Whipped a batch of tuna for lunch and it was so good! I used my mini food processor to chop all my veggies because time has not been my friend today 😩 and I didn’t feel like chopping! It actually made the tuna a bit more watery, a little extra veggie never hurt nobody is what I say! 🤣
To the @wildplanetfoods tuna I added celery, carrot, red bell pepper and hard boiled egg. Mixed in @primalkitchenfoods avocado oil mayo, sea salt, black pepper and put in inside a bowl with cashews, avocado, arugula, @bradsplantbased kale chips (obsessed AF) and some bell pepper scoopers...I enjoyed this out in the sun because it’s actually beautiful here in Cali right now! We woke to 30 degrees out and now it’s 65 👌🏻Hope everyone has enjoyed their day so far 😚 #nurturingbodyandmind
Did a little extra prep last night to have some more veggie variety to add to my meals this week! These maple roasted sweet potatoes and brussel sprouts are one of my favorites- for meal prep or holiday parties 🙏🏼🙏🏼 So so simple to throw together. Recipe below ••
*feel free to double the recipe for a larger group
2 cups Brussels sprouts, halved
1 large sweet potato, thinly sliced
1/3 cup pecans
1 tbsp Avocado oil
1.5 tbsp Grass fed butter
1 tbsp Maple syrup
1/2 tsp Cinnamon
1. Preheat oven to 350. Line a baking sheet with parchment paper
2. Toss veggies in avocado oil and sea salt until evenly coated. Spread evenly on tray. Bake for 15 minutes.
3. Remove and stir veggies. Bake for another 10 minutes.
4. While baking, melt butter and mix with maple syrup and cinnamon.
5. Remove tray again and pour maple + butter mixture over the veggies. ** leave a tiny bit aside for the pecans. Stir and place back in oven for 5-10 minutes
6. Heat a skillet, then add pecans with remaining maple mixture. Let toast for about 3 minutes, stirring frequently so they don’t burn.
If I’m going for a sweet breakfast it will absolutely always involve maple syrup! 🍁 This paleo and vegan banana breakfast bake is loaded with maple flavor, cinnamon and hearty pecans for delicious breakfast treat. It’s cookie swap time!! @kturro and @madelinemhall organized a little virtual swap for some super rad ladies and my goodness I’m about to go into cookie overload!!! [I tagged everyone so definitely go check out their recipes!!] I made a batch of Chocolate Holiday Nankhatai - a traditional shortbread-type cookie popular in India and Pakistan flavored with spices like saffron and cardamom. Obviously I don’t do traditional, and six test batches later I added cocoa and chocolate drizzles and sprinkles and cut them out like Christmas trees. Digging into this Asian Chicken Salad Bowl for lunch today: @organicgirl super greens, roasted broccoli from meal prep, TJ’s carrot spirals, avocado, naked rotisserie chicken, and slivered almonds. No dressing, just lots of coconut aminos on top 😋 Simple, easy, REAL food. Happy Monday!

Happy Monday! I hope your day brings with it a good breeze .. some afternoon sun .. and a pot of naked tomato sauce on the stovetop 🍜 👩🏻🍳
3 pound plum tomatoes
3/4 teaspoon coarse salt
1 large clove garlic, thinly sliced
Pinch of red pepper flakes
Small handful basil leaves, most left whole, a few slivered for garnish
1/4 cup olive oil
12 ounces (3/4 pound) dried spaghetti
(1 tablespoon unsalted butter, or maybe two if nobody is looking
Bring a large pot of water to boil. Cut a small X at the bottom of each tomato. Blanch the tomatoes in the boiling water for 10 to 30 seconds, then either rinse under cold water or shock in an ice water bath. Peel the tomatoes and discard the skins. Keep the pot full of hot water — you can use it to cook your spaghetti in a bit
Cut each of your tomatoes in half lengthwise and scoop out the seeds with your fingertips into a small strainer set over a bowl. Ditch the seeds, reserve the juices
Add tomatoes and salt to a large saucepan (you’ll be adding the pasta to this later, so err on the big side) and turn the heat to medium-high. Break the tomatoes down with your hands, an immersion blender, or potato masher
Once the sauce has begun to boil, turn your heat down to medium-low and gently simmer your tomatoes for 35 to 45 minutes, mashing them more if needed. If they begin to look a little dry, add your strained and reserved tomato juices
While the tomato sauce cooks, combine garlic, a few whole basil leaves, a pinch of red pepper flakes and 1/4 cup olive oil in a small saucepan. Heat them slowly, over the lowest heat so that they take a long time to come to a simmer. Once it does, immediately remove it from the heat and strain the oil into a small dish. You’ll need it shortly
When the tomato sauce has been simmering for about 25 minutes, bring your tomato-blanching pot of water back to a boil with a healthy helping of salt. Once boiling rapidly, cook your spaghetti until it is al dente, i.e. it could use another minute of cooking time. Reserve a half-cup of pasta cooking water and drain the rest
Cook the sauce to desired consistency and adjust seasonings
Dishes like this make sharing difficult.

Over this past weekend, I received the most unique dining experience ever @watergrill. I had the opportunity to go behind the scene with one of the BEST DALLAS EXECUTIVE CHEF @jay_pauley he taught me how to shuck some oyster. It's not the easiest thing to do but I definitely enjoyed eating the one I shucked #winning . 😋 -
