Since I had all the time in the world this weekend I brought out my slowcooker, because tis the season for stews and hearty foods! So I made one of my favourites, chili by @mariaemmerich . I tweak the recipe a little since we have some intolerances. I swap onion for leeks and leave out the tomato. I also only ever have homemade chicken broth, not beef, but that works fine. I like to start by putting the sausage and chili in a pan or pot and frying them off until the sausage has released its fat and flavour. I then add the meat and brown it. After that I also add some minced meat (because it’s cheaper than regular meat and I want a lot of chili as a result of my efforts...). When everything is browned I throw it in the slowcooker together with the rest of the veggies, the broth and all the spices (I also like to add tamari sauce for flavour and I go really heavy on the cumin which in my opinion is the star of the whole thing). Then I just set the slowcooker on high and let it do its thing for as long as possible, at least six hours. When it’s done I use a potato masher to break up the meat into a pulled beef consistency. You could just leave it as is because it’s really tender anyway but this is my preference. One batch will typically be enough for around fifteen servings, depending on your apetite.

#backstory : I’ve always been overweight/chubby, all my life. I kinda accepted it. Yes, I’ve worked out before but was always told that as long as I work out I could eat anything I want. Wrong! My body rejected that idea and it never worked out that way for me. In 2015, I had my baby and hit the 200s for the first time in my life. I did nothing about it though. Not until this year.
I’ve researched this WOE for months before deciding to just do it. Honestly it’s the easiest thing I’ve ever done. Cutting out carbs (not completely yet) has been so beneficial to my body. I have more energy and never feel sleepy after my meals.
The reason for my vulnerability now with starting this page is that I want to be able to hold myself accountable. I wish a had a specific recipe for you guys but I kind of just wing it when I make burgers! The main ingredients that I used were - 1lb ground turkey-pickled jalapeños -bacon bits -Parmesan cheese as a binding agent -franks red hot sauce -1 egg
