With the festive season over, things are slowly getting back to normal. Our trip to Hawaii was phenomenal, especially our Tubing and Parasailing adventures that were so much fun! And who can forget all those gluten free products that my daughter and I went crazy over! The disadvantage to that was that we snacked ALL THE TIME and put on a couple of kilos so this GREEN JUICE is my New Years Health Blend for 2018. It came at the right time as I have signed up for an Instagram Photography Challenge with @thelittleplantation and the first challenge is a Green Drink! Look out, Ottolenghi- I’ve invented a recipe: go away from your garden for 7 day’s in summer, come home to discover a crop of ripe-to-bursting cherry tomatoes. Pick them gingerly, taking care not to detonate the pip bomb mechanism within. Carefully cut them in half with a very very sharp knife and then squash them juicy-side down into some toasted and slathered with salty butter Burgen bread. Salt, pepper...Summer delish! (This isn’t just tomatoes on toast btw because the tomatoes have to be home-grown, over-ripe ON the plant so they are full of sunshine, and still sun-warm. Okay, maybe not a very nice or attractive picture to look at, but for the people with compost heaps and barrels this should be somewhat attractive. Because my rhubarb already shows the first buds, I thought I would spoil them first with some compost. When I opened the hatch of the barrel I found this beautiful earth richly filled with teeming worms!! Is that beautiful or is that beautiful? #compost

I’m spending the day party planning for a certain someone’s first birthday party. It’s one of those parties I’ve been planning for about, oh I don’t know, five years 🙈😂 Now that it’s here and I’ve spent nearly a year doing this mum thing, my Pinterest board gives me heart palpitations and I feel like the pre-2017 me was a mad woman. I’ve decided to scrap it all and adopt a simple approach. .

Secondly there is Lia @lialemonandvanilla how made not one but two gorgeous recreations of #veganin7 Firstly the green quinoa bowls with grilled lemon and then the green pea soup with roasted radishes which she also topped with the crunchy cashews!! So good looking! I have been busy today mealprepping! 💫 My goal this year is to get better at it so today i gave it a try. I dont really like to actually prep my exact meals for the week but rather some toppings, sauces, snacks and such. So today I prepped this carrot soup from the blog, nut butter & chia pudding for breakfast, grilled vegetables for dinner bowls, no-knead dough for whole-wheat buns, a new batch of kombucha and currently blending a roasted red pepper and cashew sauce for dinner (pasta!). I am gonna say succes! My tiny kitchen has exploded a bit though so that is next... I would have taken a photo of all the meal prep but time flew by and Denmark is dark again 🤷♀️ Next time!

The Wolf gifted me 1.5 hours of nap time yesterday so I made these bad boys. Rosewater and pistachio shortbread fingers (albeit rather large sausage fingers). Great for dunking as you don’t lose half your morsel in your tea. Also, if anyone has a lovely pear cake recipe, please tag this gal. 🙏
It's about time to make these Gingerdoodle cookies again. These are Jasmine's favorite cookie. They are a hybrid (gingersnap/snicker doodle) that we made for our dog club bake sale last year which amused her to no end b/c of the hybrid dogs in our club! -~- They really are a treat though. Sweet and spicy gingersnaps with a cinnamon sugar crunch ❤️🍪
A Sunday trip to the Farmers’ Market yielded the most beautiful cherry tomatoes and basil from a chap called The Lettuce Man. He gifted me so much basil on hearing my plans for his produce on the condition that I show him the photos. This tomato, ricotta and pesto tart recipe is from @coniferesetfeuillus and I must confess I got a little teary reading the story behind it. .
Hands down the best savoury tart I’ve had in a long, long time. I loved the fresh ingredients and simplicity and they were a real hit with family and friends. Definitely one to save in my recipe notebook. @switchedau you’ll love this one.
Tecnicolour salad to brighten up this grey and miserable day 🙌 The little one fell asleep on the way home from playgroup. I’m surely going to pay for it this afternoon, but for now there is this for lunch and peace & quiet. If you haven’t tried avocado and pink grapefruit toghether do it - it’s sensational! Also spinach, fennel, smoked mackrel, some pickled red onion that was knocking about in the fridge and a bit of poppy seed on top. 👍

When I live in sync or is that #nsync 😆... I feel nourished. When I'm nourished I'm energised. When I'm energised I feel connected and when I feel connected life feels easy. #knockon .

The one thing I love more than developing recipes for the ferments is developing recipes for USING the ferments. I love seeing and tasting how they come alive. ~
Have you ever tried a chia fresca before? It’s the perfect way to incorporate chia into your diet. Soaking them allows them to absorb liquid BEFORE entering your digestive system, creating a smooth flow of movement. Eating them dry (without compensating with enough fluid) can cause constipation, as they absorb the available liquid from inside your digestive tract, resulting in too much ‘bulk’. ~
They mix very well with Kefir (boosting it’s nutritional profile even further). All you need to do is...
- Stir 1tbsp chia into 250ml water Kefir.
- Whisk well to avoid clumps forming. - Leave for a couple of hours, even better, overnight.

Broccoli and lemons from my #garden ; oranges and clementines from @agrumecountryhouse, the stunning country of my friend @maggylor; cauliflower from the farmer (waiting mine are ready. The first harvest is over). Colors and #winter flavors. Every season offers us what we need. In this case, vitamin C to deal with seasonal illnesses. And everything needs time to grow properly and healthy.
