Beautifully monochromatic and filled with apricots, chickpeas, vegan chicken sauteed in Moroccan spices, olives, green onions, vegan chicken broth, ginger and orange juice. Amigos y amigas!!!💕💕💕💕 mi comida del día de hoy  fue 🍝 espaguetti a la boloñesa (pero un poco diferente) digamos que esta es mi versión jajaja 😁💕

Bueno primero los ingredientes: (esto fue para 2 personas)
450gr de carne molida de res, 1 1/2 tza de puré de tomate  1/2  cebolla picada, 1 ajo finamente picado, 1 champiñón picado, perejil, sal, pimienta, laurel. . .
1- cocine mi pasta en agua hirviendo y agregue sal y un  trozo de cebolla
2- frei ajo y cebolla, en otro sartén y  agregue la carne ya sazonada con sal y pimienta; después de 5 minutos, agregue el champiñon picado, el perejil y después el pure, y el laurel, deje cocinar todo durante 10 min. 
3- ya que estuvo lista mi pasta, la retire del fuego, y la puse a escurrir un poco.
4- una vez lista la carne la retire del fuego. 
5- serví mi pasta en un plato y encima agregue mi carne 😊💕

A vegetarian curry with dried cod and pineapple! To make it, first soak the cod from the previous night in water. The next day, add chopped to your blender the following: A small onion, a clove of garlic, 2 small green hot peppers, some fresh ginger, the zest of a lemon, one teaspoon of tomato paste and 2 teaspoons of turmeric powder. Set this aside, clean youn blender and blend a small can of pineapple chunks in natural juice -blend liquids and chunks together but keep aside some whole chunks.
Sauté the onion-pepper mix in a little olive oil for a few minutes. Add the pineapple puree, the pineapple chunks, the cod pieces drained and a small can of coconut milk. Lower the heat, cover your pot and simmer for 15-20 min. Uncover, increase the heat and let it thicken, stirring often. Add salt, pepper and some fresh chopped basil. Serve with basmati rice if desired.

Thursday, day 10, I woke up late for an appointment...I was very grateful that dry shampoo is a thing, and really happy that I had frozen some Whole 30 compliant turkey at Christmas! So I heated my frozen turkey for a minute, threw it in with some baby spinach, cold baked sweet potato slices, and beet spirals all  while my wonderful husband threw together my loaded coffee for fat and out the door I ran...literal 5 minute breakfast. I felt kinda silly eating my cold “salad” with my hands as I drove, and with no dressing it was not the most appetizing meal, but I’m ok with that-some meals just need to be fuel for my body, and this one was good fuel 😊
For lunch I stopped off at Whole Foods and was so excited to find that their hot bar now includes food from Nom Nom Paleo, and many are W30 compliant. It can be hard to find hot meals to eat out on W30 and it was a huge treat to find this delicious lunch! Pineapple Serano Pulled pork, ginger sesame carrots and steamed veggies, and I got a matcha latte with compliant coconut milk for my fat😊
For dinner I tried a fantastic new recipe from the W30 cookbook, Mushroom-stuffed Beef Roulade  with Garlicky Green Beans, and served it with salt and vinegar potatoes- loaded with ghee...this one will definitely be added to our meal plan again!😍

I have had 1 or 2 mishaps where something didn’t turn out exactly right (cabbage over cooked for example - so instead of cabbage rolls we made cabbage hash) but it didn’t affect the quality of taste of the meal at ALL! .
If you are busy, travel, or simply want to dirty fewer dishes (hello all moms everywhere) I highly recommend this tool!

Durante todo el día he soñado con esta receta que hace unos días me encontré en la revista @womenshealthmag así que compré los ingredientes y en cuestión de minutos la preparé. Nada mejor que algo rápido, fácil y delicioso (combinación perfecta 💥)

Corre a comprar los siguientes 4 ingredientes y tendrás una cena perfecta 🙋🏻‍♀️🏃🏻‍♀️
•Squash (es como una calabaza pero amarilla) la venden en cualquier supermercado •Brócoli 🥦
•Queso de almendras 🧀
•Sal marina, oregano, pimienta (opcional)
*Precalienta el horno a 350F, divide el squash en dos y retira las semillas, rocía con un poco de aceite de oliva en spray y hornea por 15 minutos o hasta que esté dorado, cuando ya esté listo toma un tenedor y raspa el squash (obtendrás un estilo de pasta 🍝) agrega brócoli previamente cocinado, queso y especias al gusto, finalmente hornea 10 minutos más para que gratine. *otras opciones de relleno: 👌🏻

So day 7 proved that even with really clean eating, sometimes you can not outrun the stomach “flu”. My kids all had it on various days last week, and I thought I was in the clear...fortunately the misery was only for a day and a half...now back to disinfecting the house...again 😩
My breakfast was Pork and Tomatillo stew over cabbage with a fried egg and avocado on top, and lunch was a lettuce wrapped, grass fed burger with mustard and w30 mayo- alongside a salad of shredded carrots and spiralized beets, topped with Tessamae’s Balsamic dressing. Honestly, I was really sad I couldn’t make it eat my Whole 30 dinner- glad that’s over!

Wat heb je nodig voor 2 personen:
~ 100 gram couscous
~ 1 grote rode paprika
~ 140 gram mais (klein blikje)
~ 130 gram zwarte bonen (klein blikje, je kan ook kidneybonen of chillibonen kiezen)
~ 75 gram veldsla
~ vleesvervanger of 200 gram witte kaas/feta (in dit geval gebruik ik een linzenburger. Ook lekker met Quorn stukjes!)
~ kruiden naar keuze ( ik gebruik chilipoeder, italiaanse kruiden, paprikakruiden, peper en zout)
~ 2 a 3 eetlepels citroensap

Hoe maak je het?
~ Voeg de kruiden naar smaak toe aan de ongare couscous en bereid de couscous volgens aanwijzing op de verpakking.
~ Lek de bonen en de mais uit en spoel af, laat opnieuw uitlekken. Snijdt ondertussen de paprika in kleine blokjes.
~ Bak de vleesvervanger volgens aanwijzing op de verpakking of verwarm in de oven volgens aanwijzing op de verpakking.
~ Verdeel de veldsla over twee borden of schalen. Meng de mais, bonen en de paprika met de couscous en voeg 2 a 3 eetlepels citroensap toe. Meng nogmaals door elkaar. Verdeel hierna de couscous salade over de veldsla. Mocht je witte kaas/feta gebruiken ipv de vleesvervanger, dan kun je die nu over de salade verdelen. Leg anders de vleesvervanger bij de salade.

Dinner was a frittata filled with veggies- a sweet potato crust, sautéed onions, mushrooms, chopped broccoli and spinach, topped with nutritional yeast, guacamole and this delicious salsa I found at Costco😍
I had  a couple of hours of feeling like “kill all the things” on day 5...but I think it was mostly because I waited too long to eat between meals 😬

Lunch today was a big hit in our house. Earlier this week I roasted a tray of butternut squash, sweet potatoes and apples. We ate them on their own, with quinoa, in salads and now with beans. Tossed in sweet and savory spices and crisped to perfection, this was an immediate crowd pleaser. .
Recipe:
Serves 2-4
•1 butternut squash, peeled, cleaned and diced
•3 sweet potatoes, peeled and diced
•1-2 apples, peeled and diced •2 tbsp olive oil
•1 tsp Himalayan salt
•1/4 tsp black pepper
•1/4 tsp granulated garlic
•1 tsp pumpkin pie spice
•1/2 tsp turmeric
•1 can @delallofoods italian beans
•2-3 tbsp hemp hearts

Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Toss squash, potatoes and apples in olive oil and seasonings. Spread on baking sheet and roast for 30 mins, flipping once, until crisp and cooked thoroughly.

Drumroll please... introducing my new best friend...the #instapot !! Currently slowcooking a rack of lamb for dinner tonight. It took literally 5 minutes of prep and has been slow cooking since yesterday morning. The slow cookers of the world are a HUGE asset to those focused on health eating while living a busy life. Drumroll please... introducing my new best friend...the #instapot  !! Currently slowcooking a rack of lamb for dinner tonight. It took literally 5 minutes of prep and has been slow cooking since yesterday morning. The slow cookers of the world are a HUGE asset to those focused on health eating while living a busy life. If you haven’t added a slow cooker to your Personal food practices yet, I highly recommend it. You can cook almost anything in just a few minutes of prep time. A rainy Friday means lots of cooking inspiration. While my chicken was roasting I decided to take advantage of some ripe avocados and make guacamole. I’ll pretty much eat avocados any which way but my family feels otherwise. Fortunately, guacamole is a favorite. Well last nights egg roll in a bowl recipe may have just been okay, but today when I added it to some beef bone broth and topped it with more Sriracha sauce it was perfection in a bowl! Some recipes get better after a night in the refrigerator...this was one of them! Eaten with a side of olives- gotta have those healthy fats at every meal 😊

One of my favorite snacks is carrots dipped in sunflower seed butter. It’s so easy to grab and take with me on my afternoon pick up routine. There’s something super satisfying about the cool, crunchy carrots paired with a creamy, sweet & salty dip. I like to mix various things into my sunflower seed butter to vary the flavor profile and textures. Easy mix-ins include: diced apple, raisins, chopped dates, flaked coconut, pumpkin seeds, chocolate chunks, etc.
The combo I enjoyed today is sunflower seed butter, sunflower seeds, goji berries and cacao nibs. Enjoy!
