This pizza is very easy to make you just roll out the dough, add on whatever veggies and vegan cheese you like. Bake it and there you go a beautiful rainbow pizza. If you want to use something like a sweet potato I would suggest cooking it first before adding it to the pizza. Sending you all lots of love 💙

It's the food.  It's always been the food. Last nights meal leftovers! I absolutely adore fall because that means allll of the warm squash and potato dishes 😋 .
Deets: Delicata Squash Pasta with kale, onions, and tomato sauce!
.
What you’ll need: any veggie based pasta (I used the tri-colored rotini pasta), pasta sauce (I got store-bought but I plan on making my own in the future!), delicata squash, kale, onions, salt, pepper, red pepper flakes!

1) Begin by boiling 3 cups water for every cup of pasta you plan to make.
2) While waiting for water to boil, cut your squash into bite sized pieces. Your choice for this one-you can either cook it stove top on medium/high with some olive oil or throw it in the oven for 25 to 30 minutes on 375 degrees. 
3) Small dice onions, and use your hands to pull apart kale into desired pieces. Remember, kale cooks down a lot!
4) Once water comes to a boil, throw pasta in for about 15 minutes. 
5A) If cooking on the stove, add squash and cook with salt and pepper until tender. Towards the end, throw the onions and kale into the skillet and continue to cook on low until the kale softens. 
5B) If squash is in the oven, throw into skillet on low with onions and kale once done. 
6) Season veggies with salt, pepper, and red pepper flakes if desired. 
7). Drain pasta water and add to skillet. 
8) Mix together and add pasta sauce. Top with some shredded vegan parmesan by @followyourheart if you want a little extra yumminess! .

Plant-based kinda stirfry with tofu, brown rice and snap frozen veggies 😄 Season with teriyaki sauce and cracked pepper and serve up. Would work well with coriander stirred through at the end too 👌
When you thought you bought hard tofu, but it ended up being the soft jiggly one.. might as well make a tofu scramble! 🍳 A classic example of working with what you get and going with it ✌ Just keep learning and appreciate the unexpected good find 🔍🤓 Counting down the last 8 days in Alice Springs 😢 A stirfry of feelings - going to miss this beautiful place and the people I've met here, but also looking forward to seeing my loved ones and familiar faces in Sydney ❤

This week has been all about the roasted veggies - just in time for this chilly, rainy fall weather that has creeped up here 😬. Enter: roasted veggie bowl! I prepped each of these ingredients over the weekend so that these bowls could be put together in 5 minutes during the busy weeknights! Here are all of the elements in clockwise order:
•mushrooms roasted with oil + GF soy sauce
•roasted chickpeas (salt/pepper/cumin)
•roasted delicata squash (salt/pepper) - this one was my favorite!!!
•roasted butternut squash (salt/pepper)
•spinach sautéed with garlic
•kimchi
•brown rice •avocado •topped it all with tahini sauce - not pictured (tahini with soy sauce/maple syrup/lemon juice/almond milk)
