🔝 Tip - Crisp up that chicken skin by rendering the fat. Cook the breast skin side down for 5 mins in a pan before roasting in the oven.

📝 Chicken. 1️⃣ Brine your chicken in salt water for 30 mins. 2️⃣ Pat Dry, season with S&P and place skin down in a hot pan. Cook for 5 mins to render skin down a bit. 3️⃣ Add some oil or butter, cover the breasts, flip, and pop in the oven for 25 mins.
📝 Potato Puree. 1️⃣ Peel and boil about 250g of potatoes in water or milk until soft. 2️⃣ Add to blender with about 40ml of the liquid from the pan 3️⃣ add a knob of butter and blitz. 4️⃣ Pass through a sieve and put to one side. 📝 Crispy Potato 1️⃣ Peel your potatoes and run through the finest setting on the mandolin or slice as finely as you can. 2️⃣. Separate out two whole slices, then cut the rest into batons. 3️⃣. Pour some rapeseed oil in a pan. Fry the batons in a mesh and the discs separately 4️⃣ Remove when golden, remove excess oil, then season with salt and spray with red wine vinegar.

The thing about chia pudding is to top it off with the good stuff otherwise it doesn’t taste like much. I make mine without any sugar in it so it’s even more tasteless. So I put some crunch,creamy butter,blueberries compote for freshness and some FAT ball (because FATS are delicious🤷🏼♀️) and that is how you make chia pudding very DELICIOUS! .
Details:1/4 cup nut milk + 2 tbsp chia seeds mixed and let soak overnight. @paleofoodsco berry granola. Blueberries sautéed in a saucepan for a couple of min until they release the juice + @justins almond butter and @leefromamerica coconut fat ball

Grilled chicken salad with a homemade balsamic dressing! The chicken marinade was so simple, just olive oil, Malden salt, pepper and dried oregano. If you wanted to add more flavor you could add honey and mustard to the marinade.

I’ve been CRAVING soy sauce like crazy lately so I finally made something with it.. well coconut aminos but almost the same thing right🤷🏻♀️? Deets👉🏼 cauliflower rice, shrimp, mushrooms, & red onion cooked in ghee & coconut aminos (or soy sauce, liquid aminos) + cucumber, avocado, cilantro, & sriracha. 🤤 I actually got this idea from my mom when we used to make “sushi” bowls together. Suhhh good. -
Side note: I’ve noticed that when I don’t take a “pretty” picture of my food I don’t even want to post it, even if the meal was amazing and healthy. I never thought that creating a food account would cause me to start comparing myself to other food accounts & professional food photographers that have the fancy, expensive food brands and nice cameras. My goal w/ this IG was to share my recipes and provide people with inspiration to live a healthy, balanced life. So if you see some not so pretty pictures, my b, I’m just trying to prove that healthy can be fun & relatively cheap over here.
