Spicy Korean Tofu (inspired by @the.korean.vegan ) with stir fried veg - broccolini, brussel sprouts, cabbage, crimini mushrooms, shisitos, kale...Anyway the important thing here is that I finally got kosher gochujang and doenjang from @benzsgourmet and I'm not sure how I've lived this long without it. I will be ordering a ton more from @kosherkorean (Can't actually put a recipe here because I threw stuff in the pan and didn't measure much and I blame my crying baby and kvetchy toddler for that).

Butternut squash and Brussels sprouts quiche😍. Quiches are such an easy thing to make and such a great way to eat your veggies!❤️. It also is helpful in using up your odds and ends in the fridge and making it into something amazing like I did here. I had some squash and Brussels sprouts that I didn’t get a chance to cook up yet and our cheese drawer is always full of different cheeses so ... this quiche was born🤗. Aside from the great fall colors in this dish, it was creamy and delicious and an delightfully unexpected way to eat Brussels sprouts (which I ❤️)!

Sipping away on my Yorkshire loose leaf tea, this morning I thoroughly enjoyed listening to my most favourite Qawalli singer, the legendary Nasrat Farah Ali Khan. In fact when the track 'dum mast qalander' came on I was yearning to cook a one pot rice dish of dum biryani! Not sure how I linked the two but I did!
Originating from Persia; a fragrant rice dish brought to #India by the Mughal Empire. And oh do I love that period! There are so many varieties of biryani mastered by #Muslims across the globe from: Hyderabadi biryani, dum biryani, Sindhi biryani, an Afghani dumpakt biryani and more!
All made with so many different kinds of flavours from lamb to mutton, chicken to beef and off course the classic Bengali fish biryani as well as the vegetable biryani. We really are all spoilt for choice!
Today I attempted to make my own biryani using my own spices. I normally love the Laziza and Shan packets. As well as so many special ingredients, what makes biryani special to me is tender mutton meat, lots of green chillis and lots of fried onions in ghee to garnish. And the fragrant that leaves the kitchen smelling blissful is second to none...! After the passing of yesterday's red sun and dusty red sky, today we are left with a stunning sunshine glorifying London in all its beauty. Wanted to share a recipe of one of our go to condiments that is so quick and easy to make...Cilantro Jalapeño Pesto. It's so versatile that you can use it on fish, chicken, grilled meats, pasta, pizza and sandwiches! ***RECIPE***
. Pulse 1/4 cup whole almonds in a food processor.
. Add 1 bunch cilantro (or half cilantro and flat leaf parsley) with 1 Jalapeño, 2 cloves garlic, 1 Tablespoon water, a generous squeeze of fresh lime juice, 1/4 cup Parmesan, salt, pepper. .
. Pulse all ingredients with olive oil until you reach your desired consistency.

It's always a good idea to learn something new, especially if it pertains to your field of work. I love Spanish food but I went to a French Culinary school so I was mostly taught classic French techniques. I honed my butchering skills at a little market in Paris, worked at a French restaurant (@restaurantdaniel) and worked at a Japanese/Peruvian restaurant (@nobunewyork). No where in my training did I learn Spanish or Italian Cuisine, which are my two favorite cuisines. Thankfully, there are many continuing education classes for me to take as a chef, and these classes are perfect for anyone who hasn't gone to Culinary School but wants to learn a specific technique, cuisine or dish. This particular class was done at @whiskcooks in Bellevue, and we made Seafood Paella, Asparagus with Caramelized Leeks, and Pumpkin Creme Brûlée. #f52one
I am always experimenting with everyday, easy meals that are robust, nutritious and delicious. This is the closest I’ve gotten to the Holy Grail. It’s truly a one pot wonder and my Simple Chicken One Pot is so darn pretty, I hate to bake it! Oh and it also moonlights as an impressive, no-fuss feast. This holiday season, I plan to double (or triple) this recipe and bake it in my large roasting pan to feed a crowd. Whole chicken legs + chicken drumsticks + cherry tomatoes + garlic + fresh basil + fingerling potatoes + cannelloni beans + olive oil + sea salt and black pepper = ordinary ingredients transformed into an extraordinary meal. A sheet pan chicken and fall veggies was on the menu at our house tonight. (Not just for weeknights!) Using up the produce in our fridge and pairing it with some @bellandevans chicken breasts that the butcher boned for me, so I got to enjoy crispy skin and a reduced cooking time.
