Well the time has come. #eatpreplive might just be getting into the #veganmealprep. Since we never use dairy or any processed foods, it was a relatively simple addition. While I personally feel that eating a diverse omnivore diet helps to cover all the nutritional bases, going vegan at least may help some of you sleep better at night. CHOCOLATE CHICKPEA PUDDING. a healthy, nutritious, chocolate pudding 🙌 and I wouldn't share something that didn't taste good so believe me. it is deeeeeelicious 😊

In a food processor blend:
• 1 can 400g (microwaved for 2 mins first then drained) chickpeas
• 3 tbsp maple syrup
• 3 tbsp cacao powder
• 1 tbsp choc hazelnut spread
• 1 tbsp chia seeds
• 2 tbsp water

leave in the fridge minimum 30 minutes to thicken up 👌

💥 First, let’s talk what not to eat. It probably doesn’t make sense to drink high-sugar drinks like Coke any time during the day because liquid, sugary calories add up REAL quick. And while Chex™ Mix isn’t a bad option, it’s just high in calories relative to the amount you’d want to eat to keep you full. And a Snickers bar, while nice every now and then, is far from nutritious and full of sugar (while containing almost 0 protein).

🖐🏼 On the other hand, the berries, Bai and Quest Bar are a great choice, because the principles behind their selection are great for an afternoon snack. What are they? Well, let’s find out:

1️⃣ Protein and fiber to keep you full
2️⃣ Fruits (and veggies) for micronutrients and deliciousness
3️⃣ Low-ish fat (so you can save your remaining fat calories for dinner/later in the day)
4️⃣ Low-ish calorie (depending on your daily targets, this should be adjusted)

🤔 Make sense? Good! Now, the other thing to note here is that maybe you don’t have an extra 200 calories to spare on the Quest Bar. If that’s the case, just eat half of one. Good morning life. 🙏 Just came back from a whirlwind wedding weekend in NY. Are you wondering what I ate at a wedding where food was both abundant and enticing but not organic nor sustainable? 😳 
It is gratefully so much easier now than it was when we just started our organic journey. 👏🏻👏🏻 My husband, the most thoughtful man on earth, immediately located the Whole Foods (without my asking), and while I got ready for the wedding he brought me a green juice and something to eat. 🌟At the wedding, it was easy to avoid the apps b/c we weren't starving. We both ordered the vegetarian meal, b/c it is usually the safest bet. I ate whatever was on the Clean 15 from the entree, and he ate whatever he enjoyed. When it came to dessert, my husband opted to try a few spoonfuls, and I had a few tiny bites of his, but preferred to hold out for the organic dark chocolate back at the room. In the city, we met friends happily at Vegan or higher-end restaurants b/c they tend to have organic or local, sustainable options. 👏🏻👏🏻👏🏻🌟🌟🌟🌟🌟
As our family approaches our 6th year on our journey to organic, I truly no longer feel any obligation to eat foods that do not serve my health nor do I feel deprived in anyway if I avoid them. It doesn't mean I will never try something but as long as I have options, I will be grateful for them. ............

Welp, Monday again. ☕️ Back at it here with a fresh rack of zucchini donuts. 🍩H YES. Made another batch of these over the weekend but this time topped them with white chocolate maple icing. 😋 Ran out of chocolate chips. 🤷‍♀️ But it seems like one of those happy accidents because the white icing does look pretty nice on top of the chocolatey donuts and tastes super yummy too. 😍 If you haven’t tried these healthified donuts yet, I’m tellin’ ya. What do you get when you make a HUGE batch of almond milk and end up with tons and tons of almond pulp? Do you throw it away (like I did the first time?) 😂.... NO!! You squeeze all of the liquid out, add a bunch of spices and make yourself some fresh vegan cheese. 
At first, I was going to turn this into almond yoghurt.... but the more I squeezed the water out, the more I realised that this was starting to look like cottage cheese. So I added a teaspoon of garlic powder, 2 teaspoons of himalayan pink salt, a 1/4 tsp of ground black pepper, a pinch of dried basil, a pinch of dried oregano and a tsp of EVOO. Guys, this really topped my expectations. I was expecting a dollop of tasteless whiteness that vegan people convince themselves tastes like the real deal. But it was SO GOOD. The fact that I had the courage to add it to my avocado toast (I don’t believe in fancying up avo toast at all) speaks for itself. 💥🍞🥑🍴

Hard work pays off 💪🏼💪🏼Sometimes you have to remind yourself of just how far you've come 😆The photo on the right was a few years ago, I wasn't unhappy but I didn't feel confident in myself & I felt weak. I was a healthy weight but all I did was cardio & I ate a lot of salad & tracked everything I ate! I was fearful of eating carbs & I didn't understand nutrient timing with regards to exercise 😓 The photo on the left is me 4kg heavier, leaner, stronger & more confident (plus loving carbs!) 💪🏼✨ The biggest few things I've learnt on my journey are below: - The scales don't matter when you're doing weight. Muscle weighs more then fat so ladies throw those scales away & focus on how your body feels, focus on how your clothes fit & take progress pics to remind you of where you started 👌🏼
- Restrictive diets can lead to overeating +/- binge eating in the long term. Practise mindful eating & listen to what your body & soul needs. Your body might need healthy whole foods regularly but occasionally your mind needs a piece of chocolate or a glass of wine 🥂
- Find people who love doing what you do. People to motivate & inspire you! You inner circle should lift you up - not bring you down. Shoutout to my crew @nickyward86 @__niamhbb @tbassle @dtpitt ✨
- Don't be too hard on yourself. We're all human & bugger up occasionally. Welcome to the club, there's like 10 billion of us 😂 Just pick yourself up & get straight back on track the next meal (not the next Monday!)
- Women WILL NOT GET BULKY from lifting weights! Thanks @tbassle for teaching me this! When I first started my journey many years ago - I couldn't even do a push up on my knees! I had to do them in the squat rack standing first 🙊💪🏼
- The last piece of advice I'll leave you with is BALANCE! Life is meant to be lived! You can't expect results if you eat healthy & train mon-thurs then chest fri-sun but on the other hand it's not healthy to train 7 days a week & diet consistently. Hard work pays off 💪🏼💪🏼Sometimes you have to remind yourself of just how far you've come 😆The photo on the right was a few years ago, I wasn't unhappy but I didn't feel confident in myself & I felt weak. I was a healthy weight but all I did was cardio & I ate a lot of salad & tracked everything I ate! I was fearful of eating carbs & I didn't understand nutrient timing with regards to exercise 😓 The photo on the left is me 4kg heavier, leaner, stronger & more confident (plus loving carbs!) 💪🏼✨ The biggest few things I've learnt on my journey are below: - The scales don't matter when you're doing weight. Muscle weighs more then fat so ladies throw those scales away & focus on how your body feels, focus on how your clothes fit & take progress pics to remind you of where you started 👌🏼 - Restrictive diets can lead to overeating +/- binge eating in the long term. Practise mindful eating & listen to what your body & soul needs. Your body might need healthy whole foods regularly but occasionally your mind needs a piece of chocolate or a glass of wine 🥂 - Find people who love doing what you do. People to motivate & inspire you! You inner circle should lift you up - not bring you down. Shoutout to my crew @nickyward86 @__niamhbb @tbassle @dtpitt ✨ - Don't be too hard on yourself. We're all human & bugger up occasionally. Welcome to the club, there's like 10 billion of us 😂 Just pick yourself up & get straight back on track the next meal (not the next Monday!) - Women WILL NOT GET BULKY from lifting weights! Thanks @tbassle for teaching me this! When I first started my journey many years ago - I couldn't even do a push up on my knees! I had to do them in the squat rack standing first 🙊💪🏼 - The last piece of advice I'll leave you with is BALANCE! Life is meant to be lived! You can't expect results if you eat healthy & train mon-thurs then chest fri-sun but on the other hand it's not healthy to train 7 days a week & diet consistently. Something about 4pm...not sure if I need a nap, coffee, or chocolate! Lately I’ve laid off caffeine in the afternoon, and switched up for more protein in my snacks. This is full fat cottage cheese, a few semi sweets chocolate chips, pecans, raisins, and a sprinkle of cinnamon. It’s delicious, takes care of the sweet tooth urge, and powers me thru until dinner!

A lot  of the time, my clients can't understand why they can't meet their weight loss goals but this picture demonstrates that even I as a dietitian can easily over estimate my portion sizes using very similar products 🤷🏼‍♀️ If you're trying to lose weight, I recommend weighing or measuring your portions for a day or two to see how much you may 'overestimate' without even realising 🙊 Both these breakfast bowls are very similar in taste & nutritional composition but the energy density is very different:

😍 Today we’re talking about one of my biggest sweet tooth foods... ice cream!!! Don’t you just LOVE ❤️ ice cream? I sure as hell do! I mean, it’s basically perfect. Don’t you think? 🤤 Anyways, if you’re dieting you might think you need to avoid ice cream like the plague. Well, not so fast!

🍨 Like most of the things in your life, moderation really is one piece to the puzzle. Not always, but often. Same goes for ice cream.

🤔 Now, with that being said, there are different types of ice cream with different amounts of calories, which is really important when you’re goal is fat loss. Take Halo Top for example... the mint chip has just 240 calories for the ENTIRE PINT, whereas the Ben & Jerry’s has 1,120 calories in the entire pint.

✏️ The point is this... you have a choice! You always do! 😄 And this choice is: with 240 calories you can eat an entire pint of Halo Top (sooo delicious, btw) or you can eat 1/4 a pint of Ben & Jerry’s (also delicious). Same principle applies for the Breyer’s and Graeters example.

👀 Also, please understand that at different stages of your life (👩🏻 to 👵🏼), and as fitness goals change (🏃🏻‍♀️ to 🏋🏻‍♀️), the choices you make will also change, and matter more, or less.

📆 Some days, you’ll eat and entire pint of B&J’s, and that’ll be ok! Others, you’ll have one bite of Halo Top and be done with it. That’ll also be ok! What matters is understanding the time and place for certain foods, and how each food choice impacts your goals.

D-2! I was so shocked with how my body felt today! I know it has only been two days, but I already felt lighter and better. In the morning, I ate a smoothie: -Almond milk
-Cacao nibs
-Oat flakes
-1 banana

And a grapefruit.

The smoothie felt great in my stomach and was a great way to start my day. Then for lunch, I ate sweet potato fries which were seasoned like this: -Garlic powder
-Roasted pepper powder
-Salt and pepper
-Olive oil

I was never great at cooking, so it was a challenge but still was fun. In the middle of the meals, I ate hummus with a variety of vegetables. 
Tomorrow I think I'll go get my BMI checked just to compare my before and after being vegan for a month...

🍔 We all love grilled cheese, right? I know I do! And while it’s not a terrible option (depending on bread and cheese selections) it’s also not the most calorie friendly entree when you hit up Panera. One grilled cheese sandwich and a bag of chips is 790 calories and almost 100 carbs. That’s a potential hurdle when your on a fat loss plan.

🍕 On the other hand, an entire BBQ chicken flatbread and 1 cup of chicken noodle soup from Panera clocks in under 500 calories, with a really great distribution of macros for fast food: 22g Protein, 54g Carbs and 19g Fat. It’s also hella delicious!! Mmmm!

✏️ What’s my point? Well, as always, I just want you to be consciously aware of the food decisions you make. And to realize than when dieting, it’s important to look at all the menu options so you can make a decision that best fits your goals, values, favorite tastes and cravings.

➡️ PS. Watch out for liquid calories from lemonade, smoothies and soda. While not included in my graphic, it’s important to consider each “drink” other than water, unsweet tea or zero-cal soda is 100+ cals.

And while I’ve not had the real deal in several years, I think this is pretty darn close!

I simply took a @josephspitabread Honey Wheat Flatbread, sprinkled it with cinnamon and ‘sugar’ (I used erythritol in place of sugar), filled it with some no sugar added apple pie filling that I spiced up with more cinnamon, clove, nutmeg, vanilla...
.
Fold it sorta like a burrito, cut some steam vents up top and bake at 400° for ~35 minuets...

The crust feels buttery and flaky like pastry dough, the filling is every bit as sweet as you’d want with those beautiful aromatic spices wafting through the home.... it’s a wonderful thing, folks.. try it out!
