Baked cheesecake with warm cherries on top by @voilasassi 🍒
Dough: 380g flour. 200g brown sugar or raw cane sugar. 1 pack of baking powder (15gr). 1 pinch of salt. 250g of cold vegan butter, cut into small cubes.
Filling: 2 kg of soy yoghurt. Lemon zest. Lemon Juice (of a half a lemon). 170g vegan butter, melted. 2 Pck vanilla pudding powder. 150g raw cane sugar or brown sugar.
Topping: 1 glass of cherries (680g with juice). 60g sugar. 2 tablespoons cornstarch mixed with 50 ml of water.
Preheat the oven to 180 ° C. Mix the flour with baking powder, salt and sugar in a bowl and add cold pieces of butter. Knead with the hands until no more butter is visible.
Rub a 30cm loaf tin with oil or some butter and spread the dough evenly. Use the fingertips to form an edge. It should be approximately as high as the tin.
For the filling melt butter and mix with the pudding powder, lemon juice, lemon zest, sugar and soy yoghurt. Then pour the filling into tin and bake at 180 C for 45-55 minutes.
Allow the cake to cool completely and bring the cherries to a boil together with their water about 30 minutes before serving, then add the sugar and starch.
If desired, the cherry sauce can also be made thicker by simply using a little more starch.

Mission protein bar, strawberries + blackberries + yogurt + chia seeds, salad with salsa verde dressing, and Halo Top, plus bowl of chicken fried rice and 2 string cheeses. // Solid cardio today and decent eating. I found a really awesome juice bar in Seoul called @juicesolution and they have all kinds of veggie and fruit shakes plus vitamin and health shots with ginger and beets.
Tomorrow I will definitely take one of them. If you are ever in Seoul and want to have some healthy breakfast or snacks definitely go there. So sad I found this place at the end of my vacation here.

Just something I've been thinking about lately, I find it so important to speak freely about my eating disorder! People actually look at me funny when I talk about my past because I do so calmly and almost as if I'm completely healed from the things I once felt. I don't think they understand that it's not that I've completely healed, it that's I'm no longer embarrassed of who I was, I am often times proud of who I am because of who I was. I struggle EVERYDAY with bad thoughts, and I still choose health, happiness, love and most importantly I choose to live. I am not healed, I still hurt, but I am also not ashamed. I am the daughter of a king who loved me SO much that he put the strength in me to fight when I could barely manage another day, when I was told I was so underweight that I could possibly die. He met me at my darkest and he brought me to the light. I am not perfect, I am flawed, but I am loved and I am learning everyday to love who I am. Goodnight #fitfam 💜 hope your Saturday was fabulous!

This simple recipe for Mixed Berry #Chia Seed Jam makes the perfect addition to Peanut Butter Toast!

Nut butter of choice
Mixed Berry Chia Seed Jam:
1 cup Fresh Blackberries
1 cup Fresh or Frozen Raspberries
1/2 cup @truvibeorganics #ChiaSeeds
3 tablespoons Maple Syrup
1/2 cup Cold Water
Unsweetened Shredded Coconut Flakes
In a medium sized mixing bowl mash the Blackberries and Raspberries together with a fork. Add the Chia Seeds, Maple Syrup, and Water. Stir to combine and cover. Place the bowl in the fridge for up to 1 hour.
Toast your bread to your liking and cover with the Peanut Butter. Layer on the Mixed Berry Chia Seed Jam and then sprinkle with Coconut and Sunflower Seeds. Enjoy!
Guess what guys?! In the last 24 hours, I have had multiple glasses of wine.... Chips and queso.... Chocolate peanut butter gelato..... And a handful of Skittles! And they were allllll sooooo good! March is ham-packed full of birthdays, so you know what that means 😉🎂🎂🎂. Kath celebrated turning 24 with an (almost) raw banana, peanut butter and chocolate cake.
We decorated it with chocolate buttons from @thesourcebulkfoods , @loving_earth caramel choc, summer berries and raw hearts.
3/4 cup activated almonds
1/2 cup shredded coconut
2 Tbsp raw cacao powder
2 Tbsp pure maple 🍁 syrup
1/2 cup Medjool dates, pitted
1. Process almonds in a food processor until small crumbs form. Add cacao and coconut and pulse to combine
2. Add dates and maple syrup, then pulse to a large, even dough ball forms- it will be slightly sticky.
3. Press mixture into the base of a cake tin (we used a 10cm round tin) and set aside
3 ripe bananas 🍌
1/2 cup almond milk
1 tsp ground cinnamon
1 Tbsp raw cacao powder
1 cup peanut butter (we used @picspeanutbutter )
1/2 cup macadamias
6 Medjool dates, pitted
1/3 cup coconut oil, softened (we used @biomedicalsaus )
Pinch good-quality salt
1. Add all ingredients to a high-speed blender, and blend until very smooth. You may need to scrap blender sides through-out.
2. Pour cake mix over base. Bang to remove bubbles. Freeze over night to set.
TO SETVE: remove from freezer and cake tin. Allow 30 mins to defrost (less on a hot day). Top with raw chocolate and berries!
NOTE: if it is too cold to have softened coconut oil, you'll need to melt the oil first, and allow to cool to around 40 degrees C.
