Avocado rose, beet hummus, yellow cherry tomatoes, and microgreens, on toast. I never get tired of making avocado roses -- it is a fun challenge every time -- though not always the easiest to eat! 😄

Boo took me out to dinner tonight to @chivekitchen and we definitely ATE GOOD! I absolutely LOVE that my man will eat Vegan food and will try any Vegan restaurant I ask him to try with me! He is thee sweetest guy ever!
We had Potato Skins and Lentil Tostada for appetizers. They were both so damn delicious! The Potato Skins had mashed potato on top with chunks of potato underneath! Lord it was so good! It had other yummy stuff on it but don’t know what it was lol
For our main courses, I had a Jalapeño Burger with Avocado, fried Onions and Vegan Cheese on it. VERY good! Boo had Chicken Marsala (Not “Chicken”, but Seitan), mashed potatoes with veggies. Y’all, his Seitan was B O M B!!!! I was eating more of his food than my own to the point where we just switched plates because he was actually loving my burger more! I ❤️ that man! Who else would actually switch plates with their mates? 🙋🏼♀️😆 LOL
Very full thanks to @chivekitchen! Now going home to have drinks with my love (He used to be a bartender so he makes AMAZING drinks!) ❤️
Our annual Christmas breakfast Michelle and I have with our families was this morning at @eatmarketplace in Old Town Temecula.
I ordered the Vegan Huevos and she got a Vegan Tofu sandwich (I can't remember the name right now) and they were both so stinking good. 🤤 If you haven't tried E.A.T. yet we recommend you do.

Arrugula, baked butternut squash, evoo, garbanzo beans, pomegranate seeds, avocado, sprinkling of dukkah, fresh garden herbs, caramelized balsamic vinegar dressing.
Some of our most cherished memories are centered around food and the holidays. And as millions of people around the world prepare their menus, they fail to acknowledge that PIGS, one of the most innocent and intelligent creatures of the animal kingdom, have been reduced to nothing more than a Christmas ham.
It is estimated that in the United States alone, we kill 115 million pigs for food each year. A typical slaughterhouse can kill up to 1,100 pigs every hour...EVERY HOUR!
From the moment these intelligent animals are born, it is nothing but a life of physical and psychological torture. Mother pigs (sows) spend their entire existence in tiny gestation and farrowing crates so small they are unable to ever turn around. They are repeatedly impregnated to produce litter after litter until their bodies are considered spent, and ultimately slaughtered for cheap meat.
At only a few weeks old, piglets are torn away from their mothers and through standard practice, have their teeth and tails cut off with pliers to reduce flesh damage; male piglets are castrated, all without anesthesia. Pigs are then forced to live in extreme confinement, in filthy, disease ridden concrete pens until they reach the tender age of 6 MONTHS, at which point they are considered old enough to be killed for food.
Pigs are electrically prodded and crammed into trucks, and transported to their death in extreme weather, while being denied food and water. Approximately 1 million pigs die before ever making it to the slaughterhouse.
The lives of these smart, clever and sensitive individuals are stolen from them so violently, day in and day out. How could anyone want to rejoice and celebrate a holiday while consuming such violence?
They are NOT a Christmas ham.

After a busy Saturday day shift I love nothing more than unwinding by listening to a podcast, cracking open a bottle of red and cooking something bold and comforting.
This roasted tomato, orange & almonds with brown rice from (yeah you guessed it) Hugh’s new cookbook seemed the perfect fit.
Roasted oranges are fucking dope and the idea of pairing it with sweet, roasted tomatoes got me very excited. The contrast between the sharpness of the oranges, the irresistible sweetness of the cherry tomatoes and then the earthiness of the almonds was a bloody delight.

One of my favorite things about living in Europe is getting to eat seasonally, and when winter comes, you know mushrooms will be on the menu! It wasn’t until becoming vegan I learned about how many different kinds of mushrooms there are, and I’ve only just scratched the surface! 🍄 🍄 🍄
