My new favourite breakfast recipe is here: a raw blueberry buckwheat porridge (the recipe below). This porridge has lots of fiber and antioxidants, and is very filling. The recipe makes two servings (or one large if you're really hungry in the morning like me), so you'll get breakfast for two days with the same effort (handy, isn't it?). Top with your favourite nuts (walnuts suit particularly well), seeds, cacao nibs, pitted and chopped dates, or fresh berries, and enjoy! Have a great start for your week! 😊

Ingredients
150 grams of blueberries
1/2 cup of buckwheat groats (I used ones by @gogreennordic )
1/2 frozen banana
1/2 cup of coconut milk (full fat version)
1/2 cup of water
1 tbs psyllium fiber
(Green powder; I used the one by @foodin )
(1-2 dates if you like it sweeter)

Instructions

The night before, thoroughly rinse the buckwheat groats according to package directions, then soak them in a large bowl or jar overnight.

In the morning, rinse the buckwheat groats with cold water, then add all of the ingredients into a high-speed blender or food processor, and blend until smooth. Pour the porridge into two bowls or jars, add the toppings, and enjoy! Store the porridge in a fridge if you make it in advance.

I got the veggie burger at @aldiusa topped with @violifeamerica province and hot pepper cheese and then throw some oil free roasted veggies on top of rice with some @traderjoes Carolina gold bbq sauce. Serves: 1-2

So fast, easy and delicious! Silken tofu is super healthy, full of protein and other goodies as well as making a very creamy scramble. We give you the basic recipe, which is great in itself but feel free to improvise; see our optional extras suggestions in the ingredients section. 
Look out for brands like Blue Dragon, Morinaga, Yutaka, Clearspring and Morinu, all in tetrapacks. Fresh silken tofu is made by Taifun and Oriental stores usually sell a range of fresh and tetrapacks. Pulmuone brand is a fresh tofu range that is very good

Ingredients: 
1 tsp vegetable oil
1 clove garlic (peeled and crushed) OR ½ -1 tsp garlic puree
½ packet of firm silken tofu (approximately 175g) 
1 tsp tahini
1 tbsp tamari (GF) or shoyu
1 tbsp nutritional yeast flakes
½ tsp turmeric
OPTIONAL EXTRAS: eg sliced avocado; sliced tomato; lightly cooked cherry tomatoes, super sprouts, chopped peppers or chilli; rocket or kale... ALL KITTED OUT
Small knife and garlic crusher; medium saucepan; scissors; measuring spoons; cooking spoon
Method: 
Gently fry the garlic in the oil for about 30 seconds until lightly golden. Don't let it burn. 
Add the all other ingredients and mix together. Try not to break the tofu up too much but make sure it’s well stirred.
Heat to warm through for approximately 3-5 minutes and serve immediately.

Finally got my hands on a jar of @forty__thieves Salted Macadamia with maple and vanilla bean. Absolutely delicious! It’s been hard to resist eating it straight out of the jar, to be fair! This week is National Nutrition Week and a perfect reminder to increase our veggie intake. While I usually try to get in around 5+ servings of veg per day on the regular, I am making a more concerted effort this week. I love trying to find sneaky ways to add in more veggies into my regular dishes. Here I have chilli con carne (with extra extra chillies), that I grate some carrot into, as well as adding in chopped capsicum, onion, corn, tomatoes and a bit of avocado (technically a fruit, but you need that in your life too). No sacrifice on taste and choke-full of all the good things.

Does your little peep love strawberries? My boys love them! They are a fabulous snack for kids as they are nutrient rich (vitamin c, folate, potassium as well as a ton of antioxidants!) and other than a quick rinse under the tap - no preparation required!
