If you prep your food ahead of time you really CAN eat healthy over a short lunch break. Mango + jalapeño chicken sausage with roasted asparagus, tomatoes, and corn! Topped the chicken sausage off with some mango salsa from Costco. Ready in 20 mins!
open wide, its chicken burgerrrrrrr time, and this is a goooooood recipe, trust me, you want to make this! 😱
1 lb ground organic, free-range dark-meat chicken
2 tb olive oil
1 small onion, finely chopped
1/2 green bell pepper, chopped
1 celery stalk, finely chopped
sea salt and ground pepper to taste
in a large skillet, heat 1 tb olive oil. Add onion, bell pepper, and celery; season with s&p. Cook for approx 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature (keep the skillet). Add ground chicken to vegetable mixture in bowl; season with 1/2 tsp salt and 1/4 tsp pepper. Mix to combine. Shape mixture into patties (recipe will make approx 4 patties). In the same skillet, heat remaining tb olive oil over medium; cook patties until browned and cooked through, approx. 6 to 8 minutes per side.
instead of a traditional hamburger bun, serve with @iloveorganicgirl butter lettuce as the bun, and fill with organic arugula, daikon radish microgreens, @sirkensingtons organic ketchup, and anything else you love!

He sealed up a New York Strip steak after seasoning with garlic and pepper, and cooked below the surface for 1 hour at 123.8°F / 51°C before searing for one minute per side in a ripping hot pan. Served alongside a soft-boiled egg and some buttery corn on the cob, for a perfect summer meal! .

Things are getting pretty fishy here as I double dose on the omega 3s today with @vitalproteins marine collagen in my matcha latte and this little bite of wild salmon on grain free toast with arugula, avo covered in @sunpotion chlorella, and some homemade kraut. Delicious fuel to keep my brain (and taste buds!) happy while I send some amazing people some good old snail mail - probably one of my favorite hobbies that brings me so much happiness. 😊 🐟

There's been incredible amounts of cherries devoured at my house lately. My son is especially fond of them, so for every huge bag I buy, I need to make sure I set some aside for recipes. I find cherries to be a super-versatile fruit: it has, of course, an amazing color, but also a nicely firm texture that holds its own even when cooked or baked, and a just sweet-enough flavor that lends itself to both sweet and savory dishes 🍒👌🏼
This summer salad has been a favorite of ours for years now. Cherries are not only used whole in the salad, but pureed in the dressing, too! Fabulously crunchy and nutritious, it makes for a nice, light summer lunch or a colorful accompaniment to grilled meats 😍

Buttery, crispy, and drizzled with a cinnamon sugar glaze - what's not to love?? I'm happy to say I'm feeling much better today - the gallon of orange juice and day in bed definitely did me well 🤒

🍕 Took a @cappellos grain free "naked" pizza crust, loaded in some fresh garlic oil 😋 Then layered on some raw goat cheese, artichokes, olives, red peppers, and spinach 💚 But THEN...I topped it with the salad you see in the background. BEST.EVER.
🥗 First: fresh minced garlic in bottom of the bowl. Then Fresh @iloveorganicgirl arugula, toasted pine nuts, fresh lemon juice and olive oil. Sprinkle with some Himalayan pink salt, pepper and @teenytinyspice ZA'ATAR!!! This is the key!! 🙌🏼🙌🏼 Recipe will be on my blog soon.
