On the grilled nectarine again, can't seem to leave this gorgeous little beast alone! This time in a salad with some Feta cheese, fine beans, Rocket and Red Amaranth. I know I've said this a lot lately, but I just can't get enough of fresh fruit in salads it really brings them to life...... Just may be I'm clinging on to the last little bit of summer😉.

Naturally protein-packed and full of heart-healthy omega-3 fatty acids, salmon is one of my go-to week night dinners. I enjoy eating it grilled, pan-seared and of course roasted. Serve with vegetables or rice and dinner is done.
-2 pounds salmon
-1/3 cup honey
-1 teaspoon lemon zest -3 cloves garlic, grated
-2 teaspoons fresh thyme
-1/4 teaspoon black pepper
-1/2 teaspoon salt
-1/4 cup fresh lemon juice
-Lemon wedges, for serving
1) Preheat oven to 425 degrees (F). Line a large baking sheet with parchment paper
2) Place the salmon fillets in a large bowl, set aside. In a separate bowl whisk together all ingredients.
3) Pour this sauce over the salmon fillets and place on prepared baking sheet.
4) Bake for 13-15 minutes, or until salmon is cooked to your liking.

One of the things when your eating becomes disordered and you gain a lot of weight (in my case) is that you stop listening to your body. I have no clue when I am really hungry and am just learning how certain foods make me feel. So, I ate a slice of toast last night and two this morning and I can feel that my stomach feels uncomfortable and bloated. I know I have a real issue with bingeing on white carbs and now I'm realising how awful they make me feel.
So excited because I started holidays this week and just got back from skiing yesterday 🙌🏽🙌🏽 I had so much fun ⛷🎿 super pumped for the rest of the holidays and for more brekkies like this bowl of porridge 😋😋
