The good parts of my day(eating wise): started out awesome with a healthy, on track breakfast, 2 eggs, kale, half a peach, and a protein shake. I seriously thought I was unstoppable after a start like that. Then the down side came. Bum bum bum!! I really wanted to make chili for lunch but had none of the ingredients. So after wasting an hour.... At least! I got out of the house to get groceries but for some reason when you are a stay at home mom, and love talking, then finally get out, and without your child😱, is like a brief glimpse into what other adults are doing in the real world. I spent 20 minutes running an errand for my mother inlaw (pick up potatoes, a 2 minute job) but I had to talk to the cashiers for 18 minutes because they are so friendly and above the age of 18 months. Then I spent at least an hour talking with my mother inlaw after delivering the potatoes. And finally drive the 20 minutes to the bank then to the store and returned home 3 hours after I left😬.... Whoops. Not a lunch anymore. Ooh and I forgot to add in the part where I got hungry and had a bunch of snacks instead of a real lunch.
Well at least I know the simple fix for next time! Plan ahead and go grocery shopping early!
Recipe for the chili is in the comments! (we used venison since it is hunting season and I got an amazing meat grinder attachment for my kitchen aid a couple Christmases ago. Finally putting it to use! Chili was too good btw. I'm full 😄)

Simple slow-cooker chili on a brisk Monday is what I'm all about right now⠀
An easy fall dinner that comes together quickly + is customizable:⠀
• 4 stalks chopped celery⠀
• 4 chopped carrots⠀
• 2 cloves chopped garlic⠀
• a can black beans⠀
• a can red kidney beans⠀
• a can organic diced tomatoes⠀
• 4 cups broth or water⠀
• 1 tbsp each cumin, chili powder + paprika⠀
• protein: I added browned grass fed beef, but ground turkey, chicken or additional beans work great!⠀
Combine it all in a slow cooker and cook on high for 4-5 hours or low for 7-8. Top with diced avocado, tortilla chips or cashew cream 🙌🏽⠀
All day, every day. 🍠👸#squashqueen .
Delicata squash is the tastiest and easiest squash to make IMO (no peeling required). Just slice lengthwise in half, scoop out the seeds and cut into wedges. Drizzle with a little avocado or coconut oil, garlic salt and pepper (or cinnamon and nutmeg if you like it sweet) and roast at 425 for 30 minutes. .
Use it in salads, bowls, scrambles, atop yogurt parfaits or pancakes. Or leave it in half and stuff with kale + quinoa. The possibilities are endless! Holla at me if you want more squash recipes. Happy Friday loves!

I let some shiitake, lions main, reishi, crimini mushrooms simmer for about 45 minutes along with some garlic, onions & rosemary before adding red cabbage and a little miso to finish 👌
