Unintentionally made a #meatlessmonday dinner tonight. I saw these @beyondmeat sliders at @wholefoodsnyc and I was beyond curious (see what I did there? 😂). Paired the sliders with a whole grain mix and a fall/winter salad (since apparently it's still fall technically 🤷🏻‍♀️). If you're curious, the meaty non-meat sliders were delicious and a great source of plant-based protein. 💁🏻

Hungarian food tends to be quite simple (especially in regard to aesthetic), but it is one of the more delicious and nutritious cuisines out there (take it from me, I'm half Hungarian). Here is a simple veal goulash stew, amped up with smoked paprika roasted potatoes on the side (usually the potatoes go in the stew or soup and sweet paprika is used in the dish itself. My version adds texture and flavour and lowers the overall carb count). Topped off with Greek yogurt and arugula sprouts - this is a veggie full dish of joy. Yum! #paleoish (just swap the Greek yogurt to coconut yogurt, and replace the potatoes with yams to make it paleo) #lowcarb #lowcarbdiet #lowcarblifestyle #glutenfree #wheatfree #cleaneating

In the lead up to Christmas, I've come to the conclusion that man (and woman) cannot live by panettone alone. Or mince pies. 😁😁 Of course I know that holiday has a special significance. It's just that I'd rather keep the OTT food for the few days before and after the Big Day. I don't know about you but my digestion and energy go into meltdown if I stray too far, for too long, away from my norm. Are you the same?

As my blog will attest, I'm a longtime fan of this mildly flavoured, super nutritious green veg. For today's recipe I've gone (again) to Japan for inspiration. I've added slivers of silky pan-fried eggplant and tossed it all up with an easy spiced miso butter. If you haven't tried frozen zucchini in smoothies you're missing out big time!!! Such a wonderful way to achieve a thick creamy texture with no noticeable taste, all the while reducing the sugar load and increasing your veggie intake 🍃👊 Win-win all around 🙌 Esp a great alternative to frozen cauliflower-if it upsets your stomach-since zucchini is generally much easier on the digestive system. Dark Chocolate Tahini Smoothie
🍃1 cup frozen zucchini (raw or steamed)
🍃2 dates, pitted
🍃1 tbsp tahini
🍃2 tbsp raw cacao powder
🍃1/2-1 tsp maca powder (optional)
🍃1 tbsp flax seeds
🍃2 tbsp chia seeds
🍃1/2 cup non-dairy milk (or water)
Blend until smooth and top with raw cacao nibs, pumpkin seeds, banana slices and a drizzle of tahini and dark chocolate or blackstrap molasses and enjoy!

Néha néha valami újat is ki kell próbálni, így most a választás a vöröslencse palacsintára esett, amivel régóta szemezgettem. 😊Csináltam annyit, hogy egy kis torony lehessen belőle és a rétegek köze #hummus , kelbimbó és ananász került.☺️Igen elsőre furán hangzik, de nagyon jó lett az egész. Természetesen, tojás nélkül készült az alap. Összegezve nem csalódtam finom volt, viszont ha lencse, akkor maradok a rendes hagyományos lencsénél, mivel nincs olyan túl erős íze. 👌😊

I believe that even if you are not ready to stop eating meat entirely, you are able to make a positive change with your health and reduce your carbon footprint by cutting down on your meat intake. Scientifically, our digestive systems and colons cannot process the amount of meat that the average American eats, contributing to many types of cancer.

Mmm, this was another winner! 🤩 I love using Brussel sprouts as a salad base to mix things up. They were $1.49 for a 16oz bag at my Aldi this week, which is cheaper than buying anything nicer than a head of iceberg lettuce. 🥗

If you want to make your own, here’s the details to make TWO big salads👇🏼

⭐️ Brussel sprouts, white mushrooms, Granny Smith apple, craisins, goat cheese, sunflower seeds, crumbled bacon, sliced chicken breast, honey mustard vinaigrette.

1️⃣ Shred your sprouts - I did half in the food processor, half sliced thinly by hand for some different textures. (16oz total)
2️⃣ Make your dressing 👉🏼 I used a homemade Honey Mustard Vinaigrette, I’ll put the recipe in my stories!
3️⃣ Toss sprouts w/ dressing to let them soak up the goodness.
4️⃣ Cook chicken breast - we seasoned with garlic salt + 4 slices bacon.
5️⃣ Thinly slice mushrooms & Granny Smith apple.
6️⃣ Slice chicken & crumble bacon once cooked.
7️⃣ Top your salad and DIG IN!
