NATIONAL PEANUT BUTTER DAY🎉
The best day of the year has come and of course I saved it in my diary! It's #nationalpeanutbutterday which means peanut butter ALL DAY!!🙌🏻

Happy Peanut Butter Day!!! Of course it was brought to my attention by the team @meridianfoods, but every day is peanut (or almond) butter day in my world!!! I made these super easy, minimal ingredient peanut butter crunch fudge squares with @meridianfoods crunchy peanut butter and @homespun cashew coconut quinoa crunch.
8 jumbo squares, but you could easily slice them into 10 or even 12 bites.
The question is....are you a crunchy or smooth peanut butter lover??? For the Base *250g @homespun cashew coconut quinoa crunch *160g @meridianfoods crunchy peanut butter
*40g @meridianfoods maple syrup
*1 tbsp (10g) @linwoodshealthfoods chia seeds
Heat the peanut butter and maple syrup in a microwave safe jug for 1 minute.
Add in chia seeds and quinoa crunch. Mix well to combine.
Line a 9 inch loaf tin with baking paper or a 6 to 7 inch round or square tin.
Press mixture into the base of the tin with your hands and spread evenly. Place into the freezer while you make the top layer.
For the Top Layer *40g @meridianfoods maple syrup
*80g @drcoys coconut oil, melted
*150g @meridianfoods crunchy or smooth peanut butter
*30g @Pulsinandbeond no sugar added chocolate chips
*20g roasted peanuts salted or unsalted
Mix together peanut butter, maple syrup and coconut oil.
Add a pinch of pink Himalayan rock salt and 1 tsp vanilla extract if you like, it's totally optional.
Pour over the base and place into the fridge for 45 mins.
Sprinkle over chocolate chips and chopped peanuts and press lightly into the topping.
Leave in the fridge to set overnight.
Slice in the tin. Store in a seal tight container in the fridge for one week or freezer for up to one month.
Easy avocado 🥑 toast with roasted chickpeas and radish. It will disappear as fast as you make it 🙊🙌🏻

Подсушите хлеб на гриле или сухой сковороде. Если используете сырой нут, то замочите его в воде и оставьте на 2-3 часа. Если консервированными, то просто промойте под водой, высушите и выпекайте с солью и оливковым маслом на противне около 20 минут при 180С. Разомните авокадо вилкой, выложите на подсушенный хлеб, выложите нут и тонко порезанную редиску. Дополнительно украсьте микрозеленью (я использовала ростки клевера)

I wasn’t expecting such a big fish but sooooo was so excited! Thanks @freshcatchnz for the amazing fish. I was going to steam it but because it was huge, I improvised and tried to steam it in the oven and then finish it on the stovetop. Lemon, ginger, garlic, soy, oyster sauce, chilli, tomato, and tons of herbs. Looking forward to the next one! One tiny comment - wish the head was de-scaled too.
So random Tuesdays I do a throwback to food I haven't posted about yet and call it #TuesdaysFoodDays ! Oddly enough this place was the best place I went to in Flagstaff when I went last month to see the Grand Canyon. But since it was sooooo good i didn't post about it right away because I wanted to make sure I posted a good caption which takes time and I didn't have much when I was out there so I figured I'd post about it when I got back but ofcourse I never did. Anyways, this place had amazing vegan options but also nutritious and delicious! Literally everything was bomb! The fried tofu with the peanut sauce was simple but really good. And the "So your vegan S.U.V." dish they have on the menu and vegan as is was the best thing I had if maybe in that month! It coulf seriously be successful out here in LA. This place was not just good for a place like flagstaff but its a good place for anywhere. Seriously would go back just to eat here again. And this was just another time where we ordered all the vegan options. Lol. Server was impressed or disgusted when we finished it all but I didn't mind. Anyways, if your ever in the area, go here. And even if you're not in the area, seriously considered making the trip. Another quick-fix meal I have in my arsenal...literally no time to make, and even less skill needed 😊👍👍 Shrimp quickly sautéed in olive oil, garlic, salt, and pimenton de la Vera (Spanish smoked paprika) ❤️❤️❤️ You can have it with rice or piled on pasta, or even to top a salad! 🍚🍝🥗 What makes this so quick to make is that I always have a pack of @pacificbayseafood jumbo shrimp stashed away in my freezer...I feel the quality is really top notch for frozen seafood 👌👌👌 And speaking of quality, when buying Spanish smoked paprika it is worth seeking out one with a DOP (Denominacion de Origen Protegida)...you can taste the difference! Satu porsi dagingnya Rp20.000, nasi Rp4.000/porsi. Ini salah satu tempat favorit BD buat makan BPK, karena secara taste Mr BD doyan yang gurih gurih sedap. Jadi daging panggangnya sendiri sudah ada rasa, ditambah sama sausnya yang gurih, makin makan makin laper!!!

One of our biggest wishes, is to travel the world and get to know all the different, beautiful cultures there are. We have this vision, in which we get to know people from the places we travel and they tell us more about their cultural habits, show us their favorite spots and of course, teach us how to cook their special dishes.
We‘ve already tried out a few things by ourselves, while searching inspiration in the World Wide Web, but that’s kind of not the same, right? Anyhow, it’s nice to have something on the bucket list and to anticipate the day that allows us to check this particular one off the list (although, when I think of it, it is more of a process, than something that could be done on one exact day..). The dish, you can see on this picture is inspired by a Syrian restaurant that is located in Hannover, the city we currently live in. This restaurant is really special to me, because I had dinner with basically every member of Alex‘ family there. I keep the memories of those exciting nights in my heart and remember all the stuffed stomachs and happy faces.
In case you are wondering, those are oriental fried potatoes and roasted cauliflower with drizzled citrus, topped with a garlic yoghurt dip.
