Potatoes are so versatile, they are delicious with guacamole, garlicky hummus, cashew based oniony-cheezy dip, ketchup, or even by themselves!😋 This meal had so many flavors that I'm drooling just thinking about them.👅 I had cucumber noodles coated with fresh kale-basil pesto, sitting on top of green leaf lettuce. Also had onions, radishes, cherry tomatoes, & oil-free baked fries drizzled with lemon-tahini sauce.
Kids wanted kale-basil pesto, so I made pesto. I wanted potato fries, so those were made as well. Combined the two & it was aMaZing!!👌 Fries topped with pesto? Heck ya! It’s worth a try guys. Hope you have a beautiful day!💖
I'm always shocked by how many people don't eat breakfast!! Breakfast is one of the most important meals of the day. A solid healthy breakfast is one of the best ways to get a great energy boost to start the day!! Sweet potato pancakes with a little plain Greek yogurt, fruit, sunflower seeds, teaspoon of natural peanut butter and a drizzle of honey is how I am getting this hump day started!!
