Yesterday, we drove and drove until we reached the top of a faraway mountain where one of my favorite movie musical heroines (and real life Austrian) lived out much of her life. The Von Trapp Lodge and Brewery is a little Disney-like today but her spirit is still there and, as in the movie, she gave me the confidence to just move ahead another day and get on with life. Today, family is starting to descend on the old schoolhouse for a summer gathering and quite likely a mini-celebration of my mother. We're cleaning the house, making the beds, and slicing up all the good Vermont bread for sandwiches, eggs, cocktail hour. Instead of cooking outside, I'm channeling my inner Italian nonna by making sheet pan Sicilian Pizzas (they'll be in my next book) for dinner to serve with cold red wine. That lone tomato may, however, become my lunch. 🍅✨ ps. Hello! 👋🏼
Breakfast turned to brunch this morning but I'm not complaining. Scrambled pasture raised eggs with broccoli, tomato and feta cheese with whole grain avocado toast and a clementine. Hope you have a great day!
Egg custard with Sancho pepper for our second starter. The famous Mingles egg dish is served here in a nest shaped bowl. Chorizo and cabbage marinated in Sancho pepper resting on soft boiled egg yolk, filled with cauliflower and egg white foam, this was so yummy! Enjoyed every mouthful of it and I wanted more!
Korean BBQ used fresh local pork belly meat seasoned such as ginger, wine, ginseng, pine leaves, herbs, curry, soybean paste, and chili paste. What's your favorite?

Eaaaat the rainbow 🌈 this lunch bowl is absolutely delicious and super nourishing! The more colors the better👌🏼Here I have a bed of baby spinach topped with cucumbers, cabbage, the most delicious Romano tomatoes (bought from the farmers market), 2 @vitalfarms Pasteur raised scrambled eggs, sunflower seeds, and shredded carrots. I used a peeler to shred the carrots and I actually enjoy them so much more like this. It adds a nice thin crunch to the salad. Topped this bowl off with a mix of lemon, tahini, and ACV for a simple dressing. 😋😋Happy Thursday!! Be sure to nourish your body today (and everyday!)

Chicken Tagine with olives and preserved lemon. When I had this dish in NYC, I fell in love with it and wanted to make it myself at home. I got this Tagine pot @williamssonoma @ws_burlington and made the preserved lemon, took about 1 week, then finally made it!
My younger son loved this dish. I will definitely make this again and again. ＊

Amaebi (sweet shrimp, Korean style sashimi), Dongchimi (radish kimchi). Our first starter for our lunch at Mingles at Art at Curate was mind blowing! Pretty as a painting, it was even more amazing on the palate. This set the tone for our entire lunch.

Easy peasy granola for breakfast, and maybe for lunch too! 🤗 Recipe below 👇🏼👇🏼👇🏼👇🏼👇🏼 4 cups of rolled oats
1 tbsp cinnamon
1 cup almonds and sunflower seeds
2 tbsp flaxseed meal
2 tbsp hemp seeds
1/2 cup currants
Pinch of Pink Himalayan salt
1/2 cup coconut sugar
1 1/2 tsp vanilla
1 cup water
Preheat oven to 300°
Add first 7 ingredients to a bowl and mix well. Combine coconut sugar, vanilla and water in a pot and bring to a boil and let simmer for 5 minutes. Remove from heat and pour over rolled oats mixture. Mix well. Spread oats on a cookie sheet lined with parchment paper and bake for approximately 30 minutes. Let it cool completely and serve with fresh fruit and your favorite nut milk!
