Sake Kasu glazed salmon (2 tbsp kasu, splash of mirin, splash of soy sauce, water to thin the paste,1 tsp sugar) vegetarian #Japanese curry (cauliflower, carrots🥕, broccoli), short grain steamed rice. 🍚

#sakekasu is the by product left over from making sake. It's essentially the fermented sake  lees or sediment that looks like rice paste, and it is mildly funky but utterly #delicious! It gives my palate a break from my favourite miso pastes.

I prefer grilling the meat with this glaze, but #Vancouver is wet, wet, wet so no grilling is happening in my house. This salmon was cooked in the oven, 300F for 15 minutes.

Last evening, I was munching on the roasted peanuts that the Missus had made, trying to figure out what flavours I wanted to play with for today’s bakes. I remember having this insane need to bake some bread with the roasted peanuts but I also felt the need to team it with something that would be a party of textures and flavours on the palate. So, I let go of the peanuts and dashed off to the Missus for some quick consultation. And without batting an eyelid, she suggested that I add some fresh coconut, some red chillies and some garlic (that I sautéed). I added this mix the peanuts and chopped them coarsely. To top this, I added some Black Salt from Hawaii (that the daughter had gifted me) to round off the delish mix. When it was time to shape the dough, I spread my mix all over and when the bread came out of the oven, I thought I heard her say ‘Eat me! Eat me!’ I’ve had to indulge in some crazy mind control to hold myself back from cutting this one open.  Every time I passed the bread that was cooling, I thought I heard it calling out to me. 😜

Panch Phoran Bread(Home made 5 seed mix - Cumin, Fennel, Fenugreek , Mustard & Nigella). The friend is a Bengali, so PP should get her tickled. :) 20 hours from flour to Bread.

Coconut, Garlic & Toasted Peanut Bread. 21 hours from flour to Bread. This one will be fun just by itself.

Lemon Zest Bread with 5% Coconut Oil. 12 hours from flour to bread. (Crumb shot). I love what zested Oranges and lemons do to a breakfast bread. .

It’s been a busy 24  hours. As I write this, I reminded of the phrase time-poverty, a phrase that was coined for folks who’re over-scheduled and over-tired. Folks who’re on the proverbial tread-mill without a pause button. Folks who’re unable to make time for the things that they love doing. Things that make them feel alive. Things that make them feel good about themselves. Things that really matter!
But, unless we make time for what really matters, does anything else matter?

Beet kvass recipe
İngredients;
5-6 medium sized beetroots
6-8 cloves of garlic
1 cup of kefir whey
5 lt glass jar
Drinking water
Preparation: 
Everything starts with hygiene. All used equipment (knives, jars, cutting board and glass jar) must be sterilized. We'd like to have the helpful bacteria to multiply. Stylization is essential to prevent contamination of harmful bacteria in equipment used. Wash equipment in the dishwasher at a high temperature and additionally use sterile gloves during Kvass preparation. Let's start the preparation. Wash all the beetroots. Cut them all into medium slices. Put all of them in the glass jar. Add garlic and kefir whey into the jar. Dissolve the salt in water and add it to the jar. Add the water into the jar. Leave 3-4 fingers space on top of the jar. Mix the mixture with wooden spoon. Cover the jar . Leave the jar in a dark room with a temperature around 20 to 25 degrees for 5 days. Firmly place it in a refrigerator. After 1 week the kvass is ready to be served. 
At the end of this process the liquid in the jar is filtered and filled into glass jars. Drink freely. The remaining beets are consumed like pickles.

İçindekiler;
5-6 adet orta boy pancar
6-8 diş sarımsak
1 su bardağı kefir suyu
5 lt’lik cam kavanoz
İçme suyu
Yapılışı;
Pancarlar orta irilikte doğranır.
Cam kavanozun içine konulur. Üzerine sarımsaklar ilave edilir. Kefir suyu ilave edilir. Tuz bir miktar suda eritilerek kavanoza ilave edilir. Kavanoz dolana kadar su ilave edilir. Kavanozun üzerinde 3-4 parmak kadar boşluk bırakılır. Tahta kaşıkla kavanozun içindekiler karıştırılır. Kavanozun kapağı kapanır. Karanlık bir ortamda , oda sıcaklığında 5 gün bekletilir. Sonra kavanoz buz dolabına kaldırılır. 1 hafta kadar buzdolabında tutulur. Bu sürenin sonunda kavanozdaki sıvı süzülerek cam kavanozlara doldurulur. Afiyetle içilir. Geri kalan pancarlarda turşu gibi tüketilir.

Just opened a 2L jar of homemade sauerkraut for my lunch (eggs, mayo, sauerkraut on toast = quick, easy and yum!) I made this sauerkraut using one whole cabbage, couple Tbsp sea salt, sprinkling of mustard seeds and juniper berries, and using Mrs Goodness' large fermenting kit! 
10 weeks' later and ...om nom nom! 😋 .

most of what I do as Map Maker in Chief is choose: which beans to use, how many, what %, how long, order more moulds or keep saving for custom, work on Sun or sleep in, etc. It’s what being a founder/running a biz entails. What I don’t have on my plate is Are these pods ready to harvest, is the ferment pile large enough, is it time to dry, are these beans of a quality we stand behind and want to ship, did we pay our farmers fairly? All that I entrust to the sources who tend the beans Map chooses to use to make chocolate. And by my choice I pass that decision down the line. The reason I made the very 1st choice~~to become a chocolate maker~~was due to a 💡 moment when I learned that chocolate was not just chocolate, that there was no one Cocoa Bean {no one flavor} but many origins, grown in many places; i.e, we had choices. More than one bean! many origins! I can make chocolate! And that is what the bean2bar or craft, or whatever you want to call it, movement has done: shown that we have choices + helped make the choices accessible. b4 craft, there were fewer choices, despite lots of candy bars, some fine chocolate, and truffles lolling in shop cases. but not always information, and frankly, a lot of seemingly faceless chocolate. Size or scale of production, maker crafting chocolate from bean to bar or chocolatier buying factory-made chocolate *might* not matter, but the Who behind the beans does. Before Map I saw chocolate as just chocolate; there was no Where or Who. Our big crew goes through at least a gallon of this probiotic-rich goodness in a week. By making it ourselves we save a lot of money, we know exactly what's going into it, and we can make it as creamy as we like. The leftover whey can be put into everything from soups to yeast-free baked goods.

Bring a half gallon of milk to 180 degrees to kill bad bacteria. Stirring occasionally to avoid scorching ...
Let it cool to 115°

Whisk in a half cup of yogurt from a previous batch, or store-bought yogurt that contains nothing but milk and live cultures (no gelatins, sweeteners, cornstarch, etc)

Place in an oven with the overhead light on to keep the temperature steady for at least 4 hours, or overnight. The longer it ferments the more tart it will be. ....
For a thicker yogurt strain off the whey

Knowledge to utilize koji 麹 ('qu' in Chinese) cultivated molds or fungi from boiled grains had been developed in Asian countries, while yiest (kobo酵母) or maltz (bakuga麦芽) grown from fruits or wheat in the West.

koji (Aspergillus oryzae) produces various enzyme, such as amylases, proteases, and it is very versatile, used for multiple purposes and consists of the basis of  Japanese cuisine "washoku". There are three types of koji, kome 米 koji (rice koji), mugi 麦 koji (wheat koji) and mame 豆 koji (bean koji) .

Gimme all the Veggies! I definitely love a good salad but especially when your into one salad dressing like @primalkitchenfoods Ranch! I remember being little and making my mom go to this one grocery store because they had this huge salad bar. I would load a bowl up and of course pour ranch all over it! I never eat store bought ranch dressings because full of dairy and other crazy ingredients. But stoked I found this one and it really tastes good! Mixed up a big ole bowl of spinach, romaine, micro arugula, purple cabbage, rainbow carrots, cucumbers, red bell peppers and a big scoop of smoked jalapeño kraut @farmhouseculture . Just gave my body tons of vitamins & minerals from all those organic, real colors! Plus a dose of probiotics from the kraut. Drank a bug gulp of kraut juice too :) thanks for listening. Настальгии по лету пост. 
По времени, когда можно достать хороших огурцов и сделать их солёными. Или ещё лучше - Малосолёными. Прямо как на фоточке, где изображены малосольные секретноингредиентные огурцы с секретным ингредиентом. 
Но речь я поведу о соевой спарже (сухая из пакета, не готовый салатик). Для меня она относится к "зимним" продуктам. Чаще поедаю её зимой. Так как летом и кроме спаржи много чего вкусненького можно найти. 
Раньше из-за лени и, бывало, отсутствия времени я не размачивала сухую спаржу долго и размокала, тк скзать, до конца она уже в сковороде. 
Но если не заглушать вкус готовой спаржи соусами с ярким вкусом, то большого удовольствия обед не доставлял) Спаржи становилась странно сладковатой.
Сейчас, немного усовершенствовав процесс, я размачиваю её в холодной воде. Просто оставляю на ночь в холодильнике и утром сливаю воду, и так она уже ожидает дальнейших манипуляций. 
А когда уже готовлю её к обеду со всем остальным, просто немного разогреваю уже в конце. А можно даже и не разогревать.
