Unintentionally made a #meatlessmonday dinner tonight. I saw these @beyondmeat sliders at @wholefoodsnyc and I was beyond curious (see what I did there? 😂). Paired the sliders with a whole grain mix and a fall/winter salad (since apparently it's still fall technically 🤷🏻♀️). If you're curious, the meaty non-meat sliders were delicious and a great source of plant-based protein. 💁🏻

Crispy salmon with cilantro-lime sauce and pear-cashew salad (@sunbasket for the win for weeks like this when I don't feel like food shopping or coming up with dinner menus 🙌). Hungarian food tends to be quite simple (especially in regard to aesthetic), but it is one of the more delicious and nutritious cuisines out there (take it from me, I'm half Hungarian). Here is a simple veal goulash stew, amped up with smoked paprika roasted potatoes on the side (usually the potatoes go in the stew or soup and sweet paprika is used in the dish itself. My version adds texture and flavour and lowers the overall carb count). Topped off with Greek yogurt and arugula sprouts - this is a veggie full dish of joy. If there's any week that we focus on not letting perfect be the enemy of good, it's this one.
Christmas is a week away, and people are scrambling with last minute shopping, cooking, cleaning, packing, and preparing for family interactions.
Even for those who don't celebrate, the next few days may feel nutty with last minute deadlines at work, heightened emotions from those around you, traffic, etc.
This week, just focus on doing your best. This week is not going to be the week to shoot for the stars, and we can be okay with this!
Our workouts routines may feel displaced, there are going to be drinks and sugary treats all around us, and there will probably be a day or two we feel just a liiiiiiitttle on edge or a bit crazy.
Prioritize your sleep, drink lots of water, keep your workouts short and sweet, and do the best you can with your nutrition. Get those greens and veggies when you can, don’t pass up any #veggieopportunities ! 😉

I've been low on iron so I've been trying to load up on greens with every meal I can. so, I added a side of wilted kale with this burrito. Kale fixes everything, right?

A lot of people have expressed that they don’t understand the carbon footprint of what they are eating so I find this oversimplified chart helpful.
As always, I’m not going to approach the conversation of not eating meat with an All-or-nothing attitude. I believe that even if you are not ready to stop eating meat entirely, you are able to make a positive change with your health and reduce your carbon footprint by cutting down on your meat intake. Scientifically, our digestive systems and colons cannot process the amount of meat that the average American eats, contributing to many types of cancer.

we are most afraid of making the DECISION to take a leap. once we actually leap, we are okay. we are afraid of letting go. the mind thinks more about what it has to lose than what it has to gain, because what we currently have is what we KNOW. even if what we currently are experiencing is painful, there is comfort in the habits and patterns that we are used to living with. what comes after the leap, what life would be like without these habits, even though it might be way better than what we currently experience, is unknown.
letting go of our old story is the most difficult part of creating a new one. leap, my love. who knows what amazingness awaits ✨

Mmm, this was another winner! 🤩 I love using Brussel sprouts as a salad base to mix things up. They were $1.49 for a 16oz bag at my Aldi this week, which is cheaper than buying anything nicer than a head of iceberg lettuce. 🥗
If you want to make your own, here’s the details to make TWO big salads👇🏼
⭐️ Brussel sprouts, white mushrooms, Granny Smith apple, craisins, goat cheese, sunflower seeds, crumbled bacon, sliced chicken breast, honey mustard vinaigrette.
1️⃣ Shred your sprouts - I did half in the food processor, half sliced thinly by hand for some different textures. (16oz total)
2️⃣ Make your dressing 👉🏼 I used a homemade Honey Mustard Vinaigrette, I’ll put the recipe in my stories!
3️⃣ Toss sprouts w/ dressing to let them soak up the goodness.
4️⃣ Cook chicken breast - we seasoned with garlic salt + 4 slices bacon.
5️⃣ Thinly slice mushrooms & Granny Smith apple.
6️⃣ Slice chicken & crumble bacon once cooked.
7️⃣ Top your salad and DIG IN!
What’s your favorite salad topping?! I LOVE goat cheese. 😍 My husband doesn’t. I know, right? So he topped his salad with shredded Mexican cheese. 😂
