At the end of the week I often find myself with random ingredients that somehow need to be used up as I hate food waste...
So this week's random lunch was a vegetable wrap 🌯with stir fried sweet potato 🥔 , green pepper, red onions and mushrooms 🍄 with some salt and pepper, smoked paprika, and dried garlic... Added it to a wrap with some cheese and fresh coriander... Et voila, a quick, healthy lunch.

Hoje é o dia de me amar da maneira que sou, já faz um bom tempo em que me virei para a dieta vegetariana, mais virada para a parte vegan. Não vos consigo explicar quanto feliz eu sou hoje. Nunca mais vi uma balança á frente, serio que eu não faço ideia quanto peso, a coisa importante é que me sinta bem na minha ropa e no meu corpo, hoje se vou de férias e engordo um pouco eu volto e trato o meu corpo com amor, percebo que tudo faz parte, temos fazes que comemos mais porque estamos felizes ou relaxados, e depois? A vida continua e quando volto a rotina, volto ao meu corpo ideal. Hoje como com gosto e prazer sem me sentir culpada por nada, e os meus pratos são sempre cheios de cor, sem contar com o facto que me sinto melhor do que alguma vez me senti na minha vida. Hoje sinto me grata por ter encontrado o caminho da minha felicidade! ❤️🙏🏼💫✨ Bom Sabado para todos! Hoje è a minha folga e vou passar o dia todo a relaxar! E vocês o que fazem hoje? 😘
When everything is going a bit topsy-turvy, at least my kitchen still makes sense! Today’s efforts include:
• Hearty beef stew
• Roast veg salad
• Balsamic roasted cabbage
• Ginger asparagus
• Grilled garlic chicken breasts
• Golden sweet potato mash
• White sweet potato mash for tomorrow’s beef pot pie filling

Can you think of a better way to end the week ? This vegan lasagna is really easy to make and super delicious! Usually when i make vegan lasagna i use soy mince for the ragù and i make the white sauce with milk, flour and oil, but this time i wanted to try something new. I made the sauce using Beluga lentils instead of soy mince. The bechamel is made with veggie stock instead of milk, and came out great. And finally i had a lonely and sad eggplant that was sitting in the fridge that i need to use up so i sliced It and cooked it in the oven till tender and put that as well between the layers. And did i mentioned that is all gluten free?! The classic version is still my favourite because is really close in taste to the original lasagna that i used to make BUT this was really good too! This Mornings breakfast soup is Lablabi (Tunisian Breakfast Chickpea Soup)
A quick and easy vegetarian Tunisian chickpea soup flavored with onion, cumin, garlic, and lemon juice.
Also you can add
A drizzle of high-quality extra-virgin olive oil (or a citrus-spiked olive oil)
Cooked diced carrot mixed in
A spoonful of thick yogurt on top
A sprinkling of capers on top
A spoonful or two of cooked brown basmati rice or couscous stirred in
Chopped, pitted olives on top—or a bowl of assorted olives on the side
Crisp, cold radishes on the side—whole or sliced
Chopped or slivered Marcona almonds
Sliced ripe tomatoes on the side
A poached or fried egg added to each serving
Miso paste and Nori flakes.

Just made laksa from scratch. Wow. That was good ! When I met my husband 7 years ago he literally lived on instant noodles and fried chicken 😷 Slowly but surely he grew to love my healthy veg food ! I love trying to create healthy versions of some of his fave take away dishes. Today was a big win. This was completely free from any baddies commonly found in Asian fast food (e.g. msg, preservatives, palm oil) and still tasted absolutely banging 🌿
