I often get asked for ideas on how to incorporate more vegetables into snacks 🥦I’m all about “ditching the idea of snack food” (if you don’t know what I’m talking about, check out my latest FB Live - link in profile) but I also have a few veggie-heavy “snacks" I serve.
Like these fun Hummus Heads. I spread hummus on a rice cake, get out a bunch of chopped/shredded veggies and other food (fruit, beans etc) and let them get creative. Tyson is SO into art right now 👦🏼🎨that I think he kind of forgets vegetables are involved. Maggie usually goes rogue 👧🏼🤪and creates her own unique masterpiece. And to be honest, tends to just eat the toppings - but she has fun!

It’s Sunday and I have spent another weekend home in PA.  As much as I love being home it definitely means I am off my routine.  More junk food, more sugar, less sleep, no gym time but a whole lot of family love. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
My only advice about these types of situations is don’t stress bc that will only throw your body further out of wack.  Instead enjoy it, take in what your meant to take in, be 💯 in the moment and know that you’ll come back to that routine as soon as you can. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
That being said I am off to eat some Christmas 🎄 cookies 🍪 for breakfast and spend the rest of my Sunday morning relaxing until it’s time to drive back to NY. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Maple glazed Delicata Squash
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 400F
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Take 2 squash, rinse and slice into rings.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place rings on a baking sheet and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a small bowl whisk together 2tbsp maple syrup, 1tbsp avo oil, 1tsp mustard, salt & pepper to taste.  Then take a basting brush and coat the top of your squash.  Flip squash over and coat the other side. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place in oven for 15-25 minutes until squash starts to brown.  Flipping once at the ten minute mark.  When done you can easily remove seeds from the rings and serve!

- raw cacao powder

It turned out to be almond purée and soy yoghurt with mixed berries and a bit of a leftover kaki-fruit 🌱and some coconut flakes on top 🌴

Because who doesn't love pancakes? Especially when you need just two ingredients to make them and the kids love them too 👍

Eggs and banana and that's it! 🍌🍳
These two ingredients when whisked together are a little bit magical! ✨

They're delicious on their own or you can dress them up with whatever you're feeling. A sprinkle of blueberries, a dash of maple syrup, a drizzle of nut butter, some chopped nuts or all of the above!

We love to lay out a load of different toppings on the table and help ourselves to whatever we fancy to make our pancakes unique to us. 
To make one serving just mash up one banana and add two whisked eggs, whisk together and then you have your mix! Simply pour small dollops of the mixture into a pan and cook for 1 min or so on each side. 
Done! 🍌 
When making these for all of us, I just multiply the recipe and have two pans on the go (with a couple of pancakes in each one) and keep the cooked ones in a warm oven whilst I make the others.
But honestly, these are so simple, nutritious and delicious!! 💚

Soo warming most people would look at this bowl and think its not that healthy but it actually contains alot of nutrients. 
Recipe ⬇️
In a saucepan add 60g @quakeroatsuk jumbo oats
Blend 
1 banana 🍌
25g @thatprotein blissful cacao ( which contains lots of goodness with out all the added sugars and rubbish and its vegan)
1 tsp @naturesheartsuperfoods cacao
100ml of which ever milk/ plant based milk you prefer
150ml water 
Blend for 30 seconds pour over the oats and heat until your desired consistency.
Then i topped mine with @whitworthsuk dates, nut butter and cacao nibs. 
So in this bowl i had a good portion of slow releasing carbs, 2 portions of fruit, protein and good fats so over all this yummy bowl of goodness is actually nutritious.

This week’s Frankenstein loaf was spelt with @mayversfood peanut and cacao spread (in the actual dough!) 🥜🍫, vanilla bean paste, chopped medjool dates and cacao nibs.  It was a bit of a last-minute experiment with the add-ins so the resulting crumb wasn’t 100% (a tad dense, epic for toast though) but the flavours in this loaf are 👌🏻 If I do this one again I’ll mix the spread into the water/starter slush at the very beginning to get the liquid quantities more precise.  Overall though, pretty happy with this for a first go! 🍞 #sourdoughsunday
