad thing! Got a bit of work later and then gym. Today's gonna be a good day 😌

This Chopped Purple Power Salad is from my first cookbook, Superfoods at Every Meal --- and it’s been one of my daughter’s favorites since she was a toddler. It’s overflowing with superfood goodness like kale and quinoa and walnuts and chickpeas and greek yogurt.

2 tbsp sesame oil
1 cup diced, de-stemmed kale
3 cups purple cabbage, shredded and diced
1 cup cooked quinoa
¾ cup coarsely chopped walnuts
¼ cup crumbled goat cheese
For the Dressing:
¼ cup chickpeas, rinsed and drained
1 tbsp soy sauce
2 tbsp honey
1 tbsp plain Greek yogurt
