Chocolate Peanut Butter Fudge Overnight Oats 💁🏻Waking up at 4:15am 3x per week has made breakfast on the go a must! This looks and tastes like dessert, but it's surprisingly healthy! Banana and pumpkin not only provide sweetness, but helps these overnight oats achieve a fudgy/pudding-like texture. 💁🏻You know that pumpkins are for more than carving right?! The gourd is a natural appetite suppressant and fat-burner with more fiber and protein than sugar, and it’s incredibly versatile in recipes.
If you have a stomach you will appreciate this: porcini truffle creamy cheesy lasagna goodness. I'm lactose intolerant but I tolerated this bad boy. Our adventures took us to Orvieto in Umbria yesterday. Using TripAdvisor, we were able to scroll through a hoist of restaurants (including a few I had already saved to "my trips") and decided on Trattoria del Moro Aronne based on the overwhelming reviews. Salsa Verde 💃🏻. Thank you @crgardening for supplying me with a great crop of tomatillos! 😁This was my first time making salsa verde the traditional way and I am in ❤️! Though this outrageously delicious cooked salsa is meant to be a condiment, I could have eaten it by the spoonful ... wait... I did do that 🥄 😂. Honestly, this is serious yums and so easy to make! All you do is throw in a pot with enough salted water to just cover these ingredients: 4 dehusked tomatillos, 4 cloves of garlic, 1 quartered medium white onion and two jalapeños sliced in half (1 if you want mild heat) and let it all simmer for 20 mins (see photo video two), next plop the whole thing in a blender with a couple of sprigs of cilantro and blend for 10 - 20 seconds. Then add to a skillet that has 2 tablespoons of heated cooking oil. Simmer that for 20 mins to cook down and develop the flavors (see third picture video). That's it!!! Mixed green Salad with roasted hominy, carrots & cilantro-scallion vinaigrette 💁🏻Hominy looks like an enlarged corn kernel, or even a corn-nut, but has the taste and texture similar to masa. It's super delish IMO! 😋
Hominy is made by soaking certain types of corn (usually a field corn, not the sweet corn we eat on the cob) in an alkaline solution in a process called nixtamalization.
Not only is this not harmful, but it actually improves the nutritional value of the grain, by making the B vitamins more available + adds a substantial amount of calcium.
Green beans, tomatoes, olives & capers, greens tossed with roasted red pepper vinaigrette 💁🏻Tuna is an excellent source of docosahexaenoic acid, a type of omega-3 fat found in oily fish that can down-regulate fat genes in the abdomen, preventing belly fat cells from growing larger 🙌🏼🐟
