Today is my 1st day off of work {where I have no scheduled meetings, conferences or travel plans} and I’m 1000% in LOVE.

I got my butt out of bed and taught a 6am class, walked the dogs in 15degree weather {woof😳}, made a large pot {or rather @the_chemex} of coffee all for me and threw together this killer breakfast ALL at my own sweet ass pace.

Now I’m headed to the grocery store because 1) I haven’t bought anything I need to make for family dinner tomorrow and 2) I have a LOT of recipe creation and food photography to get done on my {day off}!

I love to snack & sometimes I find myself stuck for a yummy nutritious snack that doesn't cost an arm & a leg! Buying a packet of kale crisps can be pretty heavy on the coins aka expensive so why not buy yourself some beetroot & a parnsip or two, slice them up, season with salt, pepper, chilli powder, olive oil and bake them yourself! Adding a little mouth watering flavor to this ‘Spicy Cranberry Dip’ , which can be served with tofu, crackers, chicken, turkey or even shrimp (picture doesn’t do any justice but it tastes so good, I had to share with you all) recipe 👇🏽👇🏽

Ingredients:
2 cups of Cranberries (fresh or frozen)
2/3 cup of Agave nectar (or 1 cup of Sugar)
2/3 cups of Chili Sauce
2 tbsp of Horseradish
2 tbsp of Red Wine
.
Cook the cranberries with Agave Nectar (or Sugar) until the cranberries pop and the desired consistency is reached. Remind from the heat and cool. Add the remaining ingredients to the cranberry sauce, combine well and chill. Ready to the served😁☺️

Dinner tonight - channa saag or chickpeas with greens, brown rice with ajwain (carom), yogurt with moringa powder and some crunchy pudina (mint) chips to round it all off. The chickpeas were boiled with a bit of black tea and tumeric ( an old grandmother's trick) and stewed with tomatoes, sweet onions and baby spinach. Pure comfort food at it's desi finest 💚♥️

6 oz blackberries, halved or quartered
3 T aged balsamic vinegar

A negative mind will never give you a positive life. 
Switch your mindset to stop focusing on the negatives like: “oh I can’t handle the holidays... the in-laws, all the food, parties, traveling, never having me time, I can't seem to stick to my workouts, I fell off the wagon again. I'll start over on Monday. I just can't do this…” Intentionally practice switching your thoughts to focus on all the good, the fun and the joy in your life! 😊

Here is what we want you to do: 
1. Write down 3-5 things that you struggle with during the holidays. 
2. Now rewrite those as positive things. 
For example: “I never stick to my workout plan.” Now say: “I am becoming more consistent with my workouts. Taking care of myself is so fun and easy.” Throw away the negative list and only look at the positives. 
Look at them every day!📝 Once you got a handle on your thoughts here are other tips for handling stress. 
We know many struggle with their weight this time of year, and we are here to remind you that when you are highly stressed it raises your cortisol making it hard to lose weight. So it's really important to focus on having more fun and ease in your life. - Go for a walk to clear your mind.
- Talk it out with a friend or coach
- Journal or Meditate, even for just a few minutes
- Diffuse some essential oils to lift your mood like lavender, frankincense, cinnamon, and peppermint - Giving - help someone else! It will make you will feel better instantly. - And just eat the damn cookies and move on. You will be okay.

A few days ago @diegorcenteno
described the breakfast he had to me in detail - I felt it was just a little cruel right before my training session 🤤 😌. After a busy few days I finally got round to making something similar for hubs and kids for their afternoon snack: Red velvet pancakes with chocolate fudge sauce and a blob of white stuff on the top (how it as described to me 🙄). I used plain Greek yoghurt to tone down the sweetness, give some tartness, and add some protein.  This had the approval of even the pickiest of the clan - phew!

Red velvet pancakes: Thoroughly mix 15g x dessicated coconut flakes, 20g x milled flax, 20g x whole chia, 30g x tapioca flour, 65g x almond meal, 1.5 teaspoons x baking powder, and 1 tablespoon x cacao powder.  Blend until smooth 1 cooked beetroot with around 50ml x plain Greek yoghurt and 50ml x coconut milk, then whisk with 3 whole eggs, 1.5 tablespoons x coconut oil (or melted butter or olive oil), 1.5 tablespoons x vanilla extract, and 50g x honey.  Fold the wet ingredients into the dry ingredients and cook the pancakes.

Chocolate fudge sauce: Blend 5 soaked dates with about 1 cup x coconut cream, 2 tablespoons x cacao powder, and 1/4 teaspoon x Himalayan salt.  Cook on medium heat (without simmering) and stir in 1-2 squares (chopped) of 85% Lindt dark chocolate until melted.  Leave to cool before serving.

[Panquecas 🙌] Folguinha a meio da semana = dormir até tarde 😴 e tomar o pequeno almoço a horas indecentes. Finalmente voltei a fazer panquecas, que saudades! E logo as minhas preferidas, de beterraba 💕 
Receita: 100gr de claras • 30gr de aveia de baunilha ♡ 50gr de beterraba ♡ 1 colher de café de psyllium husk ➡ Triturar tudo e cozinhar as panquecas! 
Tip: Adoro estas panquecas frias por isso faço-as na véspera, ficam ainda melhores!
