This is the third time I’ve tried to post this. I keep getting g distracted by life. I find that when I’m in the kitchen creating I am at peace. It’s a form of meditation for me. Since some parts of life are shit right now I was able to assemble this potato crusted quiche for us for brunch and escape for a bit. I lined a pie plate with sliced potatoes and prebaked that before adding a mixture of tofu, @followyourheart eggs, some veggies I preroasted (mushrooms, red pepper, jalapeños, potatoes, and kale). I seasoned it all with turmeric, curry, cumin, salt, and pepper. Topped it with more crispy kale, sriracha, and green onion. Peace friends 🍴💚🌱

Enjoying the Festival of the Holidays at Epcot in @waltdisneyworld. This carbonara in Italy was delicious and of course, I had to get a glass of chianti 🍷
