Delish Sanja covered with shev and topped with Dahi. It was my brunch today. Made Ghee Tadka with cumin, a bit of asafoetida and turmeric, also kadhipatta and Mirchi. Added onion, Carrot, peanuts and tomato, sauted for few minutes and then added roasted semolina to it. After mixing it well, added boiling qater, a little salt and very little sugar. And done!! .
I am not yet sure about how I feel about adding tomato to Sanja/upma. Our Aajji used to add tomato, urad daal, peanuts and peas to Upma. I remember liking her Upma but my Baba hated the idea of tomato and peas in it so in our home Upma never had any extra stuff.. just onions and sometimes peas.
Aaji and Baba both being strong influencers on our food tastes and preferences I am confused about tomato situation. How do you like your upma, with or without tomato?
Who would have guessed falafels take so few ingredients and so little time (if you have a food processor) to make?? Probably most people actually, but not me! 🌿🌱 It turns out you can toss some onion/garlic/chickpeas/cilantro(or parsley) in a food processor with some cumin/salt/pepper, add in oats or other flour until the texture seems right, and bake them for about 30 minutes at 400 (flipping halfway through). Now isn't that neat.
Just be careful not to blend too much or you'll get a weird hummus thing and not falafel dough.

After weeks of being a busy bee I’ve finally had time to bake new recipes for you all. I’m so excited to share these new tasty treats with you all! This gluten free banana bread is the perfect quick and easy recipe to make for your mornings on the go. Simple, wholesome ingredients that come together to make this delectable treat! Soft, sweet, and sooooo delicious! ⠀
Gluten Free Banana Bread ⠀
(Makes 10 slices)⠀
2 ripe bananas mashed ⠀
2 eggs ⠀
1/2 cup pure maple syrup ⠀
1/3 cup coconut oil melted ⠀
1/4 cup unsweetened dairy free milk of choice (almond milk is my personal fave)⠀
1 tsp vanilla extract⠀
1 3/4 cups @kingarthurflour gluten free all purpose flour (can sub for whole wheat if not gluten free)⠀
1/2 tsp cinnamon ⠀
1 tsp baking soda ⠀
1/4 tsp sea salt ⠀
Mix all wet ingredients in a large mixing bowl. In a separate bowl whisk all dry ingredients. Slowly add dry ingredients to wet ingredients. Once batter is at a smooth consistency pour into a greased loaf pan. Bake at 350 degrees F for 30-40 minutes or until center comes out clean with a toothpick. ⠀

I took my Aunty to my favorite ramen restaurant. This is the shio ramen with kimchi, BBQ pork, bamboo shoots, dried seaweed & bean sprouts. 😍😋 Totally bursting with flavor. Happy Tuesday 💕✨ Finishing this crazy day with some pumpkin cheesecake protein bites! 🎃🍫 Pumpkin recipes continue... sorry! 🙊 These are the perfect protein treats 🍰🎂and I made two different versions✌🏼Low carb, gluten free, can be made dairy free and of course super cute! 😻❤️💃🏽 Pumpkin Cheesecake Protein Bites:
- 3/4 cup organic pumpkin purée - 1/2 cup light cream cheese or vegan cream cheese
- 1/2 cup almond flour
- 1/2 cup pecan flour - 1/2 tsp vanilla extract
- 1.5 scoops protein powder
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
Directions: Take 1 cup pecans and turn into flour using food processor. Mix all ingredients and form into bites. Place in the freezer and make coatings.
Melt 2 cups @enjoylifefoods Or @lilys_sweets_chocolate baking chips. Take bites and coat in chocolate then add cinnamon, pecan flour or pumpkin seeds. Place back in the freezer for 15min then take out and enjoy! For non- chocolate version simply roll bites into pecan flour, cinnamon and pumpkin seeds!
