Hey you, you should try this quinoa + veggie stuffed kabocha squash! This is the first season I have eaten kabocha squash (thank you @grant_farms_csa) and YUM. It is similar to pumpkin and sweet potato which means it is packed with flavor and nutrients. 😋

CHRISTMAS PANCAKES! Hands down the best pancakes I’ve made (WITH SPINACH) w substitutes: 2 handfuls of spinach, 1/2 cup of whole oats, 1 egg, enough almond milk to make consistency of your liking. Blended it up in a nutribullet and cooked on skillet 3 min each side 💯💯🎅🏼🎄

✨Healthier Homemade Hot Cocoa✨
-1 Mug full of Milk of your choice
-1 Tbsp Chocolate Chips
-1 Tbsp Cacao Powder
-1 Scoop @vitalproteins collagen peptides
-1 tsp. Vanilla -1/2 Tsp. Cinnamon -Pinch of Sea Salt -1 Tsp. Maple Syrup
-Bring all ingredients to a low simmer in a saucepan, careful not to burn milk. -Whisk to combine well and to make extra frothy use an immersion blender or regular blender! -Top with marshmallows and enjoy! .

I love meals that just keep on giving. I’ve never understood people who don’t eat #leftovers . What’s not to love? You get to enjoy a meal that tasted good more than once, you don’t have to figure out “what’s for dinner” (or, in my case lunch), it’s ready in minutes, and there are virtual no dishes (except maybe a pot to heat it up). This is one of those meals and it’s coming to the blog in the new year. Happy Tuesday, friends!
OK, I finally used my Instant Pot 👏
Let me just say, this thing is mind-blowing! It's reminds me of "Back to the Future" when they stick that dehydrated pizza into that machine. They push a button and it's cooked instantly.
Even though we never got the dehydrated pizza, or the machine that cooks it as predicted by "Back to the Future".....we got the Instant Pot.
It took me almost a week to work up the guts to use this thing. With all the gadgets and buttons, I was a little intimidated.
I finally put my fear aside and tackled an easy, kid-friendly recipe yesterday.

Feta Stuffed Buffalo Chicken Meatballs
1lb ground chicken breast
1/4 small red onion, grated or minced
2 gloves crushed garlic
1 egg white
1/2 cup panko bread crumbs
1 tablespoon Ranch Dip mix
4oz block feta cheese, cut into 1/2” cubes
2 tablespoons butter
1 cup buffalo wing sauce
Preheat oven to 400 degrees. Stir together red onion, garlic, egg white, bread crumbs, and ranch dip mix in a large bowl. Add ground chicken then mix until just combined. Divide mixture into quarters, then each quarter into 4 balls (16 total). Press a cube of feta into the center of each ball then close mixture around cheese to seal. Place meatballs onto a non-stick sprayed cooling rack set on top of a baking sheet, then bake for 16-18 minutes, or until cooked through.
Meanwhile, melt butter in a large skillet over medium heat then add buffalo wing sauce and stir to combine. Add cooked meatballs to skillet then use a spoon to coat in sauce. Place a lid on top and turn heat to low to keep warm.
