That beautiful color and flavor-packed crust is from something called the Maillard Reactions. Not to be confused with caramelization, Maillard reactions are responsible for the cooked color of foods that are not mostly sugar, such as bread crusts, coffee beans and roasted meats.
It's a sequence beginning with the reaction of a carbohydrate molecule and an amino acid and ending with a brown coloration and "full intense flavor."
The Maillard reactions were named after Louis Camille Maillard a French physician, who discovered them around the early 1900s.

The second half of my dinner at Commonwealth. Starting with my favorite course of the grilled duck! Unfortunately you can only get the duck in the tasting menu and not a la carte. The rest of the photos are super beautiful desserts that we received.

Tasting Menu at Commonwealth in SF. This Michelin One Star restaurant is vegetarian friendly with a variety of items to replace the meat courses. I didn't have any pictures of them but I was able to taste and appreciate them.
Housemade chips dusted with seaweed and a Malt Vinegar Mousse.
Amuse Bouche of cucumber, squid and rice flakes.
Crispy Okra, trout roe, corn pudding, creme fraiche, pickled onion and garden basils.
Scallop, romano beans, shiso, bird's eye chilli, lime confit, ginger and citrus dashi.
Cherry tomatoes in their own juices, smoked oyster cream, mint, nori cracker.
Charred stonefruit, buttermilk sorbet, celtuce, avocado, sake lees, togarashi, chervil, mizuna.
