Egg pie with beetroot and lentil salad. Make olive oil pastry (see last post) and roll to fit pie plate. Pre cook in oven for approx 15 minutes. For filling, 1.5 cups chopped red spinach (any spinach, silverbeet or kale will do), 1 large grated zucchini, 1 chopped red onion, 3/4 cup grated cheddar, 6 eggs. Mix well. Pour into pie case. Cook in moderate oven until cooked through and turned golden. For salad mix 1 can brown lentils, 1 can diced beetroot, lemon juice and pepper together. Serve on some lettuce. Some of the most common questions I get about Nutrition involve getting little ones to eat greens. 🥗🥒🍃My response? Start early. They may later refuse anything green, maybe they will decide they will only eat French toast for weeks on end or want only what is your cup, not theirs. But if the colour green is always a part of their meals and if the taste of kale, spinach and cucumber are familiar, they are a lot more likely to give it a try later on. And if they decide smoothies taste better from your cup, hell let them sip like a big boy! Too late to start early? Get them in the kitchen and get them excited about making things of every colour of the rainbow! Have a colourful week with a day for red food, yellow, orange, green then 🌈! It just might encourage a tentative family member to try green eggs (with spinach), bright red hummus (with beets), orange “French fries” (baked sweet potato) and yellow soup (red lentils, yellow peppers and squash). .

After I had my fourth baby I felt lost. I had tried everything to lose the baby weight, and nothing was working. I was tired, depressed, and hated looking at my body in the mirror. WEDNESDAY WISDOM | Make treats full of goodness and not artificial nasties! I've put together an Autumn inspired recipe for Peanut Butter Popcorn:⠀
• 4 heaped Tbspn of popcorn kernals⠀
• 1 tbspn olive oil⠀
• I heaped tbspn cocnut oil ⠀
• 2 tbspn maple syrup⠀
• 1 tbspn smooth peanut butter (I like @wholeearthfoods )⠀
• Optional 1 tbspn of @sweetfreedomuk chocolate spread⠀
• 1 teaspoon hot water⠀
• Pinch of seat salt (optional)⠀
Heat a pan over medium heat and film the bottom with olive oil. When the oil is hot add the popcorn kernels, shake to distribute, then put a lid on the pan, leaving a small crack for steam to escape. When the first kernel pops, put the lid on all the way. As the popcorn starts popping, shake vigorously to make sure the kernels are distributed evenly. When the popping slows to a few seconds between pops, take the pan off the heat.⠀
Heat the maple syrup gently in a small saucepan with the coconut oil. Let it melt, then remove from the heat and add the peanut butter. Stir vigorously until all the peanut butter is melted.⠀
Immediately pour the peanut butter caramel over the popcorn and stir with a long-handled wooden spoon until it's all coated. Let cool for at least 10 minutes before serving.⠀For an extra treat melt some dark chocolate or chocolate sweet freedom with a little hot water and drizzle over the top. ⠀
An amazing, feel good delicious snack low in sugar and with extra protein to keep blood sugar balanced. It sounds naughty but actually it's what I call a good for you treat.⠀
How about a green monster for lunch as we are getting closer to Halloween? I wasn’t really planning to make these monsters but more like “the princess and the pea” pancake but when I served with 🍅 and 🥑; a monster was born!! So these pancakes are rich in fibre, protein and probiotics. I used two eggs, 2 tbs of gluten free flour, 2 tbs of Greek yoghurt (I made sure to include the liquid rising on top) and 250 gr of peas. Add some spinach for extra colour and extra vitamins!!! Of course the ✨ of this recipe are the garden peas! Probably the most popular green among children! They are part of the legumes family and they have similar protein and fibre content. They are however less rich in calcium. But they are very rich in vitamin K (40% of daily requirements), in manganese (36%), vitamin C (26%), copper (27%) and potassium (14%). It is higher in calories and sugars so it should not be consumed in large from people diabetes or with insulin resistance. However, rich in antioxidants and anti-inflammotory nutrients it provides numerous health benefits against arthritis, heart disease and diabetes to name a few. Moreover, it a good vegetable source of essential fatty acids that are also protective against neurological diseases such Alzheimer or Parkinson’s disease. Overall, an easy, cost-effective and nourishing food to add to your diet! I’ve yo-yo ‘ed many times and lost weight by sheer will power. When we moved to the UK from Hong Kong I was fairly miserable and gained 10kg. It’s been a battle to try and lose it. Any pounds I managed to lose were back on with interest in no time! Not any more. I’m a #keto convert! 10kg lost in 7 Weeks almost effortlessly without ever feeling deprived. I have energy, ZERO cravings, mental clarity and alertness. On Tuesdays and Thursdays while Baylen's at Kindergarten, I get to spend all day with these three. It's so neat to see how they've bonded in different ways since the school year started. I love our little adventures together. Going to the gym, running errands, it's all so ordinary, but extraordinary at the same time. Since Case is big for his age and the girls are petite, they often get mistaken for triplets. 😍 Next year the girls will go to Kindergarten and it will just be Case and I. Soaking up these precious moments because I know they'll be gone in the blink of an eye!
Well #ophelia you haven't beaten me! Thanks to my gas cooker we've been eating well (scrambled egg on rye bread for brekkie, mixed vegetable soup for lunch) and I can even do some work, having gone to a cafe to download, charge and respond to emails. Also included a photo of the time the storm hit, and when we lost power - right around lunchtime yesterday. Still no power but it's ok. Losing all the food in my fridge and freezer? Not so ok! Surrounding yourself with nutritional choices and appealing selections is key to success. Especially if you have a family you are feeding!! My friend brought her kids over to join us for dinner recently and she said "my son loves your snacks--I'm pretty sure he just ate all of your grapes and is now diving into your roasted almonds!!" She then took an inventory of my kitchen choices and commented that she needed more of what I have. I laughed to myself because I think she's healthy and feeds her kids well, so I didn't think much of what I put out in my kitchen before. BUT, now I am paying more attention! Bountiful colors and hearty, tasty snacks are appetizing and encouraging. One of my favorite snacks is roasted almonds--they are so easy to make and much healthier than purchasing the big name brands at the store--you don't need the added sodium or other flavors!!!! I grew up a modest farm girl from Iowa. I was shy. I was never particularly academic, and considered myself average at pretty much everything I did. I didn't have a strong calling to a particular career. But at a young age something in my heart told me God was going to use me for HIS GLORY. My husband @jakekuiper grew up outside a small town in northern Wisconsin. He would also tell you that he grew up being average in school but passionate and optimistic about where life could take him. The one thing both of our parents engrained in us was a hard work ethic. We learned that we could do anything if we worked hard enough at it. Nothing was given to us, but we knew we had a CHOICE to show up and put one foot in front of the other. As I sit here typing this today, we are a day from packing up our bags and heading to LONDON, UNITED KINGDOM! 🇬🇧 I can hardly believe that I'm saying that! Two years ago I never would have dreamed of this. My world was as big as cleaning my kids' poopy diapers. One day, I followed a still small voice encouraging me to take a chance on myself. I started prioritizing self care, and soon became passionate about helping other parents do the same. This week, we get to continue in our mission and start helping families in the U.K.! What an honor and privilege! Friends, if you are not 100% satisfied with the trajectory of your life, I want to remind you of what my parents reminded me of as a young girl. Postpartum depression is real and not often talked about. I’ve met a lot of women who have suffered alone. Pregnant? Afraid to go through it again? 💖 It's so painful to go through the work of adjusting to your baby while feeling you're at the bottom of a dark well and can't get out. I’m a huge fan of probiotics and take them everyday. This is the brand I’m currently using but I love Klaire Labs too. Probiotics are so important to take while you’re pregnant and through the postpartum period. Some incredibly strong research is coming out on the role of probiotics in pregnancy - especially lactobacillus- for dramatically reducing postpartum depression. This is super safe and also protective for baby against eczema and other allergic problems when taken prenatally by momma.

Our first lettuce harvest. Turned quick San Choy Bow dinner. Minced pork, 1 glove garlic and 2 cm fresh ginger minced, 1 finely chopped red capsicum and red onion. 1 packet of frozen stir fry vegetables, 1 tablespoon soy, 1 tablespoon oyster soy. (Normally I would also include a bunch of fresh coriander and mint however these have not yet established themselves in the garden). Fry together in a little olive oil. Serve on a bed of fresh lettuce. Toddler rating- we do not eat pork often in our house in fact other than bacon and ham it might be the first time she has had it. So she was not a fan. Ate the lettuce and various familiar veggies out of the mix - capsicum, broccoli and carrot, but did not like the mince. She never used to eat lettuce but has started since we grew our own. NUTRITION BS! So much of the information out there on nutrition is inaccurate. Even if it’s not inaccurate it can be really confusing right?? Low carb, low fat, fat free, Ketogenic, GAPS, FODMAPS, SCD, low oxolate, low phenols, low salicylate, high protein, vegan, blood type diet, macros, intermittent fasting etc. the list is nauseating... the truth is NO DIET is right for every body. 😧
Each of us has our own unique biochemistry, health history, lifestyle (including what we eat, medications, supplements, sleep, activity level etc), genetics and preferences. All of this needs to be taken into account when trying to figure out what to eat and when and how much. There are guidelines that help like the snarky one above but sometimes even my most diligent patients feel WORSE when we “clean up” their diet! Why? Many possible reasons: food sensitivities, chemical food reactions, genetic SNP issues like inability to detox certain compounds correctly. Don’t believe the latest fad or diet trend. Just because it worked for them it may not for you. Cutting sugar and processed foods and eating more clean protein and healthy fats are a great place to start. If you eat mainly protein, healthy fats, seeds, nuts, fruits and veggies and still don’t feel great then you probably need some specialty lab testing and a great clinician to guide you. Protein is 🔑. Kids are just like us. Feed them carbs and they will feel better short term but will crash soon after. This summer I decided to incorporate protein in their snacks, not just leave it to meals, and it’s made a big difference. Protein sustains us longer and decreases sugar highs and lows. You may notice immediate behavior improvement with your littles if you’re consistent. Bennett loves buttery crackers so I add pb to them 👌🏼. This is another reason I love the daily sunshine smoothies ☀️ and actually the main reason I bought them initially. They are loaded with protein-it’s a great afternoon snack for me and the troops😋.
