The recipe for these bad boys is pretty simple and pretty delicious:
Preheat oven to 200 degrees celsius
2 cups buckwheat flour
1 tbsp baking powder
3/4 cup shredded coconut
1 chia egg (1tbsp chia seeds + 3tbsp water)
1 small banana mashed
3 medjool dates pitted and mashed
1 cup soy milk
3/4 cup almond milk
Stir this all together to form a dough before adding in an additional
1 cup frozen blueberries
Then transfer mix into 13 patty cases and cook for 25 - 27 minutes.
Enjoy hot or cold!
It's crazy how much time changes and how your perspective grows with it. Honestly it still amazes me the beauty and diversity within one earth, one species, one town. Nothing is the same. Nothing is similar. Everything and different. And at no point can I reference someone else though another individuals attributes. Yes I've been look a likes but not really. It's the fine details that are different. But those tiny variations make us the people we are today. I love this world and I'm so thankful towards it for taking such good care of others and myself. I'm very appreciative.

For the past few years, I've been volunteering for Dame Kelly Holmes Trust.
This wonderful charity works with transitioning athletes & trains them to transform young adults' lives.
We mentor these young adults about resilience, overcoming their circumstances & empower them to dramatically change their lives - sometimes getting them off the street & out of prison and into a job!
It is unbelievably rewarding to be a part of this Trust & an honour to work alongside some of the most driven, determined, successful and loving people I have ever met.
This is part of why I quit my job - to do work that actually makes a profound different to people's lives 💚
And days like yesterday, when we all get together for training & some laughs, keep my momentum for causing the change!
Last day in Denmark today 💔 While I am absolutely in love with this place, a few things have surprised me, like how difficult it was in some cases to be vegan. I guess I arrived with this naïve expectation that, compared to New Zealand, practically anywhere in the world would be easy for vegans, especially such a socially developed country like Denmark. Unfortunately, this wasn't necessarily the case. Coupled with the language barrier, eating out seemed impossible, and many people looked at me like I had two heads when I explained I didn't eat meat, eggs, or dairy 😂 For a country that always seemed so environmentally friendly in many regards (biking, green spaces, dedication to climate change goals etc), the diets (in my experience) were extremely animal-heavy (lots of liver pâté, egg salads, and pork/veal meatballs 😷), and once you begin to look, you can't help but notice factory farms everywhere - apparently there are more pigs than people in Denmark 😢🐷 I made do, though, and was really lucky to have such a wonderful host mother during my wwoofing experience, who bought me lots of treats from the supermarkets (like vegan schnitzel, vegan burger patties, and vegan mince), and let me cook lots of yummy vegan food for the family ❤️ I also learnt that, as much as anything, it's about knowing where to look, and I was fortunate enough to have some guidance from a fellow instagrammer to the best vegan eats in Copenhagen, otherwise I would've been completely lost (and very hungry)!! Despite all this, I think I will definitely be coming back to this beautiful place (maybe with better Danish skills next time) and would highly recommend visiting (just maybe bring some snacks just in case lol). ❤️❤️❤️ NEXT STOP: NORWAY 🇳🇴 (any advice welcomed pls 😅) xxx

Ieri non mi sono fatta sentire per tutto il giorno, perché ho finito la prova e sono andata a casa di amici a studiare. Oggi invece verranno loro da me per fare matematica e filosofia il pomeriggio. Insomma, questa seconda prova? Fortunatamente a noi è andata bene dai, il miur ha scelto Seneca.. onestamente non mi aspettavo nulla di troppo complicato dopo le tracce della prima prova ma sentivo echeggiare nell'aria il nome di PLINIO IL GIOVANE 😫😱, invece per Seneca portiamo dei testi in classico quindi eravamo già più preparati. Nel complesso mi è andata bene, qualche errore alla fine ma spero che non mi condizioni troppo la prova.. confido in un 13 🙏🏻 anche se adesso come adesso non voglio farmi programmi, perché ero partita con l'intenzione di tentare i 41 punti agli scritti e di sedersi con la bellezza di 64 ma la vedo difficile e vedo difficili anche i 5 punti bonus. Ma vabbè penso positivo💪🏻 devo credere di più in me stessa! Comunque niente, questa è stata la mia super colaz prima di mettermi a studiare inglese 🇬🇧 nell'attesa che mi raggiungano i miei compagni di classe. Buona giornata 🌞☀️🌞
I just wish vegan food was more interesting sometimes... sike! I'm still reminiscing on this whole @greenchef meal which was all-around amazing from the Jerusalem couscous to the chickpeas and chard to the zucchini boats. 👌🏼👌🏼

This is probably the greenest smoothie I've ever had and that was my intention.
Recipe for all you game Smoothie drinkers out there:
- 2 frozen bananas
- 2tbsp @tropeaka lean vanilla protein powder
- 2 tbsp organic barley grass juice powder
- 1 tbsp hemp seeds
- 2 tbsp organic mixed greens powder
- 60 grams fresh spinach
- 1/2 a lemon
- soy milk
Blend away and too with your favourite extras, I did coconut shreds, passionfruit and hemp seeds. Enjoy
I don't wear makeup often, but when I do...it's definitely cruelty-free! It amazes me that folks still buy brands that test on animals when there are now such great cruelty-free products are on the market! Even vegan products! Take, for example, Tarte Cosmetics. Cruelty-free with a robust vegan collection. This pic is my attempt to capture my contouring attempt with four shades of Tarte's Shape Tape. I love it as a concealer; so, when I saw a video on contouring with it, I had to try. Voilà! What do you all think? 🐰🌱🐰🌱🐰
