Another late night baking alert 🚨So who loves Reece's? I for LOVE THEM so I decided to go out and make me a healthier version, with 3 simple ingredients I made the best dessert ahhhh as you can see I couldn't resist and needed to have a bite 😂 I just used 85% dark chocolate, coconut oil and organic peanut butter (which took me forever to find because I'm a very picky peanut butter lover lol) melt the chocolate with 2 table spoons of coconut oil, once it's melted set aside. Put 3/4 cup of peanut butter in a separate bowl with 2 teaspoons of coconut oil. Mix that and set aside. Pour the melted chocolate over the bottom liner only first, freeze for 2 mins so it can partly set. Bring it out put a small spoonful of peanut butter on each one, press down with the back of your spoon. Once you done that cover it with the rest of the melted chocolate pop it in the fridge to set for maybe 15-20 mins and bam you have them! Everybody went nutty for these vegan truffles!!! Simple ingredients and so much room for individuality! 🍫Vegan Peanut Butter Energy Truffles🍫
🥄Soak some dates in water (1c)
🥄process almonds and pretzels in a food processor (3/4c each)
🥄place soaked dates (remove pits!) and 1c of peanut butter or almond butter of choice (I used a chocolate almond butter) in food processor and pulse until chopped and fully integrated- can pulse dates first and then add pb for ease
🥄remove and place in a bowl to mix in the almond and pretzel mix until a nice dough is formed. Alternatively can add the pretzel mix to the food processor until desired dough consistency is reached- need to form into balls that aren't too sticky!
🥄form balls with dough and place on baking sheet lined with parchment paper
🥄place in freezer
🥄melt vegan chocolate in a double boiler (add a little coconut oil to make the chocolate a little smoother)
🥄dip frozen balls in melted chocolate and top with sea salt or topping of choice!!
Next time I'm going to use some coconut and hemp seeds either in the dough or as a topping. Seriously everyone couldn't get enough of these amazing energy/truffle bites! *lovelighthealth*
