She's not the prettiest girl at the dance, but she sure is quite a dish. This is laing, a traditional Filipino dish, inspired by @astigvegan's recipe. I made a few adjustments: I wasn't able to get to the Asian market, so I used fresh chard instead of dried taro leaves, and spicy black bean sauce because that's all my grocery store had. I've only ever had this with pork, and I felt this needed some added protein, so I threw in some fried tofu. It smells incredible! The photo doesn't do it any justice but I assure you, this pork belly cemita at #2ndcitynyc , a Filipino taquiera is one of the most sinful & delicious sandwiches I have ever had. It's a bit messy but the combination of nicely charred pork belly, pickled onions,avocado,queso fresco, salsa roja served on a toasted roll was dangerously amazing!
